Hello my friends & happy Tuesday!  I had this post ready to roll yesterday and forgot to hit publish.  So let’s start out today with a fun twist on a classic recipe.  I’ve been up since 4a and got my run in, volunteered at my local polling place (we have voting today) and got 3 recipes prepped and packaged for a client.  Can you say PRODUCTIVE?  Ha.  Rare but all good.

So let me focus.  I love making granola to stash in my pantry and for clients.  It’s nutrient-dense, protein-packed and low in sugar versus grocery store options.  We love it on top of muffins we bake, for a yogurt topper or for ice cream.  My husband keeps a baggie in his office for when he needs a snack.  It’s just good food, fast.

Let me share a bit about tahini if you aren’t familiar.  Tahini has the texture and consistency of a creamy nut butter.  It’s made from sesame seeds, similar to nut butter but without nuts.  Rich in magnesium, potassium and iron.  Great source of calcium.  High in vitamin E, B1, B2, B3, B5 and B15.  It has a high alkaline content.  Packed with healthy fats.  Easily digestible.

This recipe is for those seeking easy food that is healthy and good for you.  You can add in what you need or remove what you don’t… its a very forgiving recipe.  Also perfect for a teacher or hostess gift wrapped up in a Ball glass jar.  Just an idea.  Okay… let’s get on to the recipe.

Healthy muesli cereal.

Happy Monday & May!  I know winter officially ended several weeks ago but when May arrives… it always seems real.  We did survive another winter!  Hallelujah!

This weekend my husband was making his beloved cereal and I thought I would share my favorite on here with you all because I’ve neglected to do this in the past.  I love this cereal – it’s awesome soaked overnight in your favorite non-dairy milk.  Oats are so good for your body – slowly digesting- therefore keeping you satiated & packed with fiber.  With the added nuts and seeds for healthy fats – this breakfast sets you up for success all day long.  This muesli is also perfect atop your favorite yogurt or ice cream (non-dairy of course).  This recipe is fail-safe so even if you aren’t passionate about cooking – this recipe is super easy!  Plus this one is great to pack up and ship or gift to teachers/friends etc.

We’re hosting a big brunch in June and this will for-sure on my yogurt bar!  I hope you enjoy this recipe as much as we do!

Almond cutout cookies that are vegan, gluten free and oh so delicious.  Looking for some simple Valentine’s Day treat to share with your Galentine? Valentine?  Or some special people in your life?  These are perfect!  You can get fancy and cut the dough out into BIG or little hearts, I didn’t use a cookie cutter just my knife, or roll into traditional rounds.  Top with melted chocolate or icing and sprinkles or leave plain. These cookies are my new favorite!

This recipe is inspired by Marco Borges.  Refined sugar-free.  Really simple to make and totally kid-friendly. Would be fun with some red or pink (even a few drops of beet juice for natural coloring) to make pink!  These cookies will replace the old butter cookie recipe ANNNNND won’t blow your gym efforts.  1 cookie is around 60-70 calories and has 2 grams of protein!

Cutout sugar cookies that are vegan & gluten free… ummm yes, please!  I found this recipe after a quick google search over at Unconventional Baker.  I have no time this week to play around with sugar cookie experimentation and I needed a full-proof recipe that would save me time & yield the perfect cookie.  I did make some minor adjustments to the original recipe -please see below.

Okay so everyone is in a mad dash this week.  Finish shopping.  Wrapping.  Shipping.  Whatever.  I’m done with all of that but need to get cooking/baking done.  You see every year I make (crappy sugar) cut out cookies for our annual ugly Santa cookie contest.  Everyone decorates them… we choose the winner, normally my husband, and the winning cookies are left out for Santa on Christmas Eve.  The rest get pitched.  This year, avoiding waste and opting to use the finished cookies for dessert on Christmas – I knew I needed a good cookie that was both vegan and gluten free.  This recipe was super easy & required no chilling.  Baked up perfectly and they’re in my freezer till Saturday when they will be unveiled & decorated for our contest.  Okay… let’s get on to the recipe without further delay…

I’ve been cooking up a storm lately trying to finish up food jobs and some recipes for my family.  My knee surgery is tomorrow and I’ll be on bed rest for 2 weeks so the more food I can prep the better.  Plus I promise to be sharing recipes I created during my healing.

So let’s get into the recipe.  I love turmeric.  I add it to my breakfast smoothies and decided to roast some of my favorite nuts with it.  Turmeric is know for its anti-inflammatory properties as well as being known for fighting cancer.  I’m doing anything to aid in my healing.  Plus when your body is recovering from workouts and surgery – your body needs protein-rich foods.  These have a lovely flavor that is very addictive.  You can use any nut that you love in this recipe – suggestions for baking in the recipe.  I used pistachios, cashews and almonds. Okay so time is ticking away and I need to get into my herb box to plant before the rain comes back.

Perfect snacking option for your summer travels or to keep in your car or purse for snacking ideas.  These nuts also ship well and package up nicely for a homemade teacher/special gift idea.  Enjoy!

We survived another week!  Why is it that I always feel this way by Friday?  I know, that’s kind of pathetic but I’m keeping it real.  We, (that’s my husband and oldest) are headed out of town to visit another college on the potential list.  I neglected to realize it was THIS weekend.  So out and back and then home for the super bowl by Sunday.  Do you host a party or attend one?  I normally host our dear friends but didn’t make plans knowing we would be out of town and with my training I highly doubt I will make it past the half-time show.  44 is the new 80 lol.
