This week’s best of series focuses on all things vegan snacking.

So when I say vegan snacking, I wanted to share the best of great snack ideas not genetically modified *clears throat* crap that coincidentally is vegan like Oreos.  I wanted real, vegan and gluten free snacking.  I wanted to cover chips to ice cream and everything in between so everyone from sweet to salty palates are covered.

As clean as your eating is, it’s important to build in treats or desserts into your diet. Balance is key.  I shared favorites that are all gluten free and vegan.  Easily found at Whole Foods or your favorite markets (or online).  This is just a list of my top favorites and honestly the list could go on & on if you let me.

Maple Coconut Caramel Macaroons. V. GF.

December 15, 2016 by Knead to Cook Filed Under: Breakfast, Brunch, Candy, Desserts, Evolution Power Yoga 40 Days, Gluten Free, Holiday, Holiday Baking Ideas, Product Review., Snacks, Sponsored, Vegan, Vegan proteins, Wheat Free 7 Comments

Occasionally, I receive packages of food to try, test out and review. Two weeks ago I received this wonderfully adorable Cake in a Crate kit from Bob’s Redmill. I’m an ambassador for them and love their gf products & use them often.  I hadn’t heard of Cake in a Crate but when I finally had a chance to look them up – what an adorable and fantastic idea.  Basically you can buy yourself or someone else a kit to make a lovely vegan and gluten free treat/dessert – slice of decadence.  See below for the recipe I used and a discount code off your first kit.

I originally shared this on my Insta stories and had several people email me that they ordered the kits as gifts.  The packaging is absolutely adorable!  Every single thing you need is measured out and packaged perfectly.
Isn’t this the prettiest gift idea? Plus no butter or eggs and the package is completely shelf stable!

Valentine’s Day is quickly approaching and I love sharing homemade treats not only with my Valentine, but friends and special people in my life. Little treats made from the heart always mean so much to people. Share the love. But heed my warning… these are a completely addictive little treat.

These are super easy to make and you can decorate them with fun sprinkles or top with sea salt.  Vegan and gluten free with no refined sugar. This recipe can be doubled if you want to treat yourself.

So Easter is just days away and I thought I better get started on my almond butter eggs.  My only focus now is to keep these away from my hungry teens.  These eggs can be made to your dietary needs.  Sun butter can replace the almond butter. OR if you prefer~ you can use peanut butter.  I recommend Justin’s.  If you aren’t vegan – you can use regular dairy chocolate chips.  Sprinkles or toppings – whatever you prefer.  Toasted coconut would also be fantastic!  Also, great to make with your kids!

Vegan Peppermint Bark.

Vegan Peppermint Bark.

Hi everybody!  I’ve missed blogging so much and cooking up goodies in the kitchen. I found out on black Friday that my finger required another, yes #4, surgery. After the shock of what my doc had just said, I thought long and hard about it. Got a second opinion. Decided to move forward and get it done before the end of the year.  Just to be done with this journey.

Peppermint Black Bean Protein Brownies. Vegan and Gluten Free.

Peppermint Black Bean Protein Brownies. Vegan and Gluten Free.

I feel like my kitchen switches from pumpkin over to peppermint in a matter of days.  The tree is up.  Cards are mailed.  Presents purchased and now it’s time to start baking pepperminty good treats. Actually, healthy vegan and gluten free treats that are protein-packed for recovering muscles.  Swimming is underway and my voracious daughter craves protein-packed snacks before and after practices plus after running and cycling we all need protein.  These are great for on-the-go eating.  Plus, they are healthy and no one will know the better.

Now I know there are like a million and one black bean brownie recipes out there but these are just a decadent little bites packed with mint flavor.  Go big or go home and I went big with the flavor.  Plus I just received some new VegaOne protein powder that I wanted to give a whirl in a not-so-traditional smoothie recipe and it worked perfectly!!!  Ohhhh I may need to step away from the brownies or go for another run.  Ha!

Crown Maple Syrup Sea Salt Bacon Bark.

December 20, 2013 by Knead to Cook Filed Under: Brunch, Candy, Gift ideas, Gluten Free, Holiday, Holiday Baking Ideas, Party Foods, Snacks, Valentine's Day 2 Comments

Various companies from time to time reach out to bloggers to help develop new or unique recipes with their products.  Crown Maple Syrup reached out to me to and various other bloggers to create a sweet and savory recipe for the holidays.  Coincidentally, they are also running a contest with said recipes and the winner gets to travel to their location and enjoy some fun benefits of being the chosen recipe.  My family loves maple syrup so I felt compelled to participate.  I always love trying new syrups and use it quite a bit in my vegan cooking and baking as well.

After waiting today at the oral surgeon’s office for my daughter to have her procedure, I was pondering some beloved holiday treats that I could transform using Crown’s maple syrup.  Bacon was a definite as my husband proclaimed!  Okay I can do bacon… and then bark came to mind.  Okay… we got home, got my sweet girl settled and I got to work on my creation/submission.  They sent me maple sugar (had to try) and three maple syrups.  My mind was racing with excitement. I hope you love this as much as my family has already.

IMG_9504

Are you ready for peppermint week?  I hope so!  There is nothing that embodies the flavor of this season to me other than peppermint.  I love it.  I always have.  Peppermint patties, candy canes… you name it!  I’m all over it.  We keep a stash in our pantry for our peppermint hot chocolate recipe and it has endless uses.  It always calls my name when I see them adorning desserts or cocktails.  I have a weakness.  This recipe is so versatile.  It can be used in coffee, tea, hot chocolate, whipped cream or cocktails.  Once cooled, refrigerate and it will last for weeks.  I will be sharing recipes all week that use this simple syrup if you’re looking for inspirations.  Stay tuned.

Ghirardelli White Chocolate Halloween Bark.

October 25, 2013 by Knead to Cook Filed Under: Brunch, Candy, Desserts, Halloween, Holiday, Holiday Baking Ideas, Product Review., Snacks, Vegetarian Leave a Comment

IMG_7739

Admittedly, I’m not a huge Halloween fan.  I’ve never been into scary movies, dressing up and all of that.  I know, that sounds so boring and practical but it’s just who I am.  My oldest however, loves good “vintage” – yes, I say this sarcastically, because the “vintage” scary movies are from my time (late 70’s – early 80’s).  Ever since 6th grade, we’ve been hosting a scary movie party for her and her girlfriends.  Well it’s expanded quite a bit over the past three years but the same core group of friends still come (and look forward to it each October).  We’ve expanded it this year to include some male friends too (can you hear me sighing loudly?).  Insert my youngest quizzing my oldest if any of the males coming are her boyfriend and annoying the oldest beyond belief.  {Insert arguing here.}  I think we are expecting around 18 teenagers for s’mores outside in our fire pit and the feature movie is Nightmare on Elm Street.  It is always fun and my husband and I do like to throw a few unexpected twists into the night, especially torturing the girls we know will scream the loudest and scare everyone.  So the tradition continues.  Today I bought a ton of movie snacks and whipped up a batch of Ghirardelli white chocolate Halloween bark for the festivities.  Ghirardelli sent me an awesome care package last week and I’m happy to start creating some fun, seasonal recipes with their awesome products, this being my first one.

This recipe is super easy and totally customizable to your taste and what you have on hand.  Whips up in minutes!  Let’s get started!

IMG_6175

I feel compelled to make this disclaimer… if you’re looking for healthy clean eating, this is NOT your recipe. I have to be honest, I don’t eat refined sugars or processed anything but I realize that’s my choice and sometimes an indulgent, fun treat is good when you’re a kid and I have two of them so here it goes!  I spotted these Pumpkin Spice M&M’s yesterday and thought they would be fun in some pumpkin spice blondies.  So I bought a bag and off I went.  It’s a fun treat for the fall season. Again, everything in moderation.
