Grilled Naan with Chobani. {pizza crust}

I wanted to try my hand at making homemade Naan.  My husband’s college roommate was Indian and he had several recipes from him that I wanted to transform and use in different ways.  I whipped this recipe up and tried it out on the gas grill outside and it turned out perfectly!  Tonight we are going to use it for our pizza base.  Made with all purpose and whole wheat flour.  I added Greek yogurt for extra protein and it yielded a lovely dough.  I hope you give this one a try.  Perfect for parties and summer grilling.

Banana Almond Butter Ice Cream. {Dairy-free.}

We all have them… the bananas on our kitchen counter that are starting to spoil right in front of our eyes.  I buy so many bananas at the farmer’s market for smoothies and snacks, invariably some remain that look rather dismal and taunt me.  I typically freeze them (for future use) or I whip up some banana bread but with soaring 90 degree temps this week – I thought I would blend them up with some almond butter and make some healthy ice cream.  This recipe is so insanely easy and customizable – you will fall in love, fast & hard for this treat!

Turkey Sausage Stuffed Sweet Potatoes.

I bought the most beautiful sweet potatoes, well actually “yams” at the Farmer’s Market.  I had some fresh hot turkey sausage from the market I went to on Saturday and those two were a match made in dinner heaven.  I added a few veggies and beans and we had one of the tastiest dinners that was super easy to make.  What more can you ask for?

Cherry Almond Chobani Flax Muffins.

Once again, my trip to the Farmer’s Market, on this very rainy day, dictated what I would create and post here today.  Cherries were everywhere and I couldn’t be happier.  I purchased about 5 lbs and couldn’t wait to get home to whip up some delicious muffins for snacking.  I always love to make a snack to have on my counter for the kids, husband or father to grab when they’re hungry.  It also will serve as a treat in lunches if the kids so desire.  These are light, packed with protein and fiber.  I do recommend you buy a good cherry pitter – I love OXO version – it makes cherry season much easier when snacking, baking and cooking.

Memorial Day Hiking.

Admittedly, I’m not all about food.  I love exercising and today marks me losing 30 lbs!  Crazy but I started clean eating in November and today I stand 30 lbs lighter and a lot stronger. Amazing what you can accomplish when you put your mind, heart and soul behind it.  Today I’m the exact weight I was in high school, not bad for a 41 year old!

I’ve never really loved hiking, as my husband will attest, but any way to get out, get moving and spending time with my family, together, talking and laughing… I’m all over it.  My husband found this beautiful trail and off we went.  We spent over two hours exploring, slipping, tripping and laughing the entire time.

Berry Banana Coconut Popsicles.

The holiday weekend is upon us and that means one thing – SUMMER is here!  Now regrettably, our weather in PA will not be reflective of this season change but it’s all good.  I know, as I sit here typing with the a/c on, the heat will arrive again and sweating will commence.  I’m not a fan of grocery store frozen treats.  I like to know what I’m eating and be able to readily pronounce all of the ingredients in my food.  Let’s face it, you’ve been given one body – treat it right!  This is my first batch for the unofficial start of summer and I’m so excited to dig in (as well as for my kids and husband).  You can totally customize these and use what fresh fruit you have on hand.  Just follow the amounts and you should be good to go!  Sadly, you need patience until they freeze – the only downside!  Totally vegan!

Chimichurri.

Chimichurri is a South American version of pesto that is served atop or along side meat and veggies.  I’m planning on grilling up a ton of fresh veggies from the farmer’s market and I thought this would be perfection for a vegetarian dish.  I will, however, grill up some chicken for my favorite carnivores to eat with it too.  I will use fresh herbs from my garden and you can control the heat with the jalapeño according to your taste and preference. This is also perfect over tortellini pasta or on some crusty toasted bread.  Yum!  Can’t wait for dinner.

Almond butter chickpea chocolate chip cookies.

I’ve made chickpea cookies before. None of which really knocked my socks off to be quite honest.  I thought I would whip up a batch today, tweaking as I went to see how they turned out.  I found a recipe that I loosely modified from Brit and Co.

I always make a “goodie” for an after-school snack for my girls and my husband (well his is more of a dessert).  I tried one and thought they were good. Now, you honestly cannot compare these to a buttery, fattening, ooey, gooey chocolate chip cookie – but these are certainly a lovely, healthy substitute that won’t blow your gym efforts or sabotage your bikini body considering that next month is JUNE already!! I can’t wait for my girls to try these and give me their review.  As for me, I love them!

It’s been a long week. The month of May always seems to be. End-of-year activities, birthdays, projects, swimming etc. etc. The list could go on forever. Today, while my website was getting a much needed facelift, I whipped up, in no time I might add, these fun Chobani-filled sprinkle cookies. They are very reminiscent of funfetti cake batter. My kids, and husband, loved them. How could you not? They are jammed-packed with lots of colorful sprinkles and that can make even this crazy-busy mom smile.

I’ve been a die-hard Crumbs Cupcake fan before it was trendy.  I always would hit up the store while in NYC or have my husband go for me if he was there on business.  It got to the point that my friends were waiting with bated breath when they knew I was coming home because I would bring some cupcakes home for them.  A few Christmases ago, they came out with a kid’s cookbook sort of kit with baking tools and fun recipe cards.  I instantly bought it for my Crumbs-loving daughter.  I treat this recipe like gold.  I only make it on special occasions and after looking at the ingredient list, you will quickly find out why.  It ISN’T healthy and very well may hike up your cholesterol level but on a special day… it is truly worth an extra hour or 3 at the gym!  Consider yourself warned!
