Oatmeal Coconut Chocolate Chip Cookies.

Actually these cookies are NOT a “big mistake” – I just loved the plate and couldn’t resist.

I’ve been eating very clean for the past 8 months.  I’ve been searching and creating recipes that are better tasting, healthier options not only for me but for my family.  These cookies are healthier than your average oatmeal chocolate chip cookie – but are packed with flavor.  These are made with Greek yogurt and coconut oil, which adds protein and healthy fats to your snack.  They are moist and oh so good!  I made about 38 cookies with one batch – I make smaller cookies, and they are mostly gone.  My kids right up to my father (75 years old) loves them.

Blueberry Pineapple Oatmeal Smoothie.

We are in the throngs of swimming in our house.  That means late night meets and early morning practices.  I’ll admit, it takes a toll.  My kids rolls out of bed in the morning exhausted and not wanting to eat breakfast.  This is the perfect way to get them packed with protein, vitamins and minerals without them really paying that much attention to it.  These serve as a great pre or post workout meal, snack, lunch etc.  Add a handful of spinach or kale for more added punch (I promise you won’t taste it!).  Adapt whatever fruit you have on hand and make it your own.

Pineapple Mint Lassi Popsicles.

Typically a beverage, I turned this pineapple mint lassi into a popsicle.  A refreshing treat indeed!  The fresh sweetness of the pineapple and the zing of fresh mint from my garden make these a treat both kids and adults will love.  I also added chunks of fresh pineapple to my popsicle molds for even more tasty goodness. These cool treats boast protein, thanks to the Greek yogurt, so they also have muscle building benefits along with great vitamin impact.  Your kids won’t even know this is good for them!

Feiny’s Everything Rubbed Chicken Garden Salad.

My friend Adam makes the most incredible rubs for vegetables and beef, chicken, seafood, pork or whatever you can whip up!  I’m addicted!  Totally clean, super flavorful – perfection in spice form!  Low sodium  Gluten free.  No preservatives.  All natural and NO MSG.  Click here to see Adam’s world of awesome rubs.  Also makes a great Father’s Day gift!

So this salad this very much up to you and what you love or have on hand.  Here is my version.  You can make this vegetarian by just adding more veggies and omitting the chicken or use tofu or fish.

Grilled Naan with Chobani. {pizza crust}

I wanted to try my hand at making homemade Naan.  My husband’s college roommate was Indian and he had several recipes from him that I wanted to transform and use in different ways.  I whipped this recipe up and tried it out on the gas grill outside and it turned out perfectly!  Tonight we are going to use it for our pizza base.  Made with all purpose and whole wheat flour.  I added Greek yogurt for extra protein and it yielded a lovely dough.  I hope you give this one a try.  Perfect for parties and summer grilling.

Once again, my trip to the Farmer’s Market, on this very rainy day, dictated what I would create and post here today.  Cherries were everywhere and I couldn’t be happier.  I purchased about 5 lbs and couldn’t wait to get home to whip up some delicious muffins for snacking.  I always love to make a snack to have on my counter for the kids, husband or father to grab when they’re hungry.  It also will serve as a treat in lunches if the kids so desire.  These are light, packed with protein and fiber.  I do recommend you buy a good cherry pitter – I love OXO version – it makes cherry season much easier when snacking, baking and cooking.

Homemade Sprinkle Chobani Cookies.

It’s been a long week. The month of May always seems to be. End-of-year activities, birthdays, projects, swimming etc. etc. The list could go on forever. Today, while my website was getting a much needed facelift, I whipped up, in no time I might add, these fun Chobani-filled sprinkle cookies. They are very reminiscent of funfetti cake batter. My kids, and husband, loved them. How could you not? They are jammed-packed with lots of colorful sprinkles and that can make even this crazy-busy mom smile.

Cookie Butter Chobani Banana Bread.

I always have a lot of bananas on hand.  I eat several a day.  But by the time Monday rolls around, I’m feverishly cleaning out my fruits and veggies to prepare for my Farmer’s Market trip tomorrow morning.  While out walking Sam (our dog) I thought COOKIE BUTTER!  Why not?!  Okay so not everything I make is crazy healthy, although this bread isn’t THAT indulgent and has NO sugar in it except for the cookie butter and cookie fragments.

This is a special week, my daughter turns 12 and I wanted to make recipes all week that I know are favorites or creations that she will flip over.  Extra bonus…. my teeny tiny almost 12 year old is finally going through a growth spurt and eating like a champ.  This bread will send her over-the-top, along with the rest of my family.  {my thought process.}

Vegetable Orzo Salad with a Chobani Basil Dressing.

This was one of those recipes that purely came to mind while I was meandering through the farmer’s market on Tuesday.  The freshness of all of the spring vegetables inspired me.  I was beyond thrilled to find some golden beets, that are incredible if you get a chance to buy or taste them.  And off I went to my kitchen with my bags in tow to create.

I love do to a few meatless recipes for my carnivore family a week.  Just to let them see that they can be sustained without meat and enjoy it.  Everyone loved this dish!  Glad I got a few shots of it before they descended.  Ha ha.  This recipe is very flexible – you can add whatever veggies you have on hand.  Optional ideas:  olives, cherry tomatoes, jalapeños, green beans, edamame… the list goes on and on.

Ingredients:

1 package of whole wheat Orzo pasta
2 softball sized beets (golden or red are fine)
1/2 of an English cucumber, sliced in half and then quartered
3 ears of corn on the cob, kernels removed and cooked on the stovetop to brown and carmelize
4 spring green onions, sliced
1 bunch of asparagus, steamed or pan fried with a tiny bit of olive oil for 4 minutes to make a bit tender
1 large bell pepper (I used red)
1/3 cup of shelled pistachios

Dressing:
1 handfull of fresh basil leaves
2 garlic cloves, peeled
1 cup of Greek yogurt
1 tablespoon of fresh lemon juice
2 tablespoons of olive oil
Salt and Pepper (I used LoSalt with is a low sodium alternative)

Directions:

Start by roasting your beets.  Here is a recipe on how to do this simply.  If you have golden beets, no gloves are required but if they are red, gloves to protect your hands are a must.  Click here for my recipe.  Let them cool and then slice into 1/2 inch rounds and then quarter.

Cook your orzo according to package directions and drain.  Because this dish needs to be refrigerated for a few hours to let the flavors blend, I drizzled some olive oil atop of the pasta and gave it a good stir.  Let it cool.

In a saute pan over medium heat, add a touch of olive oil and the corn kernels.  Let cook without stirring for 4 minutes or so and then give a good stir.  Let them brown up and then remove from the heat and let cool.

Into a large bowl add your vegetables.  Then add the cooled orzo pasta.

To whip up the dressing, simply add all of the ingredients to a food processor or Vitamix and blend until smooth and creamy. Taste and adjust spices accordingly.  Then add to your salad.

Once the dressing is mixed in to the salad, coating everything nicely – cover and refrigerate for at least 1-2 hours.  Before serving, give the salad a good stir to incorporate the dressing again and enjoy.

Lemon Blueberry Quinoa Bread with Chobani.

Today at the Farmer’s Market I picked up several lemons and packages of blueberries with the hope of whipping up a batch of bread this morning.  The sun is shining, the weather is gloriously warm and I thought it would be a lovely treat for my family.  I opted to add some cooked quinoa (tri-color) that I had in the fridge for extra protein.  It is perfection!
