Vegan cheeses that don’t suck. Really.

Vegan cheeses all suck, right?  They don’t melt.  They taste horrible.  Ummmm….  No!  Today I’m sharing the best of the best out there & these vegan cheeses will convert even the most hard-core cheese lovers.  Trust me, I’m a reformed dairy lover converted over to the favorites I’ve named below & I’m not sad at all!

Now this has been a 3 year journey of many, and I mean MANY, sub-par even disgusting (actually making me sick), pathetic excuses for “vegan cheeses”.  Each of these named below are staples in our kitchen & we use them for grilled cheese sandwiches, pizza and lasagna or stuffed shell recipes.  I’m going to share my tips and tricks for the ooey gooey cheeses below that will have you swoon.

Cabot Fit Team Recognition.

I was thrilled when I was contacted by my local newspaper to do a feature story about my participation in the Cabot Fit Team Beach To Beacon 10k this past August.  I sat down with Claudia, the reporter, at a local Starbucks and we spoke for literally 2+ hours.  I shared my story, my thoughts on food, fitness and motherhood with her.  We laughed a lot and enjoyed the company.  Today the article came out and I was so excited to see it.  In fact, I never shared this with anyone but my husband that this was even happening.  The article came out great and I wanted to share it with all of my friends who have made Knead to Cook what it is.   I also wanted to thank Cabot, once again, for the incredible opportunity to be apart of this team and represent what I believe to be one of the best companies out there!

Fitness magazine is one of my absolute favorite publications for women dedicated to fitness, health and overall well-being.  So when they contacted me asking if they could feature me on their blog as a fit blogger they loved – I’ll simply say that the excitement was palpable.  I screamed so loud that my poor dog took cover and the dancing commenced in my office.  As a food/fitness blogger, you work tirelessly, for very little pay, to share your recipes, fitness motivation and passions.  You occasionally receive feedback from people you impact and it really touches your heart.  And truly, this is why I blog.  I started my fitness journey years ago but it wasn’t until last November that it all clicked and it came together.  My fitness routine remained the same but my eating changed.  Therefore, my running changed.  I got faster.  I enjoyed it more. Training wasn’t laborious, it was fun.  Wait, did I just say that?  I dropped 31 lbs.  I became very toned.  My focus changed.  My attitude changed.  I lived with gratitude and everything made more sense.  I started to live in the moment v. rushing through my life.

It gives me such pride to share this with you all and I have so much love and appreciation to Fitness magazine for such an honor!

Need to stir up your go-to healthy eats? Robin over at Knead to Cook has what you crave—muffins, cookies, pies, you name it—without the guilt. And whoa, it shows! The fit mom who sticks to an impressive six-day workout regimen (three days running, the other three hitting the gym for cardio and lifting) cut down on sugar and recently lost over 30 pounds, making major PR strides. We’ll have what she’s having! From lightened-up, homestyle Italian dishes to perfect pre- and post-workout fuel (check out her addictive No-Bake Energy Ballsbelow), this gal cozies you up to her table like you’re a part of the family and proves that nutritious cuisine can taste good, too.

My favorite way to workout: Running, especially in the fall and winter. I’m definitely a cold-weather runner.

My biggest motivators: My two daughters. I want them to look at me as an inspiration for what is possible. They shouldn’t use age as an excuse—ever!

My favorite fit snack: Non-fat Cabot cottage cheese. It’s packed with protein and I mix it with Justin’s almond butter; it’s such a treat! I cannot get enough of it.

Motivational mantra: “No one ever drowned in his own sweat,” by Ann Landers. I actually have it written on the chalkboard wall in my kitchen and I look at it every single day.

My “I did it” moment: Even after running a marathon, my biggest “I did it” moment was recently, at the Beach to Beacon 10K, when I ran it in 49:01. That’s my fastest race time yet, thanks to my recent 31-pound weight loss.

These little protein-packed nuggets are highly sought after at Robin’s daughter’s swim meets—and for good reason. Sweet, tasty and filling!

 

No-Bake Energy Balls

  • 1 c old-fashioned oats
  • 1 c toasted coconut flakes
  • 1/2 c dark chocolate chips
  • 1/2 c almond butter (or whatever nut butter you have in your pantry)
  • 1/2 c flaxseed meal
  • 1 Tbsp chia seeds
  • 1/3 c + 1 /4 tsp raw honey
  • 1 tsp vanilla extract
  • Pinch salt

 

Mix together in a bowl and refrigerate for 45 minutes. Remove and roll into balls. (Robin uses a small scooper!) Place in an airtight container to refrigerate for 5-7 days, although they will most likely be long gone before that!
