Chickpea Pasta Salad. Vegan.

On the weekend, we were at one of our favorite little markets and I picked up a big bag of dried chickpeas. I soaked them overnight and cooked them on the stovetop the next day. They were so good! In this recipe post I’ll share how to make them and this delicious pasta salad – which is perfect for summer gatherings, weekly meal prep or whatever you have in mind. It’s completely flexible with what veggies and pasta you use and if you prefer, you can always use canned chickpeas.

Ingredients:

1-2 cans of chickpeas (drained and rinsed) OR
1 lb of dried chickpeas (soaked in cold water overnight)
1 box of your favorite pasta (cook per box instructions)
Fresh herbs (I used a palmful of fresh dill and parsley) washed and chopped
1/2 of a red onion, diced
1 large cucumber, chopped
2 bell peppers, chopped
1/3 cup of fresh peas
2 garlic scapes, chopped
Other veggies you can use: Raw asparagus (chopped), carrots, radishes, roasted red peppers, artichoke hearts, halved sugar snapped peas, chopped broccoli, olives etc. If I opt to use tomatoes, I add them prior to serving as they get super mushy in the fridge.

Vinaigrette:

1/2 cup olive oil
4 tbl good quality balsamic vinegar
5 cloves of garlic, (raw), minced
1 tbl of dijon mustard
1 tsp red pepper flakes
Pinch of salt and pepper

Method:
If using dried chickpeas, soak them in a large pot with enough water to cover by a few inches over the top. In the morning drain, and rinse. Add them to a stock pot and add enough water to cover with a good pinch of salt or two. Bring to a boil and then reduce heat and allow to cook for about 45-60 minutes taste testing for the texture you enjoy.

Once done, drain and allow to cool.

For the pasta salad, I cook my noodles according the package instructions. Drain and add to a very large mixing bowl. Add your veggies, chickpeas and herbs through garlic scapes if using. Toss to mix.

Into a glass jar that you have a lid for, add your vinaigrette ingredients and place the lid on tightly. Shake vigorously. Add 1/2 of that dressing to your pasta salad and toss. I reserve the remaining dressing to dress the pasta salad if not consuming immediately as the pasta absorbs some of the dressing.

This vinaigrette is also heavenly as a bread dip!

The super easy raw Asian salad. Vegan. Gluten free.

This is one of my all-time favorite salads ever. But the trade off is that your kitchen will be quite messy due to the prep work but in the long run… it’s totally worth it! If you prefer, check your local market for sliced/chopped veggies that would make this recipe prep faster/easier.

I’ve been on a mission to eat as many different veggies and fruits in each meal I make. This one is packed with tons of veggies and the flavor – perfection! So less chatting and more sharing… can’t wait to hear what you think! Please leave me a comment if you make this salad. And please know that this dish makes a ton! Perfect for a big family gathering or as a meal prep on the weekend for the week. Please note if you wish to meal prep this salad for the week – prepare and store the dressing in a separate container and dress when needed.

Ingredients:

4 tbl of rice vinegar
4 tbl of liquid aminos or soy sauce
2 tbl of tahini paste
1 tablespoon of maple syrup
1-2 larger mandarin orange segments, peel and set aside
1 larger nub of fresh ginger, peeled and grated finely
1 tsp of chili paste
3 cups of Napa cabbage, finely chopped
3 cups of red cabbage
1 cup of shelled edamame, I used frozen and defrosted
1 bag (about 2 cups) of shredded carrots
1 lb of Brussels Sprouts finely grated or sliced on a mandolin
2 large red bell peppers, sliced into small pieces
1/2 to 1 cup of dry roasted organic peanuts or Marcona almonds
4 green onions, finely chopped
Garnish: 2 tbl black sesame seeds

Method:

Into a very large bowl, add your rice vinegar, aminos, tahini paste & syrup. Whisk to combine. Then add your remaining ingredients. I used a mandolin to slice the cabbages and Brussels sprouts for really thin slices. Toss to coat prior to serving. Enjoy!


This salad is the perfect summer lunch or dinner idea. Again: If you wish, you can always add the dressing ingredients to a Mason jar and keep separate if you aren’t eating that day. Just dress prior to serving. Enjoy!

S’mores popcorn.

Hi friends!  I’m excited to say I’m starting the next chapter of my life, an exciting job I’ve been dreaming of for  along time.  With that being said.. I’m promising to posting one new recipe per week as I’m not ready to step away from blogging and enjoy the interactions with you all.  Recipe creation.  The creative outlet.  All of it.  I hope to still educate, share and inspire you in the kitchen to eat whole, real vegan foods.

This week’s recipe is a fun take on s’mores.  We’ve been in a serious Seattle-ish band of weather with quite a bit of rain.  S’more in our fire pit have been far and few between.  I thought this would be a super fun take on what we all love – popcorn, chocolate, roasted marshmallows and graham crackers.  You can make as much as you need, perfect for a party or movie night, and I promise… leftovers will not exist.  Even my 80 year old father devoured it!

Oh this recipe has been long & coming.  I’m sorry for the wait if you follow me on Instagram, mainly my instastories.  I shared this 2 weekends ago and then life happened.  I’m finally dedicating my afternoon to re-creating it, changes made and photographing it. It is heavenly & I may have eaten this for lunch today (no shame in my game).

Peaches are plentiful and work perfectly in this crumble however you can adapt this recipe to use seasonal fruit that you have on hand.  Think apple crumble next month through the fall.  I’m still secretly hoping I can get cherries at a good price tomorrow at my farmer’s market to make a cherry version. Whatever you have… it will work!

This dish is perfect right from the oven and topped with either vegan ice cream or as we did, So Delicious coconut whip. Warm and absolutely bursting with flavor.  I also love using super ripe fruit so you don’t have to use a lot of extra sugar.  Who’s with me?

I’m still surprised that we are in the last few days of August.  School has started for both of my girls and life is settling in. I really do love fall & look forward to cooler temps, cozy sweaters and big mugs of tea around the fire.

Hi everybody!  It’s me the elusive foodie, runner (not running currently), absentee blogger!  I’m here!  Isn’t summer supposed to be oh-so-relaxing?  Yeah.  It isn’t.  At least for me.  In my defense, this post was to live yesterday but my MacBook hated my SD card with the images yesterday.  Had to run to Target to get a card reader to export my images of food long gone (yep, this dish is that good) so it worked.  Heres the post. Phew!

I know I’m tardy but LIFE IS CRAZY!  Seriously within the next month I think we’re home for only a few days.  Not all of us are gone thankfully so my house and dogs are taken care of but I hate living out of suitcase but I love to explore so we do all the things and embrace with grateful hearts.

So this sweet little recipe.  Perfect with leftover quinoa.  I’ve been crazily bumping up protein in my diet lately thanks to all of my weightlifting efforts at the gym.  Uses tons of fresh ingredients from your garden or the farmer’s market so it’s super cost effective.  Great for leftovers, lunches, BBQ’s, get-togethers etc.  Keeps perfectly in the fridge for a week.  My tip is to keep the vinaigrette separate and dress prior to serving. That way veggies stay crisp and lovely!  Okay, tons of cooking to do before we leave so I need to get my boo-TAY moving.

Vegan & gluten free nachos.  My final recipe in my week long vegan Super Bowl party food fest.  I wanted to share several plant-based football watching foods that were easy to prepare for hosting or taking to a party.  This is quintessential football food for sure.

This recipe is super flexible, allowing you to add or remove whatever you have on hand or prefer.  Add beans in lieu of the meatless crumbles, mix up the vegan cheese, add pickled jalapeƱos for extra spice.  Also top with salsa, hot sauce or guac for extra food fun.  The other wonderful thing about this recipe is that you can make a small or large tray depending on the amount of food you need.  You simply cannot go wrong with this dish.

Roasted Tomatillo Salsa Verde. Vegan. GF.

Roasted tomatillo salsa verde.  If you’re anything like me, different foods at the grocery store are intriguing but  not enough to get me to purchase.  Tomatillos are that to me.  I always marvel at how adorable they are but I never manage to actually purchase them.  This week I was feeling a bit more courageous, I suppose, and grabbed about 2 lbs of them thinking I would make some salsa verde.  I love salsa and pride myself on my Italian/Mexican salsa that my friends and family clamor for… so why not take a stab at this version.

This recipe is pretty easy but a bit more time consuming than traditional salsa.  The flavor is also vastly different – more on the sweet/slightly bitter side.  Totally different but absolutely lovely.  Looking forward to having this beautiful salsa on my taco bar Tuesday for my family to try.  What kind of salsa is your favorite?  I would love to know.

Happy August!  The summer is flying by.  School starts this month.  We’re prepping for that & submitting the last of our college applications.  Pure emotional roller coaster.  Last week was our first week without any swim meets during the work week.  It was nice to get back to cooking and having mostly everyone home for dinner in the evening.

As apart of my food prep each weekend I always make a large batch of quinoa and rice.  I opted to add a ton of our garden veggies to it for a filling and vitamin-packed salad.  My carnivores ate this salad as a side dish & the rest of us had this as a main.  Plus this salad is perfect for brown bagged lunches.  And because it has no dairy to spoil – a great option to take to a BBQ or potluck.

I don’t know about your house, but the summer brings copious amounts of snacking on salsa & tortilla chips in ours.  I prefer not to buy fried foods for my family and wanted to share with you all this super easy homemade baked tortilla chips that take 10 minutes flat to make.  They taste so much better, aren’t fried and you can control the salt.  I prefer corn tortillas because they’re gluten free and seem to bake up to a perfectly crispy chip.

I served these with lentil bowls, Mexican rice dishes like this  or as a accompaniment to your Taco Tuesday topping bar.  My girls eat these straight up for a snack with fresh salsa, guac or plain.  Okay let’s get started!

Berry pancakes to celebrate summer & the 4th of July in a fun way… with food!  I’m sorry I’ve been MIA last week.  Our youngest daughter is heading out on her first mission trip so we’ve been prepping, getting shots and shopping.  After we drop her off, we head on vacation for a few days before our oldest heads off to college for a week long course.  So excited but oh-so busy.

Yesterday, I finally got in the kitchen and wanted to use my plentiful stash of fresh berries.  Pancakes came to mind and I wanted to share this recipe with you all for quite some time now.  So easy and you can use whatever topping your crew is crushing on (ideas listed below if you need inspiration).  This recipe made about 8 very hearty sized pancakes.  No dairy, gluten or refined sugars and quite filling with the oatmeal and flaxseed.
