Happy Leap Day – let’s celebrate an extra day with a cookie!  I’m so happy to finally be working back in my kitchen – it’s seriously been over 3 weeks that I’ve been renovating/updating/face-lifting my master bathroom. The last piece of the puzzle gets delivered today – my shower door and fingers are crossed that it fits!  But I digress, I’m locking myself in my kitchen today and making several recipes while I await the delivery call.

I always make muffins as a go-to snack for my family but I’ve been craving salt lately.  Why?  Well I’m a bit of a salty runner and that seriously drives my craving.  I know you typically see salted caramel but I wanted to do a salted pb cookie.  Peanuts… a touch of salt… sounds good to me!  Again, I used a very small amount not to offend my kids by the addition.

These cookies come together really quickly and I will warn you that the dough is quite heavenly if you accidentally sample it 😉  Totally safe to eat as there are no eggs in it or risk of food contamination. Okay onto the recipe and my next recipe is awaiting my attention.

I’ll begin by apologizing for being blog-absent for the past two weeks.  I mentioned that we were renovating our master bathroom and it has become all-consuming to say the least.  Life with a puppy who just got spayed, teenagers, food jobs, ultra marathon training, life and a bathroom in disarray has left me missing my kitchen.  I did take about 30 minutes earlier this week to whip up some muffins – per everyone’s request and I managed to snap a few pics for a blog post in between cabinet painting. These muffins are nice and moist.  Packed with my favorite protein – almond butter and are in mini muffin form so they can be popped in your mouth as you run to your next task, errand or nearby paint brush 😉  I share a lot of muffin recipes as my family seems to gravitate towards them for snacking or on-the-go breakfast ideas.  I also love them pre-run.

I’ve been so MIA this week and I’ll apologize upfront.  We’ve been renovating our master bathroom (we’ve – my dad and me) 8 hours a day since  Sunday.  I miss my kitchen to be honest and have been just winging it for dinners.  Sad but true.

Cacao Peppermint Protein Bites. V. GF.

Well if I can’t post on the first Monday of the week I’ll post on the second… ha ha.  Sorry I missed yesterday but we are renovating our master bathroom and that has overtaken my life at the moment. That’s probably the one thing that I’ve never managed to share on my blog but I do love a construction project.  I love sledgehammering walls, cabinets – whatever!  This year my resolution is to update, repaint, refresh any room in my house that I haven’t touched over the past 2 years.  We’ve updated a lot in the 11 years we’ve lived here but my master bath has always been THAT room I really hated.  And with one getting ready to head off to college, my goal was to update it as cost effectively as I could.  So with a few roadblocks this weekend that I’ve overcome… my plan is coming together.  It isn’t a whole gut job but it’s taking shape and I love it.

Onto food.  So how was your Valentine’s Day?  I made several little treats for my kids and husband that were healthier than store-bought goodies.  These were one of those treats.  My girls love peppermint (so do I) and I thought it would be fun to do a mint version.  Store perfectly in the freezer.  I opted to roll them in cacao powder but sprinkles or left plain would also work perfectly if the bitterness of the raw cacao is too much for you.

Friday is always a reason to celebrate, right? I’m excited for the weekend because my husband has been working exponentially more the past two weeks and with my early training schedule – our paths haven’t crossed all that much.  We’ve communicated more by text than in-person. We aren’t big into big Valentine’s Day celebrations – dinner, gifts etc.  Our plan is going for a breakfast date and farmer’s market shopping Saturday morning and demo in our master bathroom during the day.  We’re revamping three projects and will do all the work ourselves – we love it.  May not be the typical romantic weekend but spending time together will be very much appreciated at this point.  And sledgehammers – well that’s just plain fun!  Hoping the weather allows us a run outside on Valentine’s Day but we shall see.  May be running side by side on treadmills.

So over the past two days I’ve been thinking about my favorite things this week.  I’m really excited to share them with you so let’s get rolling!

Black and White Bean Quinoa Burgers.

My first burger post of 2016.  I make them often, but honestly never document all of the goodies that go inside so then as a result – it never hits my blog.  After speaking to my good friend yesterday and talking about blogging and what I was going to be posting, I thought I better get moving on creating/documenting something for dinner that worked for everyone.  You see, I cook with several variations of a recipe that work for everyone in my family on most nights.  My youngest has now chosen to become vegetarian so it’s a bit easier but I still have two family members that eat meat.

Yesterday was Ash Wednesday and my family members that do eat meat give it up on Ash Wednesday and every Friday throughout Lent.  Did I confuse anyone yet?  Yeah… a score card is needed when making dinner at my house.  These burgers worked for everyone and made life a bit easier last night paired with some roasted sweet potatoes.  Plus this recipe yields about a 12-14 sliders and they freeze nicely.  Okay so let’s get started.  Please know that you can adjust or tweak by preference as this recipe is very forgiving.

Apparently February is my month of sprinkles.  I’ve been using them non-stop of jobs like here, some other jobs that haven’t been published yet and now here.  I always seem to use them around birthdays and Valentine’s Day, which is logical.  My oldest is turning 17 in a few days and I created these last week and I will admit that both of my girls devoured them in less than 24 hours.  They’re festive, cute and perfectly bite-sized and great for a celebration.  You can customize them by sprinkles you use per event and are adult and kid-friendly without a doubt.

We survived another week!  Why is it that I always feel this way by Friday?  I know, that’s kind of pathetic but I’m keeping it real.  We, (that’s my husband and oldest) are headed out of town to visit another college on the potential list.  I neglected to realize it was THIS weekend.  So out and back and then home for the super bowl by Sunday.  Do you host a party or attend one?  I normally host our dear friends but didn’t make plans knowing we would be out of town and with my training I highly doubt I will make it past the half-time show.  44 is the new 80 lol.

So without further adieu… here’s my favorites list I’m crushing on currently.

Valentine’s Day is quickly approaching and I love sharing homemade treats not only with my Valentine, but friends and special people in my life. Little treats made from the heart always mean so much to people. Share the love. But heed my warning… these are a completely addictive little treat. 

These are super easy to make and you can decorate them with fun sprinkles or top with sea salt.  Vegan and gluten free with no refined sugar. This recipe can be doubled if you want to treat yourself.

Coconut Red Lentil Dahl. Vegan. GF.  Happy February!  I do love this month… Valentine’s Day… my daughter’s birthday.  Lots of reason to celebrate love.  

On Sunday our weather had finally turned warmer. The sun was out and shining. The cars got a much needed bath to get the salt off.  We took our pups for a nice long walk and then I came home to make this dish per my oldest daughter’s request.  She was craving Indian food and because we opted to take her to a vegan restaurant on Saturday night after church – I knew I had to redeem myself and make something Indian for her.  She was volunteering at a swim meet all afternoon so she didn’t know about it.  My house smells heavenly with curry aroma wafting throughout my house.  It doesn’t get any better.  Wait… it does.  I got to eat this bowl photographed, which made my day and hopefully her day when she gets home.

This makes a nice big pot so plenty of leftovers for dinners on the fly or lunch all week.  Super easy to make and yields a good 6-8 servings.  Can be served over brown rice or quinoa.
