Oh Thug Kitchen creators you are one of my favorites.  If you don’t have their their cookbook… I highly recommend their snarky yet hysterical rhetoric and insanely delicious recipes.  This recipe is one of the best vegan and gf burgers I’ve had and this recipe makes plenty of burgers (4-6 regular size or 8 sliders).  And a bonus… these burgers freeze beautifully so prep ahead meal planning.  Another benefit, they are jam-packed with vegan protein – winner winner vegan dinner!

Another Monday back again.  I hope you’re caffeinated and that your week has started out on the right foot!  Yesterday was our 19th wedding anniversary.  We managed to celebrate all weekend long and it really was so nice.  Simple things like going to breakfast together. We took walks with the dogs.  It was just really nice to spend alone time together.  Plus our 14 year old started her first “official” job on Saturday and that made her and us very happy.

I did spend some time in the kitchen yesterday and whipped up one of our favorite salads and dressing.  I realized I had never shared it on my blog so I thought it would be perfect to share today for Meatless Monday.  You can pair this up with your favorite protein, I typically do tofu or tempeh.  Yesterday I just added nuts for protein and I was filled for hours.  It’s so good and the trick to making the rough textured kale nice and palatable.

Pumpkin Banana Bread. Vegan. GF.

I’ve been craving pumpkin banana bread but honestly haven’t had the time with finishing up training and recipe/blogging jobs to create/test a new recipe. I wanted something different – something adding banana so I hit the web to search out a recipe.  I found this recipe from Minimalist Baker but tweaked it a bit.  The recipe came out great without that weird gluten free texture.  I find vegan baking very easy but gluten free does get a bit tricky.  This makes one large loaf of heavenly bread and my family has pretty much eaten all but one slice in 2 days.  The flavors scream fall and have a deep flavor with my changes.  The aroma in your kitchen… yep!  That needs to be bottled.

Thinking this bread would be phenomenal for Thanksgiving morning for breakfast.  It was sturdier (not typical of gf bread) too.  Yum!

I recently received a copy of Mary Mattern’s first cookbook and already being a huge fan – I couldn’t wait to dive in.  This was my first recipe I wanted to test and it was a huge hit for my Meatless Monday menu.  I cooked for a group that encompasses carnivores, v/gf, df/gf and vegan diners and it was enjoyed by all! My husband was also quick to pack it for lunch today as well.  Seriously, cooking at my house resembles that of a diner.  Ha ha.  So bring on fall and this delicious sweet chili recipe.  Congrats Mary on a wonderful cookbook! Did you ever wonder how farm co-ops work?  Are you not a gardener but would love to buy local farm goods directly from the farmers?  Prefer to eat seasonal foods?  Farm co-ops are growing and growing throughout the country.  I recently had an opportunity to meet with a very fast-growing farm co-op in my own local town but wait… there’s a twist.  They are growing and offering residents and restaurants an opportunity to buy locally, right from the farmer.

Fall & football seasons are upon us.  It’s the best time of the year (in my opinion).  The weather in Pennsylvania turned a bit cooler, crisper after a very rainy Saturday.  The air just felt cleaner and the skies bluer by Sunday.  Football was on and I wanted to create fun dip that everyone could enjoy – as my family runs from hardcore carnivores to vegans.  This dip won over everyone over.  #MeatlessMondayNight #SideLineMeat

Becoming a vegan over two years now, I’ve become a hardcore cauliflower fan.  More-so, a huge fan of Indian cuisine.  It’s the one type of food I know I can always find a vegan/gf option that is packed with flavor.  Inevitably, I’ve then started making more and more cauliflower dishes at home. This is a great recipe to make on the weekend alongside a batch of brown rice to have as a quick go-to meal all week or for a nice packable lunch. I love back-up dishes on busy nights.

Happy Monday!  Yes, as tired as I am – thanks busy weekend – I do love the clean slate of a new week.  PLUS, super bonus Monday… the weather has turned to a crisp fall.  Gah!  I’m in love.  Seriously like 50’s in the morning.  It’s so nice to sleep with my windows open at night and run without copious amounts of sweat pouring into my eyes.

As a blogger I have many opportunities to test out new products and review them.  I only share products that I truly love, am passionate about and/or want to share with all of you.  So about a week ago I received an email from Nadamoo! about a vegan/gf ice cream that they wanted me to taste test.  I will admit, I’m not a huge ice cream fan but definitely wanted to try it out. My daughter (who is gf/df) is and we have found a few that she likes but nothing that really replaced the dairy ice cream she grew up eating.  I asked them to select the best and favorite flavors and send them along.  Delivery was this past Friday all the way from Austin, Texas.  Why does this amaze me so?  It was frozen solid at 10 am on Friday after being shipped the day before in unbearable Texas to Pennsylvania heat.  Wow!  It’s the little things.

Okay so I waited until the 10th of September to roll out the very first pumpkin recipe.  I feel quite proud of this accomplishment.  I know it was hard to say goodbye to summer but truthfully – I’m a huge fan of autumn.  Leaves transforming to brilliant hues.  Crisp air. Boots.  Jeans.  Big cozy sweaters.  Cuddling under blankets.  I love it all.  Not to mention running in weather that doesn’t leave me looking like I’ve been doused by a flood of water.  Buh bye humidity!

So have I sold you on my reasoning? If not, I’ll sell you on the ease of this recipe – all made in one bowl. Hello food processor; I love you so!  And let’s not overlook all of the wonderful health benefits of pumpkin.  Let’s start… pumpkin contains vitamin A, C and E, riboflavin, potassium, copper, manganese, thiamin, B6, folate, iron, niacin and phosphorus.  Perfect post workout muffin.  PLUS an extra boost of Vega protein which helps muscle recovery post workout on top of the protein source from the almond butter — a snack that you can be happy to eat post killer gym session, bike ride, swim or run.
