Pineapple Mint Lassi Popsicles.

Typically a beverage, I turned this pineapple mint lassi into a popsicle.  A refreshing treat indeed!  The fresh sweetness of the pineapple and the zing of fresh mint from my garden make these a treat both kids and adults will love.  I also added chunks of fresh pineapple to my popsicle molds for even more tasty goodness. These cool treats boast protein, thanks to the Greek yogurt, so they also have muscle building benefits along with great vitamin impact.  Your kids won’t even know this is good for them!

Ingredients:

3/4 of a peeled, cored pineapple cut into chunks (reserve a few slices for your molds)
1/3 cup of orange juice
1/2 cup of plain or vanilla Greek yogurt (my favorites are Chobani and Cabot)
1 cup of ice
1 palmful of fresh mint leaves (about 1/4 to 1/3 cup)
1 teaspoon of honey (I used raw)

Directions:

Into your Vitamix or blender, add all of the ingredients.  Blend until creamy and smooth.  Place some pineapple pieces into your molds and then pour your lassi into each mold.  Place the tops on each mold and freeze for at least 6 hours or more.  Before serving, let sit at room temperature for a few minutes or run under warm water to dislodge.  Serve and watch the smiles!
