Fresh Fig Newtons Cookies. Vegan. Gluten Free.  Knead to Cook.

Last week after an appointment down in the Philadelphia area I popped by Trader Joe’s.  I laid my eyes on a huge container of fresh California figs for $4.99 and instantly became elated.  I love figs.  Fig season… then pumpkin season.  Seriously, in my humble opinion, the best season of the year.  I’ve been using them on arugula and balsamic glazed pizza.  In smoothies.  And I had to… I had to make fig newtons.  Perfect back-to-school snack that’s healthy enough to grab for breakfast too.

Packing smart and traveling safely while abroad.

Traveling abroad brings so much excitement however with the recent news story about the train attack from Amsterdam to Paris – reality strikes a cord of terrifying reality.  Unique situations that you need to address and be aware of come into play before and during your trip.  I wanted to discuss that and packing smart.  That picture above is my husband walking through Charles De Gaulle Airport with our luggage (we both packed for 13 days in that piece of luggage).  No over-packing here.

Our final stop in our European holiday was Bruges, Belgium.  It wasn’t a place that I had been to prior or honestly knew anything about.  It’s further out and off the beaten path.  I was hesitant about it but trusted my husband who insisted on traveling here.  He had been there after college traveling throughout Europe with his father and then alone for several weeks exploring.  He loved it and insisted on adding it to our itinerary.  So we did…

Purely Elizabeth is my favorite granola ever.  Seriously, I eat it daily.  My favorite is to top my green smoothie with it.  It’s so good.  I also love to carb load with it prior to long runs paired up with some fresh fruit and nut milk.  But be warned, it’s addictive.  Seriously.  So when Purely Elizabeth sent me products to work with- I knew I wanted to create a fun breakfast cookie with the granola that would be awesome for back-to-school.  School starts tomorrow for my youngest so I’m ready.  Just in the nick of time.

My absence from blogging over the past two weeks was because we were on holiday.  My husband and I have traveled extensively throughout Europe in the past, pre-kids, but my teenagers and my father had never been.  We had planned this trip for years and booked it about 7 months ago.  We traveled to 4 countries, each of which I will do a separate blog post about to provide as much information as I can along with many, many photos.  Forgive me now.
