Our version of black Friday…

I hope you all had a wonderful Thanksgiving filled with tons of laughter, joy and great food.  We enjoyed our family, celebrated my mother-in-law’s 80th birthday and had a ton of wonderful vegan food (and some non-vegan food for the carnivores).  Lots of leftovers we’ll be snacking on for many days to come.  I will be sharing a wonderful new recipe I tried that totally fooled all my carnivores at our Thanksgiving table.  That will be posted shortly.

But for now… this is how we do Black Friday.  We go tree hunting.  It’s the one day I truly look forward to  all year long. I don’t rush any holidays. But admittedly, Christmas is a fave. It’s changed quite a bit since my kids are older but there are some traditions I’m clinging on to. This is one!

Easter. Training. Running & the what?

Hi everyone!  I hope everyone had a great Passover and Easter holiday.  Before we headed back home to celebrate Easter with family and friends, hubby and I got in two (separate) 8 milers.  My friend/running coach Lottie wanted it to be slower than my 13 miler the week prior.  She wanted 8:45 – I came in a bit faster than that because although I was able to wear shorts my hands were freezing and I wanted to get home.  The run felt good and I got out early enough to get home, packed and ready to head out.

This was my last long run before my race this Sunday.  This week would be a lot of shorter tapering runs to keep my legs loose and rested.

Spring training. Allergy season. Running and snow?

I admit, I’m confused.  I sit here and it’s supposed to be spring… the weekend was lovely and warm and now we have a pending snow storm? Tonight!  I think in all actuality it is supposed to only be a  dusting or an inch but really?? The calendar claims spring and honestly the winter has just been brutal.  Most of us have had enough.  Well my training continues and apparently now allergies, amidst the pending snow, have started.  Pollen count is nice and high and my husband, youngest and myself all feel like we’re dragging, foggy and just blah.  Regardless, the training must continue despite me wanting to stay in bed at 4:30 a.m. versus getting dressed and trudging to the gym but I do.  I alternate my run days with weights/cardio/abs so that was yesterday.  Today meant a run.  I’m rushing to get my 100 miles in for the FitFluential 100 mile challenge for March.  I did do it for February and that was a shorter month so this should be easy, right?  Ha.  I’m now up to 85.95 miles at 11:07:30 time.  If I knew I was so close to 86 I would’ve run it today but the totals come after my run was over.  Two more runs this week and I’ll be there.  I’m tossing around a race this weekend, just hoping my “fog” lifts and I find some good energy before I sign up.

Wearing:  Mizuno Wave Rider 16, Lucy endurance capris, Garmin 620 running watch, Jawbone UP 24 band.

Hemp Protein Green Smoothie. Running recovery.

You know how this winter has been, right?  Forever. Unending.  Perpetually horrible.  Well finally we have been rejoicing and enjoying a brief respite from Mother Nature’s furor and soaking up the sunshine-filled days and warmer temperatures.  I don’t like running in the afternoon or evening, I like running on an empty stomach and because I eat all day long – I’m relegated to the darkness of the early morning 5am workout crew.  Last night I checked my weather app and it clearly had a 5 am temp of 40 degrees.  I opted to bag the gym and the treadmill, which I did over a 100 miles on last month, to finally get outside and work some hills and test my speed again.  I was worried.  My husband thought I was crazy but I didn’t know how my speed and cadence would be after running on the treadmill so long but I faced my fear and doing it.

I jumped out of bed, sans alarm, at 430 am.  I got up and dressed.  Ready for 40 degrees.  I normally don’t mind running in 20-30 degrees temps but since my hand surgery and developing Raynaud’s syndrome… I cannot take the cold/pain at that temp.  It’s going to be 40 – I can handle that!  So I run out the door and get started.  Seemed quite chilly but I kept moving.  I didn’t have the right gloves on (I normally layer to keep my hands from freezing) and I had a tank on under my coat and no hat.  Yep.  I was freezing… I wasn’t warming up… I kept going.  My plan was 10 but by 8 my fingers hurt so badly I knew I needed to be done.  I wasn’t paying attention to my speed but to taking each hill and dodging black ice (snow melt/refreeze) with stride.  I got home and could barely open my garage keypad with my fingers.  Got in and was flabbergasted at my time!  Best time ever – EVER!  Two years ago I was at a 930 minute mile and 32 lbs heaver.  What the world!!!  Craziness!  I’ll admit, I’m just elated.  Who knows if I can pull that off again but I was so happy with my effort.  And by the way – my husband ran separately and told me that the temp was 32.  No wonder I was freezing!

So how to refuel?  Well I’ve been limiting dairy over the past week or so because my stomach has been struggling with it in normal sized portions.  I wanted to incorporate a protein in my smoothie because I don’t eat meat.  So this is my latest and greatest creation.  Perfect for vegans. One side note, while eating any iron-rich food, always pair it up with a citrus fruit to help with the absorption of the iron in your body.  This helps if you suffer from anemia or are low in iron.

Cabot Fit Team Recognition.

I was thrilled when I was contacted by my local newspaper to do a feature story about my participation in the Cabot Fit Team Beach To Beacon 10k this past August.  I sat down with Claudia, the reporter, at a local Starbucks and we spoke for literally 2+ hours.  I shared my story, my thoughts on food, fitness and motherhood with her.  We laughed a lot and enjoyed the company.  Today the article came out and I was so excited to see it.  In fact, I never shared this with anyone but my husband that this was even happening.  The article came out great and I wanted to share it with all of my friends who have made Knead to Cook what it is.   I also wanted to thank Cabot, once again, for the incredible opportunity to be apart of this team and represent what I believe to be one of the best companies out there!

Fitness magazine is one of my absolute favorite publications for women dedicated to fitness, health and overall well-being.  So when they contacted me asking if they could feature me on their blog as a fit blogger they loved – I’ll simply say that the excitement was palpable.  I screamed so loud that my poor dog took cover and the dancing commenced in my office.  As a food/fitness blogger, you work tirelessly, for very little pay, to share your recipes, fitness motivation and passions.  You occasionally receive feedback from people you impact and it really touches your heart.  And truly, this is why I blog.  I started my fitness journey years ago but it wasn’t until last November that it all clicked and it came together.  My fitness routine remained the same but my eating changed.  Therefore, my running changed.  I got faster.  I enjoyed it more. Training wasn’t laborious, it was fun.  Wait, did I just say that?  I dropped 31 lbs.  I became very toned.  My focus changed.  My attitude changed.  I lived with gratitude and everything made more sense.  I started to live in the moment v. rushing through my life.

It gives me such pride to share this with you all and I have so much love and appreciation to Fitness magazine for such an honor!

The fit mom who sticks to an impressive six-day workout regimen (three days running, the other three hitting the gym for cardio and lifting) cut down on sugar and recently lost over 30 pounds, making major PR strides. We’ll have what she’s having! From lightened-up, homestyle Italian dishes to perfect pre- and post-workout fuel (check out her addictive No-Bake Energy Ballsbelow), this gal cozies you up to her table like you’re a part of the family and proves that nutritious cuisine can taste good, too.

My favorite way to workout: Running, especially in the fall and winter. I’m definitely a cold-weather runner.

My biggest motivators: My two daughters. I want them to look at me as an inspiration for what is possible. They shouldn’t use age as an excuse—ever!

My favorite fit snack: Non-fat Cabot cottage cheese. It’s packed with protein and I mix it with Justin’s almond butter; it’s such a treat! I cannot get enough of it.

Motivational mantra: “No one ever drowned in his own sweat,” by Ann Landers. I actually have it written on the chalkboard wall in my kitchen and I look at it every single day.

My “I did it” moment: Even after running a marathon, my biggest “I did it” moment was recently, at the Beach to Beacon 10K, when I ran it in 49:01. That’s my fastest race time yet, thanks to my recent 31-pound weight loss.

These little protein-packed nuggets are highly sought after at Robin’s daughter’s swim meets—and for good reason. Sweet, tasty and filling!

 

No-Bake Energy Balls

  • 1 c old-fashioned oats
  • 1 c toasted coconut flakes
  • 1/2 c dark chocolate chips
  • 1/2 c almond butter (or whatever nut butter you have in your pantry)
  • 1/2 c flaxseed meal
  • 1 Tbsp chia seeds
  • 1/3 c + 1 /4 tsp raw honey
  • 1 tsp vanilla extract
  • Pinch salt

 

Mix together in a bowl and refrigerate for 45 minutes. Remove and roll into balls. (Robin uses a small scooper!) Place in an airtight container to refrigerate for 5-7 days, although they will most likely be long gone before that!

I could never…

I do two things when I run… I mediate & then I start thinking.  I think about my family, my incredible friends and you guys.  I had a lot of time today to do both.  And because I love to write, I wanted to share something with you all.  Over the past few years I’ve had many conversations with people that say to me “I could never do that…”.  Workout, train for a marathon… whatever it is that we’re talking about.  Just stop for a moment and think about how powerful those words are… I COULD NEVER.  Three simple little words.  Apart, they have no impact, together they could derail even the most determined.

I wanted to share my “I could never” phase of my life because, I think we all have go this this phase at some point.  My husband and I had just run a 5k.  To me, at that point in my life, that was huge.  We ran it on a Saturday.  I was 20 lbs heavier than I am right now.  I was, for the most part, out of shape compared to the version who is sitting here typing this blog entry.  But I ran it.  I don’t remember our time but it was okay.  I didn’t stop and ran it straight through… that was my main goal.  I was very proud of myself.  This was in late September or early October.  The next day, our family went to church and after service the pastor’s wife came and sat down next to me.  She’s a good friend of mine and a runner.  She congratulated me on the 5k and looked me straight in the eyes and said you’ll be running a marathon next.  I laughed and thought she was crazy.  My reply… “I could never”.

By Christmas my husband asked me what I would like for my birthday/Christmas (dates are close together) and I asked for a gym membership.  My father went to this gym already and had dropped about 40 lbs.  He, at 73, is the best physical shape of his life.  Bill got it for me and I started going in December.  I did a weight lifting class & a body attack class.  I hated classes but it was somewhere for me to start.  And so I did.

I felt the pain every single day.  In fact, I still do.  A day doesn’t go by where some muscles in my body don’t hurt.  I kept going.  5 days a week, one hour a day.  I wasn’t seeing a huge change on the scale but I was with how my clothes were fitting.  That past Christmas, a friend of mine got me these awesome premium denim jeans as a thank you for some work I had done for her.  They didn’t fit at Christmas.  Now April had come and everyone kept commenting to me on how much thinner I was looking.  I grabbed the jeans and tried them on and WHACK!  They no longer fit.  They were huge on me!  I couldn’t believe it.  I never saw it in myself.  I kept seeing that overweight girl and not the metamorphosis that had occurred.

I kept running.  Two 5 am runs during the week.  One longer run on the weekend.  I started to sign up for half marathons.  I couldn’t believe it.  One and another… I kept doing them.  Then it hit me two years after my fitness rebirth… it was October, 2009.  I signed up for a marathon.  My “I could never” moment shattered.  It took everything I had to hit the button to confirm our place in the New Orleans Rock N Roll Marathon…. but I did.

We started training.  We did Jeff Galloway’s method of running/walking.  We trained that way.  It wasn’t a grueling training program, in hindsight, but at the time, it was horribly difficult.  I was diagnosed with fibroids in November.  This was causing me to have a constant menstrual cycle.  Doctors told me to give up the idea of running a marathon and I refused.  I finally found one doc to help me.  She operated on me 5 weeks before the marathon hoping it would help.  It didn’t, which was fine.  We kept running.  Long runs, short runs.  I never stop believing in myself.  We kept, and still have, our running schedule tacked up in my husband’s closet.  I loved coming home to cross out each run completed. We didn’t start out running 10’s, 15’s and 20’s.  It started out with 2 and 3 miles.  We built our foundation and kept going.

The marathon arrived and as we stood at the starting corral, I heard the announcer say that today is a celebration of all of the hundreds of miles of training.  Something hit me and I burst into tears.  I had been so strong the entire 5 months of training and I couldn’t believe we stood on the precipice of this journey.  I was excited and frightened beyond belief.

With each mile marker, I would think of one family member or friend.  My dad, my girls, my inspiring husband who traveled this journey with me, my friends George and Lauren who constantly inspire me, Katey, my marathon running friend who advised me on so many things, my best friend Stephanie that I’ve known my entire life… each person, each mile… I was so thankful.  Then as the dreaded “wall” was approaching, I started praying and praying hard.  My stomach was cramping horribly and I felt so ill.  My husband stood with me and we started to walk a bit.  By 26 I knew it was almost over and I just needed to finish.  My goal time had come and gone and I was still remaining proud of running my first marathon.  Less than 1% off the population ever runs and completes one.  I was among that elite group of people.  We finished the race, hand-in-hand as we always do with huge smiles on our faces.  The time didn’t matter… the journey and the strength that we built together did.   I learned so much.  Three weeks later, I had a hysterectomy.

A year and a half later (2011), the NYC marathon was being broadcasted and I had two dear friends running in it.  I kept checking their stats on line as we were getting so excited for them to finish.  I turned and looked at Bill and said that we need to do another.  I’m healthy and I have always felt that I have something to prove to myself.  I want to do this again.  He smiled and reluctantly agreed.

We started out at mile 2, which felt like a killer.  We’ve been increasing each week.  No more running and walking.  Just running.  And a lot of it.  It is so hard but so empowering. Our training program has us running 4 days a week plus I go to the gym on my off days.  One day of rest, for which I’m so thankful.  My “I could never” has been replaced with Of Course I Can!  Barring an injuries, we will.

That’s my journey… everyone has one.  It simply begins by taking one step out of the door, not making excuses, and believing that you can!   Whatever your goal is… you are worth it!  You are stronger and more powerful than you know.
