Chocolate Glazed Baked Donuts. Vegan. Gluten Free.

Be my Valentine?

I don’t know anyone that wouldn’t appreciate these little sweet Valentine treats.  These would be perfect for a school Valentine party, take to the office to share, gifts for your GALentine or for your sweet loves.  They are vegan and gluten free. They are totally moist and quite decadent on top of being super cute and fun.  Wouldn’t these be perfect for Valentine’s Day breakfast or brunch?

Updated recipe from my original 3 years ago.

Green Matcha Tea muffins.

Happy almost weekend!  I’m sorry I’ve been a bit MIA this week.  I’ve been planning two parties, one of which is this weekend to celebrate my daughter’s sweet 16, along with working, training and living – my blog has suffered by my absence.  So FINALLY  I’m sitting down post dinner to get these yummy muffins up right now!  These are perfect for your Matcha lover, maybe a fun Mom’s Day treat? I made these yesterday and already they’re gone in my kitchen.

Okay my husband is an admitted Matcha fan a—hem addict.  I’ll tolerate it but don’t drink it daily.  It is without a doubt, oh so healthy however and I’ve recipe tested so many failures.  I knew I needed to find a recipe because I’ve had NO success on my own, hey – sometimes it happens.  So I found a recipe from Nuts.com and morphed it a bit.  I’m still testing a banana/matcha recipe but until I reach an acceptable level of perfection — this will have to do. I hope you enjoy this tasty recipe.  It’s a great muffin for breakfast and I especially loved it teamed up with some chocolate chips mixed in – shocker.

Sprinkle Protein Cookies. Vegan. GF.

Sprinkle protein cookies.

I was looking for a sweet little cookie present for a friend’s daughter who broke very recently.  I was flipping through Arman Lieu’s cookbook and I found this recipe.  It was perfect.  It made about 10 mini cookies that I decorated with fun heart sprinkles and they’re perfect.  You an easily make this recipe into 2 larger cookies or several minis.  Fun but so healthy and packed with protein!  34 grams of protein in this serving (serves 1), 20 grams of fat and 11 grams of fiber.  I also wanted to test out the Nuzest protein I received.  The vanilla worked perfectly!

Well happy Monday & let’s get this started 🙂

Blender Carrot Ginger Baked Donuts. V. GF.

Blender carrot ginger baked donuts on this marathon Monday.  Everyone needs a donut post Easter weekend, right?  Well my day was filled with running, nervously tracking friends/clients running the Boston Marathon.  So I baked.  A lot!  Then I was glued to my tv and computer tracking.

So donuts.  Let’s chat.  I’m not a huge sugary, sweet kinda gal. Knowing I wanted these for my kiddos and husband’s breakfast – I wanted to do a healthier version that had just the right amount of sweetness to keep my girls interested.  These are a spicy/sweet combination that are moist and quite decadent.  Perfect for breakfast or a snack.

Let’s get on with it 🙂

Protein blender brownies.  Vegan & gluten free.

I was terribly excited to get my hands on my talented friend/blogger’s Armen Liew new cookbook.  Arem is the genius behind the blog The Big Man’s World.  His is absolutely phenomenal & I highly recommend it.  This is NOT sponsored in any way, shape or form but my opinion.  If you love sweets but don’t love the calorie bomb/destruction to your eating.  Aren’t a huge fan of sugar-overload.  Check his blog and cookbook out.  Today I whipped up his 4 ingredient flourless brownies in my Vitamix and man… I’m in love!

These brownies came together super fast.  Perfect when you need a treat in a hurry… in fact the waiting for them to cool/slice took longer than prepping and baking!  I hope you enjoy these as much as we do!

Boxed cake hack. Vegan. GF.

April 11, 2017 by Knead to Cook Filed Under: Brunch, Cakes, Easter, Fitness., Gluten Free, Holiday, Holiday Baking Ideas, Running/Races, Valentine's Day, Vegan, Wheat Free 7 Comments

Does anyone make cakes from scratch anymore?  I mean seriously.  Who has the time unless you’re a baker by choice.  I have to admit 2 things.  I hate baking – now I don’t mean muffins, bars or granola.  NOT that.  Cakes in particular which then leads me to revelation number 2 about me… I hate cake.  I don’t know what it is but if I never saw another one the rest of my life I wouldn’t be sad.  Some times, on rare occasions, cupcakes are fine but they honestly leave me despondent.  I don’t know… maybe there is something wrong with me.  And apparently this cake-hating is genetic or something.  My kids are the same.  They’ve always asked for cookie cakes or ice cream cakes to celebrate their birthdays.  Even my husband…. it’s a no-go!  But today is my dad’s 79th and he LOVES cake.  So I suck it up & make one.  Well, a box one but he doesn’t know.

So I instal-story a lot.  I asked my watchers if they would be interested in my hack for the boring box cake and within 1 hour I had received over 100 DM’s letting me know they were interested so here it is!

Asian tofu protein bowl. V. GF.

March 27, 2017 by Knead to Cook Filed Under: Asian inspired, Brunch, Evolution Power Yoga 40 Days, Gluten Free, Pressure Cooker, Running/Races, Tofu, Vegan, Vegan proteins, Wheat Free 2 Comments

Asian tofu protein bowl.

In the pursuit of feeding one of my Boston bound marathon runner clients, targeting foods that are high protein & a less bean focused menu this week.  My mind obviously went to tofu, my absolute favorite source of protein and this dish was created from experimenting in the kitchen.

Now if you follow my Instagram story, you’ve seen me whip up marinated tofu similar to this recipe but I’ve never really documented it.  It was always a recipe I whipped up from memory but never shared.  I had literally hundreds of emails asking for the recipe and so it goes… here it finally is!  My apologies for my tardiness but I’ve been quite busy with recipe jobs/blogging, cooking and oh hey all things college-related including many flights being booked for travel.  But I digress… this recipe is a trifecta of protein, carbs, fiber and all thing good in the world.  One dish meal that is pure perfection.  I hope you enjoy this one as much as we do.

Homemade Chocolate Nut Milk. Vegan. GF.

March 24, 2017 by Knead to Cook Filed Under: Beverages, Breakfast, Brunch, Evolution Power Yoga 40 Days, Gluten Free, Nuts, Running/Races, Snacks, Vegan, Vegan proteins, Vitamix, Wheat Free, Your Life Edit Foundations 2 Comments

Homemade chocolate nut milk.

I’ve been on a homemade nut milk kick lately & I’m making no apologies for it. I’m the girl who always has something soaking in my kitchen. Since my husband ordered me my nut milk straining bag (okay, refrain from laughing) but seriously, this thing is critical for making nut milk —-it made the process a dream!  This is the bag I got. I was excited to use it and it didn’t disappoint.

I made two batches of milk (different combination of nuts this time) but once I got on the second batch I got the brilliant idea to make a cacao (duh add chocolate) version.  OHHHHH my goodness why haven’t I done this before?  It came out of my Vitamix (frothy and hot) and honestly the best hot chocolate I’ve ever had.  So simple.  You control the level of sweetness versus the sugary commercial versions.  I’m quite smitten with this version.  Not overly chocolatey but just the right amount.  Okay, okay… let me get this recipe started and oh HAPPY FRIDAY!

Almond butter granola. Vegan. GF.

March 23, 2017 by Knead to Cook Filed Under: Breakfast, Brunch, Gluten Free, Running/Races, Snacks, Vegan, Vegan proteins, Wheat Free, Your Life Edit Foundations Leave a Comment

Almond butter granola.  Worlds collide with this recipes… ha!  Rolled oats and almond butter are life.  Breakfast with nut milk.  Topping my favorite green smoothie.  Or just grab and go!  I eat a lot of granola.  In fact I’ve even topped my muffins with it, dipped my banana in it and put it on my favorite vegan ice cream.  Great carbs, healthy fats, fiber and protein right there!

This recipe is super easy to prepare.  Once made and cooled, I store in air tight containers and leave in my pantry until it’s gone, which is typically a few days.  This version I added big coconut flakes and chia.  You can add or subtract.  Add some almonds in or not. Super flexible.  My youngest loves adding raisins to hers.  My biggest tip is always to keep a watchful eye on the granola as it bakes because it goes from golden to burnt fast.

This is a wonderful food gift to ship to your favorite college student, someone in the military or to your favorite friend or relative.  I always pack it up in cute little Weck’s jars. Great for storage and a sweet presentation.

Almond Walnut Milk and Everything Bagel Pulp Crackers. V. GF.

March 15, 2017 by Knead to Cook Filed Under: Beverages, Breakfast, Evolution Power Yoga 40 Days, Gluten Free, Nuts, Party Foods, Running/Races, Snacks, Vegan, Vegan proteins, Vitamix, Wheat Free, Your Life Edit Foundations 6 Comments

Homemade almond walnut milk & everything bagel wet pulp crackers.  Hi my friends!  Okay, so we survived Stella Superstorm/Nor’Easter blah blah blah.  We ended up with about 8 inches of fresh powder with a good inch of ice.  Super fun.  I won’t complain because my entire family was home together with no commitments or jobs on the agenda.  It was heavenly, I won’t lie.

More updates… So after a very thorough investigation/research – my daughter had narrowed her college search/applications down to 10 schools.  She has finally signed on the dotted line and is committed to university!  So excited.  So yesterday we did all things registration/booking dates for meeting her counselor and registering for classes, booking orientation week, ranking dorms, doing her school ID, choosing her meal plan & she actually has found her roommate.  We also got her bedding etc. last weekend.  What the what?  We’ve gone from zero to finished in a hot second.  Phew!

So I stocked up on all my nuts last week and figured I would make some milk over the weekend.  I wanted to do a combination of walnuts and almonds with cinnamon.  It came out great and I made crackers with the residual pulp (sans dehydration). No waste and lots of goodness.
