Antioxidant-Packed Protein Smoothie without banana

April 13, 2021 by Knead to Cook Filed Under: Breakfast, Brunch, Fruit, Gluten Free, Smoothies, Vegan proteins, Vitamix

I’ve decided that I need to share of my really simple, go-to recipes I eat daily but just assume everyone is familiar with how to make. Not true. I hope this recipe serves as a basis for your own creativity when it comes to your pre-workout, breakfast, snack or recovery smoothie bowl. Quickly the why I make this dish: Antioxidants are compounds that inhibit oxidation, a chemical reaction that can produce free radicals and chain reactions that may damage the cells of organisms in the body.

This recipe is creamy, thick and ice cream-like. I love it super thick as it satisfies my sweet tooth! Okay, let’s get started!

Ingredients:
3/4 cup of unsweetened vegan milk of choice (I barely cover the blades of my Vitamix)
1 cup frozen wild blueberries
1 giant handful of greens (baby greens like spinach or kale or a mix)
Pinch of salt
1 tbl raw cacao powder
1 scoop of your favorite vegan protein (I prefer Vega Sport vanilla)
3-4 ice cubes
If it doesn’t blend, add a touch of water incrementally until it just starts to blend.

Method:
Add the ingredients in order into your blender. Start to blend on low, if it has trouble blending I add a touch of water as needed to just get it to blend. The key to thickness is the lack of excessive liquid. A must to a frosty, smooth smoothie bowl is to blend for 2 minutes. Then spoon into the bowl and top with your favorites.

That’s a wrap for now!

Vegan frosty smoothie bowl.

I’m admittedly not a summer weather fan. It’s been an oppressive 90+ degrees for an endless stretch of time. For dinner most nights, I’ve been opting for this very chilly & refreshing bowl. It’s protein-packed, flavor packed and it tastes so indulgent! I hope you enjoy 🙂

Ingredients:

Skant 3/4 cup of unsweetened nut or oat based milk of choice
1 scoop of your favorite protein powder (I use either vanilla or chocolate)
1 tbl of your favorite nut butter OR 2 tbl of an organic powdered nut butter if you prefer
1 frozen banana
Pinch of salt
8 – 10 ice cubes
Optional:
1 tbl of raw cacao (if using a vanilla protein but want chocolate flavored)
If using vanilla protein and you want a strawberry bowl (add 1 cup of fresh or frozen strawberries).

Method:
Into a blender add your milk through ice cubes (see notes about optional flavors). If using additional berries, add them too!

Blend, you may need to stop and scrape the sides down often. Blend until smooth and creamy. Spoon into a bowl and top with whatever you love!

My faves:
Organic bran flakes
Granola
Pomegrante seeds
Cacao nibs
nut butter
berries
seeds
nuts
Enjoy immediately!

Salted Chocolate Almond Butter Protein Smoothie. Vegan.

February 3, 2020 by Knead to Cook Filed Under: Breakfast, Gluten Free, Smoothies, Vegan, Vegan proteins, Vitamix, Wheat Free

I’ve been a long time fan of the high protein smoothie. Once I started working outside the home – packing up a smoothie in my Yeti was the perfect solution. I hate taking breaks so I can walk around drinking this and be filled for hours on end.

I’ll provide options below for optional substitutions as well. This smoothie is creamy and very filling. I typically eat a lot in the a.m and afternoon and have a smoothie for dinner if I don’t work. I go to bed so earlier that this is easier for me to digest.

Okay let’s get this ball rollin’…

Ingredients:

1.25 cups of unsweetened nut or oat based milk
1 scoop of Vega Sport Vanilla or Chocolate
1 tbl of raw cacao powder (you can omit this if you use chocolate protein powder)
1 tbl of nut butter (I use my own recipe)
1 tbl of chia seeds
Optional:
1 frozen banana
1/2 avocado
1/2 zucchini
1 pinch of salt
Ice cubes (3-4)

Method:

Put all of the ingredients into a high-powered blender. Blend it all until creamy. You can drink straight away or store in a travel mug for the next day.

Banana-free protein smoothie. Vegan.

May 7, 2019 by Knead to Cook Filed Under: Beverages, Evolution Power Yoga 40 Days, Fruit, Gluten Free, Smoothies, Snacks, Vegan, Vegan proteins

Happy May dear friends. We’re back from Italy and had the best time. Happily also brought oldest home (she was studying abroad this semester). So this momma is happy to have all my chicks under one roof again… especially in the same timezone!

I’ve been working a lot and not blogging at all… sorry for that! I did shoot this smoothie a few weeks ago and neglected to post. I have a lot of people who can’t eat bananas and want a good vegan smoothie. I hope you enjoy this one as much as I am lately.

Ingredients:

1 cup of unsweetened vanilla nut based milk
1/4 cup of water
2-3 cups of organic baby spinach
1 tbl of your favorite nut butter
1 scoop of your favorite plant-based vanilla protein like Vega Sport
1 tbl of chia seeds
1 tbl of raw cacao powder
1/3 cup of crushed ice

Topping:
Cacao nibs
Chia seeds
Hemp hearts
Granola

Into your blender add all of the ingredients (minus toppings). Blend until creamy. Pour into a big glass and top if desired. Enjoy! This smoothie often goes to work with me and fills me for about 4 hours. 🙂

Dragonfruit Protein Smoothie. Vegan.

Happy August friends! Yes, I’ve been on a bit of a blogging hiatus lately since starting to work outside the home, taking my oldest back to college and training.  No excuses though, I’m back with a fun summery protein smoothie.  I love protein smoothies post training session or even for dinner with these very hot temperatures lately.  Great way to get your protein and fiber into your diet!  Plus this color?  I love it.  I will admit my smoothies are typically a lovely shade of green/gray due to all the veggies I pack in.  Fear not, these are veggie free but still so good for you.  Shall we get started?

Pineapple coconut smoothie bowl.  Originally, this bowl was just a tropical delicious breakfast.  Now, per my naturopath, I’ve been making these daily as a snack or even dinner.  My allergies are in full bloom, thanks tree mold, and she highly recommends that I eat pineapple daily…

Very Mint Matcha Shake. Vegan. GF.

April 17, 2018 by Knead to Cook Filed Under: Breakfast, Brunch, Evolution Power Yoga 40 Days, Gluten Free, Smoothies, St. Patrick's Day, Vegan, Vegan proteins, Vitamix Leave a Comment

Mint matcha smoothie.

Calling all mint matcha fans!  This original recipe was created and inspired around the famous “Shamrock” shake that is far less healthy or appealing as an adult.  I’ve revamped this recipe numerous times and I’m happy to report that this one is a winner for sure.  Kids love it because of the minty flavor, parents love it because it’s packed with veggies that the kids never detect.  Winning all around.  Spinach is such a great vehicle for adding a nutritional punch without adding a detectable (to any kids or picky adults) taste.  Spinach is a powerhouse as it packs iron, magnesium, vitamin C, potassium… Matcha is a powerful antioxidant EGCg. It helps boost metabolism.  Detoxifies the body.  I could go on and on but I won’t.

I often make this as an after-school snack for my youngest or post workout for me when I need a punch of flavor.  Mint is one of those refreshing and soothing flavors we gravitate towards.  I’m also not a big fan of matcha brewed but in smoothies or baked in snacks… count me in!

My daily go-to Green Protein Smoothie. Vegan. GF.

I hate to begin a post with an apology but I have 2!  First, I’m sorry I’ve been relatively MIA on posting. Getting back into a working groove, standing for hours post knee replacement has been taking me time.  Second, the lighting today, due to an ice storm, isn’t working with me so the pics aren’t my best but hey you’re here for the recipe after all, right?

Good Karma Foods Flaxmilk Chocolate Smoothie.

March 14, 2017 by Knead to Cook Filed Under: Best Vegan..., Beverages, Breakfast, Brunch, Desserts, Fruit, Gluten Free, Raw, Smoothies, Snacks, Sponsored, Vegan, Vegan proteins, Vitamix, Wheat Free 31 Comments

Lately, I’ve been sharing my favorite vegan, plant-based foods here on my blog.  Good Karma Foods flaxmilk and yogurts are just two of our favorites.  Recently, I have the opportunity to try out Good Karma’s flax protein milk.  First things first… it has 8 grams of protein per serving AND tastes so incredibly creamy!   I don’t know about you but I’m not a fan of watery milks.  If you want a luscious smoothie – you need a creamy base to start and this milk is perfect!  Plus packed with Omega 3’s… this one is a winner!

Good Karma Foods flaxmilk is packed with 1200mg of Omega 3’s.  Free of the most common allergens like dairy, soy, & nuts.  It has as much calcium as dairy milk.  The flax with protein only has 70 calories per serving in their unsweetened flaxmilk.  The flavor is extremely neutral and can be used in both savory as well as sweet recipes, like my smoothie recipe.

Good Karma Foods is based out of beautiful Boulder, Colorado and they were the pioneers to developing a flax seed based milk.  They are passionate about healthy eating and living -which is why I believe in such an incredible company and their products.  They also have an incredibly creamy drinkable yogurt that we’re obsessed with and a creamy yogurt that is unbelievable.  Okay so enough of my babbling on… let’s get to the recipe AND a sweet giveaway!

The BEST vegan dairy products!

March 5, 2017 by Knead to Cook Filed Under: Best Vegan..., Beverages, Breakfast, Brunch, Gluten Free, No bake/cooking required!, Smoothies, Snacks, Vegan, Vegan proteins, Wheat Free 2 Comments

Okay, okay… I’ve been MIA this week.  Working on a lot of things in the background (one very exciting opportunity in June!) but I’m back with my next installment of favorite vegan products.  This vegan cheese post was so wildly popular, this is going to be a series of my favorites each week mmm kay?  Great.

So I will digress for a moment.  I’ve been off from my private “cheffing” (yes, I know not an actual word) while my main client is traveling on spring break to Hawaii.  So I’ve been doing a lot of family things… like cooking for them – ha!  Lunches with my daughters.  Road trips.  Lots of fun things.  But this weekend was proved to be a wild ride.  I won’t get into specifics, but that WOW, dreamy university with the 5 year masters program in psychology acceptance came in on Friday night WITH a sweet academic scholarship!  Okay, I’m trying to keep it together and breathe here.  Then on Saturday… I got a huge, I mean HUGE food blogging job. I’m SO overwhelmed with gratitude!

Okay so let’s get this vegan dairy post rolling…
