Did you ever wonder how farm co-ops work?  Are you not a gardener but would love to buy local farm goods directly from the farmers?  Prefer to eat seasonal foods?  Farm co-ops are growing and growing throughout the country.  I recently had an opportunity to meet with a very fast-growing farm co-op in my own local town but wait… there’s a twist.  They are growing and offering residents and restaurants an opportunity to buy locally, right from the farmer.

Taco Tuesday is a staple in my house.  My kids have requested it forever and now it’s a staple… at least for the most part.  We missed Tuesday this week due to my daughter’s swim banquet for high school but I made up for it on Wednesday.  Having a taco “bar” is easy when your family has a divided diet as mine does.  My husband recently adopted a vegetarian diet, much like myself but my girls and father all eat meat.  Having a multitude of toppings makes it easy if your a vegan, vegetarian or meat lover to happily partake in this fun theme dinner.

Easiest Slow Cooker Chicken Taco Chili.

My husband made this dish on Saturday prior to our swim meet.  We recently got a new slow cooker that allows you to sauté in the insert and it makes life so much easier.  This recipe came about from what we had on hand and whipped up in under ten minutes before we were out the door.  Perfect for busy mornings and using up leftovers!  You can add or subtract what you have on hand to make this work in your kitchen.  This would be a great dish if you’re hosting a super bowl party of playoff game get-together.  Insanely easy!

Chicken, Ham and Kale Soup.

First before I get into the recipe at hand, I wanted to let you know that I have since deleted (it takes 14 days) my Knead to Cook Facebook page because they continually make it difficult for my posts (and other bloggers) to share recipes and photos.  Despite having over 70k fans only 1-2k were ever getting to see a post a time and managing my efforts and time – that wasn’t working.  I will continue to post on my website along with my Instagram, Twitter and Pinterest feeds so fear not.  Happy 2014!

I whipped this soup/stew or stoup (ha ha) up right after Christmas with the leftover ham that we had on hand.  You can always tell when you family tires of leftovers and it’s time to reinvent.  This recipe came to me on the elliptical at the gym.  Braising meat always brings out the best flavors and it is the easiest dinner ever.  I added some nutritionally packed kale and this dinner was out of this world.  I left my chicken pieces (I used cut up breasts) in large pieces but you can choose to either shred or cut smaller for more a soup feel.

Perfect for cold and chilly days like today when the kids are home from school and you need something to warm your bones.  Enjoy!

Chicken Teriyaki in the Slow Cooker.

Slow cooker, crock pot, whatever you call it – it is a lifesaver for busy families.  This week has been totally nutty for me.  Lots of swim commitments in the afternoon and evenings and this weekend starts our weekend meets.  I’ve also been quite smitten with my slow cooker as I got a brand new one that does all of these great things so today is my second day testing it out.  This recipe is so easy and so flavorful. You can easily toss all of the ingredients into your slow cooker and make rice ahead of time and you will have dinner the minute you get in the door after work/taxiing or whatever  you do.  During the busy holiday season, recipes like this are a must to be the ultimate time saver and who can’t  use more time?

This recipe can be used for a myriad of recipes – soup, tacos, bbq sandwiches – the options are endless!  I had four meetings yesterday and had pretty much no cooking time for dinner. I always pull out the crock pot on busy days because let’s face it, it is a magic machine that transforms any ingredients into perfection in only a few hours.  This was no exception.  I used it for make-your-own taco Tuesday dinner.  The family loves it and it’s a great way to get your kids to eat some veggies.

Maille mustards are my favorite.  Honestly, it’s all we use in our house.  The flavors and unparalleled and always yield the perfect result in my cooking, sauces or dips.  I was so excited when Maille reached out to me and asked me to create some recipes for them.  I do have some recipes on my website and this one is by far my standard, go-to, obsessed and can’t live without balsamic garlic bread dip.  This recipe I’m sharing today was a bit of a departure from how I typically use mustard and I have to say, it was so good!  My kids, husband and father alike couldn’t get enough for the sweet and savory combination of flavors.

My little farm stand, tucked away on this windy road, surrounded by Amish farms has this wonderful little gem I found probably two or so years ago and I keep going back for more… it’s smoked honey.  I’ve gotten a slew of questions about how one smokes honey every time I post a picture.  I’m unsure of the exact measures that one takes to yield such an incredible product but I’m sure glad they do!  It’s remarkably flexible… I can top grilled fruit with it or use it in glazes, such as this one.  Tonight I’m grilling up a pork tenderloin for my family and this glaze will finish it off nicely.  You can easily use it over fish or chicken as well.

Like everyone on the planet who eats/prepares chicken, the search for a new, fun recipe is always a mission.  My husband was coming home from being away all week on business, I had chicken defrosting and originally thought it would be fun as shish kabobs but I didn’t have time to soak my sticks so I opted to grill (indoors due to a bit of rain) on my grill pan. This dinner came together perfectly and in one pan, which hey, is a big score in any kitchen!  I topped the final product over leftover quinoa I had in the fridge but it would be great over some brown rice too.

My friend Adam makes the most incredible rubs for vegetables and beef, chicken, seafood, pork or whatever you can whip up!  I’m addicted!  Totally clean, super flavorful – perfection in spice form!  Low sodium  Gluten free.  No preservatives.  All natural and NO MSG.  Click here to see Adam’s world of awesome rubs.  Also makes a great Father’s Day gift!

So this salad this very much up to you and what you love or have on hand.  Here is my version.  You can make this vegetarian by just adding more veggies and omitting the chicken or use tofu or fish.
