I’ve been so MIA this week and I’ll apologize upfront.  We’ve been renovating our master bathroom (we’ve – my dad and me) 8 hours a day since  Sunday.  I miss my kitchen to be honest and have been just winging it for dinners.  Sad but true.

I was determined not to miss my training runs or Friday Favorites so here it is 🙂  My favorite products that I’m crushing on this week.  Hope you love them too!

Friday is always a reason to celebrate, right? I’m excited for the weekend because my husband has been working exponentially more the past two weeks and with my early training schedule – our paths haven’t crossed all that much.  We’ve communicated more by text than in-person. We aren’t big into big Valentine’s Day celebrations – dinner, gifts etc.  Our plan is going for a breakfast date and farmer’s market shopping Saturday morning and demo in our master bathroom during the day.  We’re revamping three projects and will do all the work ourselves – we love it.  May not be the typical romantic weekend but spending time together will be very much appreciated at this point.  And sledgehammers – well that’s just plain fun!  Hoping the weather allows us a run outside on Valentine’s Day but we shall see.  May be running side by side on treadmills.

So over the past two days I’ve been thinking about my favorite things this week.  I’m really excited to share them with you so let’s get rolling!

Valentine’s Day is quickly approaching and I love sharing homemade treats not only with my Valentine, but friends and special people in my life. Little treats made from the heart always mean so much to people. Share the love. But heed my warning… these are a completely addictive little treat. 

These are super easy to make and you can decorate them with fun sprinkles or top with sea salt.  Vegan and gluten free with no refined sugar. This recipe can be doubled if you want to treat yourself.

TGIF people!!!  It has seemed like the longest week ever – probably because of snow delays and days off for my kids.  The disruption in schedule throws me off I admit it.  Jobs get delayed. Things get delayed.  So now that everyone is back on a schedule I hope to get my schedule back on track.

Did you make a New Year’s resolution to eat healthy?  Prep food ahead of time?  Make and eat breakfast each day?  Breakfast is the most important meal of the day – hand’s down.  You need to fuel to catapult you through your day and this easy breakfast will just do that. Oatmeal is a carbohydrate and protein-rich source that provides calories and energy.  Have low glycemic index which aids in burning fat while exercising.  High soluble fiber, which is heart healthy and oatmeal contains both calcium and potassium which can aid in reducing blood pressure.  I also add some superfood chia seeds and ground flax for more fiber impact.  Food is medicine.

Kids love making these little breakfast cups and when involved – they are most likely willing to eat their creations.  You never know – their flavor combinations may just win over palates and get their day started off on the right fit too.

Taking a few minutes on Sunday to prep the base of the oatmeal and from there – it will take you less than a minute each evening to customize your overnight oats.  They are totally portable and are ready when you are in the morning.  I’ll share some of my favorite varieties but you are only limited by your imagination.

If you’ve ever had the wonderful opportunity to eat Whole Food’s garlicky kale – chances are you were in love at first bite.  It’s the stuff kale lovers dream of… seriously.  I’ve been making this recipe for the past three years of being vegan.  I make it each week and keep it stashed in my fridge when hunger hits or I need a side dish in a hurry.  It isn’t for the faint of hearts however, mandatory garlic lovers only.

When you think of holiday menu planning I’m quite certain potatoes make the cut.  Potatoes are one of the most versatile and economical foods available all over the world.  Not only are potatoes a wonderful staple, they are packed with valuable nutrients.  This dish serves as the perfect side for dinner but equally as appetizing for breakfast, lunch or on your brunch buffet. This dairy and gluten free bake is the perfect accompaniment.

Potatoes also contain a compound known as alpha-lipoic acid, which aids in the conversion of  glucose into energy.  Food is fuel for the body.  Think of it as your gas that propels you in all of your endeavors.  The skin of potatoes contains Quercetin, a powerful anti-inflammatory properties and antioxidant capabilities that protect the body’s cells from free radical damage. The iron, phosphorous, calcium, magnesium and zinc in potatoes contribute to the building and maintaining of bone structure and strength. The potato’s fiber, potassium, vitamin C, folate, fiber and vitamin B-6 content, coupled with its lack of cholesterol, all support heart health. #BeholdPotatoes

I wanted to take a classic recipe and put a vegan twist on it for this holiday season.  The sauce requires that the cashews are soaked to yield a creamy vegan cheesy sauce.  With that preparation complete, the remaining part of the recipe preparation is quick and baking takes just about an hour.  Serves 8-10 people.  Let’s get started.

When Lucy Activewear asked me to write a post about my change of training/approach in running I was excited and overwhelmed.  This has become such a passionate subject to me but something that I feel that can be overwhelming.  I took a deep breath and wrote from my heart, literally.  My journey from marathon #2 in March through Ultra Marathon in early October.  It’s certainly been quite a humbling journey but an eye-opening one for me personally.  I hope it sheds some light on not being defined by a pace or time that you run but by the journey and ultimate achievement which is far more valuable.  Click here to read my post.
