Fall & football seasons are upon us. It’s the best time of the year (in my opinion). The weather in Pennsylvania turned a bit cooler, crisper after a very rainy Saturday. The air just felt cleaner and the skies bluer by Sunday. Football was on and I wanted to create fun dip that everyone could enjoy – as my family runs from hardcore carnivores to vegans. Okay so I waited until the 10th of September to roll out the very first pumpkin recipe. I feel quite proud of this accomplishment. I know it was hard to say goodbye to summer but truthfully – I’m a huge fan of autumn. Leaves transforming to brilliant hues. Crisp air. Boots. Jeans. Big cozy sweaters. Cuddling under blankets. I love it all. Not to mention running in weather that doesn’t leave me looking like I’ve been doused by a flood of water. Buh bye humidity!
So have I sold you on my reasoning? If not, I’ll sell you on the ease of this recipe – all made in one bowl. Hello food processor; I love you so! And let’s not overlook all of the wonderful health benefits of pumpkin. Let’s start… pumpkin contains vitamin A, C and E, riboflavin, potassium, copper, manganese, thiamin, B6, folate, iron, niacin and phosphorus. Perfect post workout muffin. PLUS an extra boost of Vega protein which helps muscle recovery post workout on top of the protein source from the almond butter — a snack that you can be happy to eat post killer gym session, bike ride, swim or run.

Purely Elizabeth is my favorite granola ever. Seriously, I eat it daily. My favorite is to top my green smoothie with it. It’s so good. I also love to carb load with it prior to long runs paired up with some fresh fruit and nut milk. But be warned, it’s addictive. Seriously. So when Purely Elizabeth sent me products to work with- I knew I wanted to create a fun breakfast cookie with the granola that would be awesome for back-to-school. School starts tomorrow for my youngest so I’m ready. Just in the nick of time.

The weather has turned insanely springy and just lovely. Temperatures are supposed to be in the high 70’s and low 80’s. Perfection. We’ve been working on the garden little by little. Thus far chives, kale, spinach, cilantro, mint, radishes, strawberries, garlic, Swiss Chard carrots, basil, Rosemary and peas are planted and in full gear. This week we plan on hitting up the nursery for flowers and the rest of our veggies and herbs to plant.
OXO sent me some awesome tools to try out in the garden. We are very fortunate to be able to compost all of our refuse from our kitchen. Veggies/fruit as well as other items like coffee grounds, tea that we don’t throw out. Our soil is rich and packed with nutrients from all of the scraps. The tools helped to churn up the soil and get it ready for more plants and seedlings. I want to share some fun pics from today’s gardening.
