Did you make a New Year’s resolution to eat healthy?  Prep food ahead of time?  Make and eat breakfast each day?  Breakfast is the most important meal of the day – hand’s down.  You need to fuel to catapult you through your day and this easy breakfast will just do that. Oatmeal is a carbohydrate and protein-rich source that provides calories and energy.  Have low glycemic index which aids in burning fat while exercising.  High soluble fiber, which is heart healthy and oatmeal contains both calcium and potassium which can aid in reducing blood pressure.  I also add some superfood chia seeds and ground flax for more fiber impact.  Food is medicine.

Kids love making these little breakfast cups and when involved – they are most likely willing to eat their creations.  You never know – their flavor combinations may just win over palates and get their day started off on the right fit too.

Taking a few minutes on Sunday to prep the base of the oatmeal and from there – it will take you less than a minute each evening to customize your overnight oats.  They are totally portable and are ready when you are in the morning.  I’ll share some of my favorite varieties but you are only limited by your imagination.

I’m always testing out bar recipes for my kids and husband.  I feel like I can’t keep enough healthy dairy and gluten free snacks in my house.  This is definitely a problem during swim season with a voraciously starving teenager.  The struggle is real.  šŸ˜‰

This recipe could also be used as a pie – springform pan would be best.  Would also be fun drizzled with melted dark chocolate (recipe for a sauce below).  It is decadent so a little goes a long way.  Plus a great vegan protein source and who doesn’t love more peanut butter in their life?!  My husband and kids have loved these as a post dinner treat right from the freezer.

I wanted to share this recipe that I love to make for Christmas dessert.  I’ll be honest – I prefer to serve a variety of small treats after Christmas brunch/dinner instead of a lot of heavier pies and cakes.  At this point in the month, I feel like small bites are much more appreciated.  Gingerbread is a must, of course, and perfect for my husband who is allergic to chocolate.  Gingerbread is quintessentially Christmas.   Naturally sweetened, vegan and gluten free.  Plus, protein-packed.

These are really easy to make and just need about 20 minutes to set up in the fridge or freezer.  I also store in the fridge to keep them firm.  My other tip is to use really fresh Medjool dates.

Spiced Pumpkin Granola Parfait. Vegan. GF.

Pumpkin game still going strong in my kitchen.  I think I’ve whipped up my 20th batch of these pumpkin banana muffins today while I was also making these.  I’ve been toying around with pumpkin parfaits for our Thanksgiving menu instead of the traditional pie, which no one really cares for.  In my house, individual desserts always seem to be a bit of a hit.  They are just the right size, so you avoid more overeating on Thanksgiving and they look beautiful when served.

Today was a test run and I used Purely Elizabeth granola and a gf graham cracker version with some cocoa nibs.  Both were a hit and you can customize by what your guests would like or offer a variety.  So much fun to make and so forgiving.  I love food that’s forgiving because I’m always making mistakes.

I made a big batch of this last night so breakfast was ready for teenagers that leave no time for breakfast in the morning and for me who had a long run on tap.  In the morning I put out various toppings and they can grab and go.  Nutrient and protein dense – just what they need for their day at school and practice afterwards.  Plus I love oatmeal so much for pre-run fuel.  This recipe is super forgiving just add what you love.  I added  Peanut Butter & Co. Another Monday back again.  I hope you’re caffeinated and that your week has started out on the right foot!  Yesterday was our 19th wedding anniversary.  We managed to celebrate all weekend long and it really was so nice.  Simple things like going to breakfast together. We took walks with the dogs.  It was just really nice to spend alone time together.  Plus our 14 year old started her first “official” job on Saturday and that made her and us very happy.

I did spend some time in the kitchen yesterday and whipped up one of our favorite salads and dressing.  I realized I had never shared it on my blog so I thought it would be perfect to share today for Meatless Monday.  You can pair this up with your favorite protein, I typically do tofu or tempeh.  Yesterday I just added nuts for protein and I was filled for hours.  It’s so good and the trick to making the rough textured kale nice and palatable.

This is the quintessential summer salad plus it gets better as the flavors meld together.  This vitamin and mineral packed dish that is perfect to take to your 4th of July BBQ, pool party or to make ahead and have for lunch or dinner.  I also love this on tacos straight up.  Seriously, I could eat this entire batch.  Truth.  This again, is super easy.  I love making it a day ahead of and put it in a fun covered glass jar (this is perfect for a BBQ to keep bugs at bay) or in a lovely serving bowl.  You can eat this as a side, main or as a salsa with chips.  Yum!

Sport Bundle - Full Marathon

I was thinking about how long it’s been since I went vegetarian and then vegan.  I became a vegetarian 3 years ago and one month.  It was shortly after that, about 5 months, that I realized dairy was wreaking havoc with my stomach.  My husband suggested I tested out removing it.  Once I did, it was the most enormous change in the way I felt.  The way I preformed.  The way I looked.  But my next big question was… how do I train on a vegan diet?  How would I get enough protein to rebuild muscles and turn them over fast enough for training.  I’m not a fan of processed foods.  I avoid ingredients I cannot identify.  So I turned to my running friends/advisors that help me all the time and they all suggested Vega.  I made a few connections and my journey with Vega Team began there.

I train 6 days a week.  Strength.  Running. Cycling.  I have trained for my second full marathon completely fueled by a vegan diet in March with over an hour personal record.  Training now for something larger.  I eat completely plant-based with my fitness fuel all from Vega Sport exclusively.  Now I’m running about 40-45 miles per week.  Strength training 2-3 times per week.  Cycle once per week with my husband.  It’s relentless but I love it.

I think of gazpacho as just an enormous bowl of my favorite salsa sans the chips.  Am I alone?  I love fresh salsa.  Despite not having fresh tomatoes from my garden YET, I did have some lovely cherry tomatoes I used to make this recipe.  I added fresh ingredients and herbs. I’ll admit that I can down one very large bowl of this easily.  Packed with tons of vitamins and nutrients… plus absolutely no guilt – this makes the perfect healthy, light lunch or dinner.  I do make this a bit chunkier but you certainly can puree it longer for a more blended texture.  Think of the easiest Meatless Monday dish ever!  All of my recipes are merely a guideline… do what you love and adapt as necessary.

Easy Pickled Carrots and JalapeƱos. Vegan. GF.

I don’t know about you but I’m a huge pickle fan!  Actually anything (or almost) I could devour.  These are great for an appetizer board with other veggies/dips for summer parties.  Great with sandwiches or veggie burgers.  You can use whatever vegetables you prefer in this recipe too.  Cauliflower works great!  Fix it and forget it.  The longer they sit the better the flavors develop.  I created this recipe with my running guru as my inspiration….
