Apparently February is my month of sprinkles.  I’ve been using them non-stop of jobs like here, some other jobs that haven’t been published yet and now here.  I always seem to use them around birthdays and Valentine’s Day, which is logical.  My oldest is turning 17 in a few days and I created these last week and I will admit that both of my girls devoured them in less than 24 hours.  They’re festive, cute and perfectly bite-sized and great for a celebration.  You can customize them by sprinkles you use per event and are adult and kid-friendly without a doubt.

Valentine’s Day is quickly approaching and I love sharing homemade treats not only with my Valentine, but friends and special people in my life. Little treats made from the heart always mean so much to people. Share the love. But heed my warning… these are a completely addictive little treat. 

These are super easy to make and you can decorate them with fun sprinkles or top with sea salt.  Vegan and gluten free with no refined sugar. This recipe can be doubled if you want to treat yourself.

I wasn’t planning on posting a recipe today but after my run, hair appt. and countless dog walks… my friend Amy asked what I was posting today and my internal guilt hit me.  So Amy this one is for you!  Vegan. Raw.  Prepped in less than 5 minutes.  Chocolate pudding/mousse -if you want to be fancier.  Protein-packed.  Just the thing when the chocoholic monster rears its ugly head and you feel the need to go on a sugar binge.

Kids love it.  Adults love it.  Creamy smooth and the perfect make-ahead dessert. Seriously, who doesn’t love chocolate?

Tuesday.  Delay for both girls due to some rain that froze overnight.  So I got to the gym early this morning and then rushed home to make the girls a nice big breakfast.  A perk of a 2 hour delay.  I normally don’t make pancakes all that much since my daughter went gluten free but today I thought it fitting.  This would be a great Valentine’s Day breakfast idea.  Even make these ahead of time – and reheat.  Just add some berries as a side dish and a fun mimosa or fresh squeezed juice for a memorable. love-themed breakfast or brunch.

This makes a big batch of pancakes.  I store extra pancakes in tupperware and warm them in the morning- which is great for quick on-the-go breakfast for teens as they get up late and rush out the door.

Valentine Protein Hearts. Vegan. Gluten Free.

The weekend is in sight!  I’m excited.  We have some fun things planned.  This week has been exhausting, I’ll admit.  My training is wiping me out.  Deep sleep, for some reason, has been escaping me which is why I think my recovery has been delayed.  More on that later.

Last night I started to whip up some energy balls and then decided to depart from the norm and make them more of a Valentine’s Day sweet treat that is totally healthy.  My husband can’t have chocolate so I made some with a vegan chocolate drizzle for my girls and some with an almond butter drizzle for him.  They turned out so cute.  Plus they pack a healthy punch of vitamins and protein!  If you’re looking to do something different this year and avoid the box of chocolates… you might want to consider these.  Heart healthy and all.

Hump Day is here!  It started out rough, I won’t lie.  But knowing these were in my kitchen and that made the day a bit better. Last night was super exciting.  My oldest daughter scored enough points to get her varsity letter at her swim meet.  We were very proud parents!  Second year in a row and a very tough season.  Hard work pays off.

Yesterday, I was thinking about making a fun Valentine’s Day cookie for my girls.  It had to be gluten and dairy free for my oldest.  It had to be tasty.  And let’s face it – it had to be sweet!  Achieved!!  My youngest daughter said they are like pillows of deliciousness.  Biggest. Happy Monday!  Another week, another missed snowstorm.  All the pomp and circumstance on the news and we got a few inches of the white stuff. Kids were delayed but thankfully that was it.  No need for the snowblower and the kids still got to go to school.  Plus bonus – I got to make my girls some freshly squeezed blood orange juice.

I have been thinking about this recipe since Vega sent me their new bionic (seriously – its packed with tons of bionic vegan ingredients) mocha flavored protein powder last week.  This paired with espresso beans.  Why do I hate coffee but love vegan dark chocolate covered espresso beans?  I have no idea.  I had them one day at a restaurant and couldn’t believe it… I loved them.  And here’s a little tidbit, most better quality dark chocolate is vegan.  No milk!  YAY!  So I found some favorites and I stash them in my pantry.  I have a  few in the morning for a caffeine punch.  But today, I chopped up a bunch and put them in this recipe.  Bionic balls!  Ha!  Now that should make you laugh!

Happy Martin Luther King Day and Monday… yes, we meet again.  Everyone but my husband is off today so it was a bit of a lazier morning for everyone, well except that I got up with my husband at 5:30.  I was planning on taking a rest day after my run yesterday – more on that later.  Plus I had my orthopedist appointment today to check out the progress of my finger.

I’ve been working, tirelessly, on the perfect vegan and chocolate chip cookie.  You know that kind that isn’t gluten free and vegan that you once loved?  Yeah, that kind.  And let’s face it… Monday’s can always use a good chocolate chip cookie break built-in.  Ha ha. So finally, yesterday, I gave it another attempt and success was achieved.  I was quite pleased.  I normally don’t eat cookies but I had one… contemplated 4 more but walked away.  Yet as I type this… they are calling my name again.  Actually my mouth is watering just thinking about it.

Okay so in the spirit of giving…. here you go!  I hope you love these as much as we do!

Happy Hump Day people!  How’s the week going for you?  Pretty eventful here.  Booked a big surprise vacation.  Mid term exams happening for my oldest. Swim meet last night.  Anxiety and stress eating are in full swing for her.  The weather is slightly, slightly… warming up.  It gives me hope for spring, which cannot come soon enough.

I created this recipe for my oldest daughter so that she can snack and get good nutrition for optimum function for both her tests and for swimming.  Healthy fats and proteins are necessary for proper brain function.   I’m always so distraught when people avoid healthy oils and fats…. they are needed by the body.  Healthy fats serve three main functions: provide energy.  Some types of vitamins rely on fat for absorption and storage. Vitamins A, D, E and K, called fat-soluble vitamins, cannot function without adequate daily fat intake. These vitamins are essential parts of your daily diet. Fat cells, stored in adipose tissue, insulate your body and help sustain a normal core body temperature.  So in moderation, healthy fats are imperative.

I’m convinced that everything in my house is now breaking.  Do you ever go through spells like that?  First started with a patio outside that we had to tear up and pour cement.  Then our fridge died… that was replaced.  Now the ceiling fan in my bedroom just went kaput!  Not really happy as I really love my fan and it seems like I’m boiling at night with just the a/c on.  Maybe menopause is closer than I thought (ha ha).  I was relegated to removing the old fan and running out for a new one.  Before I run off to hang that I wanted to blog because the rest of my day is packed with a swim meet.

I had planned on sharing my recipe for mint sun tea that I made yesterday but had a hankering for some raw brownies and these bumped that post.  These raw brownies are a bit different from ones made in my past.  I wanted to use coconut butter or manna in these for a deeper, richer flavor.  They are so good and good for you!  Raw.  Vegan. Gluten free.  I like to make snacks for my daughter to take to her swim meets that I know are diet friendly for her.  These are perfect.  And if you aren’t a coconut fan, no worries… the flavor almost is undetectable.  Packed with protein from the hemp hearts. Perfect when the chocolate cravings hit!  I store in the freezer (or you can store in the fridge too).
