Vegan chocolate mousse. Vegan. Raw.
I wasn’t planning on posting a recipe today but after my run, hair appt. and countless dog walks… my friend Amy asked what I was posting today and my internal guilt hit me. So Amy this one is for you! Vegan. Raw. Prepped in less than 5 minutes. Chocolate pudding/mousse -if you want to be fancier. Protein-packed. Just the thing when the chocoholic monster rears its ugly head and you feel the need to go on a sugar binge.
Kids love it. Adults love it. Creamy smooth and the perfect make-ahead dessert. Seriously, who doesn’t love chocolate?
Ingredients:
1 package of firm or silken tofu (I prefer Nasoya) drained
1 cup of vegan chocolate, melted (I prefer Enjoy Life)
3 tablespoons of cashew or almond milk (I used Silk cashew)
2 tablespoons of maple syrup
1 tablespoon of raw cacao powder
1 tablespoon of vanilla extract
Pinch of salt
Directions:
Place all of the ingredients into your Vitamix or high powered blender and blend until creamy smooth. You may need to stop and scrape the sides down. Then blend again. Pour into ramekins or fun glasses and chill to set up for at least 1 hour. Serve.
Today I headed out for my 6th consecutive run this week. I’ve desperately been working hard at getting my running legs back post marathon. Today I felt like finally I was able to run comfortably without any heart rate spikes or craziness. It was the perfect spring morning and now… I look forward to my rest day tomorrow.
