Happy Monday friends!  After a long swimming-packed rest weekend – It was hard to get rolling this morning.  But it’s a Monday and I’m not big on excuses.  So the day started.  Running.  Swimming.  Tennis and then volunteering for me and my girls.  Pretty uneventful day except that our weather has gotten terribly hot here.  It was 80 degrees at 5 am.  Heatwave has arrived… much to my dismay.  I know, the snow will be here before we know it but geez this is the fringe of hell heat.

This recipe was created last week.  I’m always looking for extra ways to add protein to meals.  I was shocked when even my 78 year old very Italian father ate the pasta with the lentils!  He liked it.  #forthewin But I have to give credit where credit is due… my youngest volunteers at two senior centers during the week.  She picked up a monstrous zucchini at their market and I knew I had to make some zoodles with it… I’m mean really, what else could I do with a 5 lb zucchini she was so proud that she bought me?

Memorial weekend starts tomorrow!  What?!  Okay I didn’t see it coming.  Seriously I think I live in a bubble.  It’s a problem.  I better on get on inviting some friends over and grilling up some food, fire pit prep for s’mores – fun summer activities may commence.  With that… I always love to make dips and spreads that can be made ahead of time and be ready to go.  This recipe is perfect for sandwich spread, dip for veggies/crackers or pitas or I add hummus to may salads in lieu of dressing.

If you haven’t been acquainted with hemp seeds – you need to get them.  They are a natural blend of easily digested proteins, essential fats (Omegas 3 & 6), Gamma Linolenic Acid (GLA), antioxidants, amino acids, fiber, iron, zinc, carotene, phospholipids, phytosterols, vitamin B1, vitamin B2, vitamin B6, vitamin D, vitamin E, chlorophyll, calcium, magnesium, sulfur, copper, potassium, phosphorus, and enzymes.

Harissa is a Tunisian hot chili pepper paste the main ingredients of which are roasted red peppers, serrano peppers and other hot chili peppers and spices and herbs such as garlic paste, coriander seed, or caraway as well as some vegetable or olive oil for preservation.  I had a jar that I got at Target – mild in spice level and I thought it would be fun to add it to the hummus for a different flavor than the traditional.

Chickpeas are an an excellent vegan and gluten-free source of protein and fiber, chickpeas also contain high levels of iron, vitamin B-6 and magnesium.

I want to show the benefits to the foods you eat.  I think the more educated you are regarding food choices, the better choices you will make in the long run.  Knowledge is power.

Vegan Mac and Cheese. Gluten Free.

If you’ve been following my blog for the past year; you know that my daughter went dairy and gluten free to help clear up her cystic acne.  It worked beautifully after several months.  But she’s 16 and she craves some old favorites and most of which I’ve recreated for her.  Mac and cheese is one dish that I’ve tried and tried but struggled with flavor/consistency and basically her approval.

I stumbled upon several recipes in my research but this one had been the best I had tasted.  However, I knew I could tweak and make this work for our taste preferences. This recipe is packed with vegetables and flavor.  I’m so thankful for the inspiration recipe because my daughter is overjoyed with it and gobbled down a bowl for dinner not touching anything else.  #forthewin

Roasted tomato balsamic sauce with spring onions.

Meatless Monday and super easy dinner idea.  Vegan.  Gluten free.  Totally healthy sauce that is perfect after a long weekend of food festivities with Easter and/or Passover.  Me personally, I believe I ate my body weight in Indian food.  We went back home for Easter and went out to dinner with good friends Saturday night.  We feasted on Indian food and had the leftovers for Easter dinner – my husband’s family isn’t vegan so it worked out perfectly.

Zoodles – noodles cut by a spiralizer tool replace traditional gluten-filled pasta.  It also is a fun way to get your family to eat more vegetables.  My kids love making zoodles.  My favorite veggies to spiralize would be zucchini and carrots.  The hold up to the sauce well and heat nicely.  Okay onto the recipe…

This week is known as my taper week. Sunday was my last double digit run of 10 miles.  This is the week I rest my body.  Lower running mileage.  Fuel, restore and replenish. Think of it as a rest day that pretty much lasts all week.  As good as it sounds, it becomes a bit maddening.  Why?  Well I run to get rid of the craziness and now I’m not running that much… at all.  So with a lot of time to rest and think… your mind goes to all sorts of places.  Good, bad and ugly.  On a positive note, I’ve gotten a solid 9 hours of sleep each night.  Fueling has NOT been an issue as I love to eat.  I’ve been reading a ton. My Bible, my new book.  Praying.  Meditating.  It’s all good.  Well, until my nerves hit then I can either cry or just plain freak out.  There you have it.  I’m human.  I suffer from nerves prior to a big race just like everybody else.  It is what it is.  And its happening to me now.

I haven’t been cooking all that much this week as I’ve really tried to be off my feet as much as possible.  This sauce I made Monday.  My youngest had been asking for spaghetti and I haven’t made it in a while.  This time, I made it with extra veggies I had on hand but hid them nicely so said youngest child doesn’t make a big deal about what was in the sauce.  Even at 13 – almost 14, we still inspect our food.

I made this tempeh in mind for a Buddha bowl (I’ll share a pic below) for dinner on Monday night.  Tempeh is as versatile as chicken or pork if you’re a carnivore.  It’s got a mild flavor and takes on whatever you throw at it.  I marinaded this for about 6 hours and it had absorbed it perfectly.  I love hot and spicy food.  If you aren’t a big fan, use less Sriracha sauce in the marinade or add a bit of sweetness to help balance it out.  I’ll share that option below as well.  Tempeh can be purchased at most major grocery stores in the health food aisle.  It’s a great option for protein in your diet.

If you think cheesy sauces are off the menu when going vegan you are so wrong!  Before I get into the how-to, let’s go through the various uses.  Let’s see ~ sandwich spread, straight-up dip, atop raw veggies, roasted veggies, sauce for your vegan protein like tempeh or seitan. Grilled tofu fries with this sauce on the side.  Top your baked sweet potato.   Atop your favorite gluten free pasta. Yes!  Just to name a few.  Sauces like this are just incredibly versatile and are only limited to your imagination.  Ohhhh and a chickpea scramble topped with this sauce on the weekend!  Yes!  Okay, now I’m hungry for that too.

First things first… get your cashews soaking.  That’s the key to making a great cashew cheese sauce.  Now onto the recipe.

Happy Tuesday!!!  I feel like a new person.  I ran today – outside!!!  After yesterday’s ice storm and being relegated to my house all day -I so needed it.  But more on that later.

I made this pasta sauce yesterday. It was inspired by a Thug Kitchen recipe with a bit of a departure. It was so delicious.  It’s creamy and garlicky without any of the guilt of a traditional cream sauce. It took me 10 minutes to make this dinner from start to finish.  Perfect weeknight dish.  AND a great Meatless Monday idea.  I would also use this sauce atop roasted or steamed veggies. Oh and that lemon in the pic — I grew that!  Yes, my little lemon tree in my sunroom is blooming with lovely lemons. So excited to use one in my recipe.

You don’t have to give up rich, creamy sauces when opting to eat a vegan diet.  This sauce would rival any dairy cream sauce but is a healthier, protein-packed version.  I made this sauce to top pasta but it could easily be used for a dip for veggies, crackers or chips.  My husband also used this as a spread on his sandwiches.  You an even top your salad greens with it.  The uses are endless.  You adjust the spices so it is totally customizable.  Meatless Monday just got a whole lot easier. Prep this sauce (soaking your cashews) and store in the fridge all week and use in various ways throughout the week.

Smoky Spicy Cheese Sauce. Vegan and gluten free by Knead to Cook.

Smoky.  Spicy. Cheesy Sauce.  Wait… dip.  Dressing!  Wait… a sub for yogurt or mayo in sandwiches!  Oh the uses are endless!  And the spiciness and smokiness is all under your wielding. But for us… the more kick and the smokier the better!

This cheese sauce, dip, dressing – whatever you want to call it is totally vegan and gluten free.  You will be bulled over by the flavor this packs in this super simple, insane concoction!  Seriously… you won’t want to miss this one.  Prep is required with the cashews but other than that -soaked cashews made into cream can become a magical ingredient that vegans seriously rejoice over!  I normally go sweeter but do love a savory cashew cream. And please, anything with Sriracha is just hands down fabulous.  I think I may need a support group for hot sauce.  In fact – there are two different types in here. Okay… recipe time.

UPDATE:  I made a super yummy vegan chili tonight and put a doll-up of this on it… heavenly!  Another use for this awesome sauce. Ha ha.
