Spicy Curry Chickpea Salad. Vegan.

This lunch made my day… seriously.  Last night we had a series of thunderstorms that impacted my lovely 45 lb black lab who decided that her panic should be inflicted on me as well.  At about one a.m. I found her standing on my chest, panting and whining in my face in fear.  Out came the thunder vest and it was just a long night.  I awoke at 5 to go for my run and opted to lay around and whine for about an hour before dragging myself out the door.

Post a few errands and I got home knowing I was craving this!  You can make this in no time.  Adjust the spiciness to your preference.  This recipe is enough for 4 or 5 good sandwiches – one of which I had promptly after photographing.  It hit the spot.  I love curry with a little kick.  This is great atop a bed of greens, as a sandwich or YES out of the bowl.  Dip crackers in it for a snack.  Packed with vegan protein!  No vegan mayo either… I’m not a mayo fan.  Now onto the recipe before I forget what I put in it.

Vegan chocolate mousse. Vegan. Raw.

I wasn’t planning on posting a recipe today but after my run, hair appt. and countless dog walks… my friend Amy asked what I was posting today and my internal guilt hit me.  So Amy this one is for you!  Vegan. Raw.  Prepped in less than 5 minutes.  Chocolate pudding/mousse -if you want to be fancier.  Protein-packed.  Just the thing when the chocoholic monster rears its ugly head and you feel the need to go on a sugar binge.

Kids love it.  Adults love it.  Creamy smooth and the perfect make-ahead dessert. Seriously, who doesn’t love chocolate?

Best Raw Key Lime Pie. Vegan. Gluten Free.

I made this raw, vegan and gluten free key lime pie last week for Easter dessert.  I was excited when my mother-in-law asked me to make dessert for everyone.  I typically make it for my daughter, husband and myself only because we have specific dietary needs. It was the first raw pie they had ever had and loved it!  It is packed with a ton of vegan protein – thanks to the nut-filled crust.  The creaminess of pie is courtesy of soaking cashews and blending them.  It was heavenly, creamy and so decadent.  I serve this pie slightly chilled.  Store it in the freezer and let it sit out for about 30 minutes prior to serving.

Spring has arrived on the calendar and sporadically makes an appearance here and there weather-wise in Pennsylvania.  We’ve had some glorious days but still many chilly ones.  Despite the chillier onset of spring, my mind has been going to lighter food inspirations.  Easter is so early this year and menu planning has been on the forefront.

This salad is super easy to prepare.  You can use what veggies you love or have on hand.  And this type of salad is always better the day or two after preparation so that the vegetables and beans can absorb the flavors from the dressing.  Honestly, I love foods I can make a day ahead of time so it allows me time to prepare the foods I can’t do that with on the menu.

This can be served as a side dish salad or on its own.  Great source of vegan proteins and vitamins.  I like adding whatever other seasonal veggies are available at the market like garlic scapes, chives, pickled or roasted beets, or spring onions.

Smoky.  Spicy. Cheesy Sauce.  Wait… dip.  Dressing!  Wait… a sub for yogurt or mayo in sandwiches!  Oh the uses are endless!  And the spiciness and smokiness is all under your wielding. But for us… the more kick and the smokier the better!

This cheese sauce, dip, dressing – whatever you want to call it is totally vegan and gluten free.  You will be bulled over by the flavor this packs in this super simple, insane concoction!  Seriously… you won’t want to miss this one.  Prep is required with the cashews but other than that -soaked cashews made into cream can become a magical ingredient that vegans seriously rejoice over!  I normally go sweeter but do love a savory cashew cream. And please, anything with Sriracha is just hands down fabulous.  I think I may need a support group for hot sauce.  In fact – there are two different types in here. Okay… recipe time.

UPDATE:  I made a super yummy vegan chili tonight and put a doll-up of this on it… heavenly!  Another use for this awesome sauce. Ha ha.

Strawberry salsa is vegan, gluten free and screams of summer!  I could eat salsa day and night.  I eat it right out of the bowl, with taco chips or on my favorite spoon – displayed here.  Ha!  We had our last regular season swim meet last night during a lovely thunderstorm and that ended (due to the weather) just before 9 so we missed Taco Tuesday.  I make it a point to indulge my girl’s request for tacos each week.  I know they will eat everything on their plate and that makes this Italian mama a happy girl.

This salsa is super easy to whip up and you can easily control the spice level.  It’s colorful and eye-catching.  Filled with vitamins and healthy carbs – providing lots of energy for the pool or the beach!  Totally easy make-ahead recipe too!

All hail the massaged kale salad.  Kale has become increasing popular and trendy but this is one trend that nutritionally needs to stay around.  The nutritional benefits to kale are astounding. Kale is low in calorie, high in fiber and has zero fat. Kale is high in iron. Kale is high in Vitamin K. Kale is filled with powerful antioxidants.  Kale is a great anti-inflammatory food. Kale is great for cardiovascular support.  Now I realize, despite all of those fabulous details, some people don’t particularly care for the harsher flavor of this green giant.  Trust me, lover of kale or not, this recipe will make you love it more or enlighten you on the fabulousness of this green powerhouse.

Raw Key Lime Pie. Gluten Free. Vegan.  A summery favorite that I have been dying to make but couldn’t find a suitable crust that would give this pie justice.  Since my oldest went gluten and dairy free, I’ve been on a mission to make food for her that she wouldn’t think was lackluster compared to her regular old diet.  But thankfully we’ve had incredible results with her acne, having a beautifully clear complexion now and making all our food efforts worth it.

This recipe can be made in a 8×8 pan or a springform pan for a pie like I did.  Making raw desserts is way more forgiving than regular baking so it’s perfect for the timid baker.  I whip things up, taste them and adjust as I go… I encourage you to do the same!  Again, it’s hard to have a fail on this one.  Plus the avocado, almonds, coconut provide healthy fats and nutrients versus the classic sugary counterpart.

Necessity is the mother of invention, right?  Well, I had a bread pan, not many Medjool dates and some other ingredients and I needed a gluten-free, dairy-free dessert for tomorrow night.  We’re having some dear friends over for dinner and I wanted a fun dessert/treat that even my daughter could enjoy.  The base of this recipe is fairly “basic” in the raw dessert world.  It is really easy to make and comes together in literally minutes.  I also noted options and changes that you can make to this recipe to work for you if you don’t need it to be gluten-free.

I love LOVE love salsa.  Even better… summer fruit salsa!  I don’t even need chips for this salsa and admittedly, I can down the entire bowl of it on my own.  The mix of sweet, crunchy, spicy… and mix that with balsamic vinegar ~ a slice of summery heaven.
