Dried Fava Bean Hummus.

I often buy bags of beans (thanks to Bob’s Red Mill) that look interesting or something I haven’t tried before.  Now I’ve eaten fresh fava beans but never dried so I grabbed the bag and vowed to make something this week (and not let it get buried in the back of pantry never to be seen again).  This is a crazy (yes, another) week with three swim meets, one of which we are hosting amongst construction in our house, training and our swim banquet.  My eye is twitching in stress as I type this (ha ha).  So in my free hour that I was blessed with today, I grabbed the beans and cooked them according to the package directions.  It only took about 40 minutes.  The texture is similar to a baked potato when done.  They are packed with protein, fiber and iron!  Perfect as I haven’t been eating meat in the past few months.  And this is what I did with them after draining…

Tomato Basil Vinaigrette.

This is like a fresh burst of garden flavor. I just love the flavors.  Now I know the color may be deceptive (thanks to the yellow tomatoes I used and the dark balsamic) but don’t be swayed.  The flavor is incredibly summer.  Packed with freshness that will make your tastebuds dance!  Great for topping your favorite greens, proteins or for dipping veggies into.  I keep dipping my veggies into it… so good!  Easy, clean and vegan!

Roasted Red Pepper & Garlic Hummus.

This week I took a foray into baking up pitas.  I have to admit, I knew hummus would come along shortly after.  I mean seriously, how can you eat pitas without it?!  Ha ha.  Well my family gobbled up the first batch of pitas so I’m whipping up another batch.  Click here for that recipe.  Hummus is very easy to make and tastes so much better than store-bought versions.  Plus with this, you control the olive oil (even though it’s a healthy fat I still like to limit the quantity in the food I eat) and I have a little trick on exactly how to do that.

Ingredients:

2 cans of low sodium chick peas (both drained and rinsed)
2 red bell peppers (jarred in water) – reserve the water
4 cloves of garlic (use less if you aren’t a fan)
1 teaspoon of ground cumin
1 teaspoon of chipotle chili powder (or regular chili powder if you have that on hand)
Salt
Pepper
Lemon juice – from half of a lemon
1 tablespoon of olive oil

Directions:

Into your food processor, add the chickpeas, garlic, two roasted red peppers, cumin, chili, salt, pepper and lemon juice.  Puree into well-incorporated.  While the machine is running add the tablespoon of olive oil.  If you need it creamier, most likely you will, add a tiny bit (1/2 teaspoon at a time) of the reserved liquid from the roasted red peppers.  This will not only infuse the hummus with more of the red pepper flavor, it will keep the calories down because you aren’t using more olive oil.  Puree until smooth or desired texture is achieved.  Cover and refrigerate until serving.  Serve with chopped veggies, pita slices etc.  Also works well on a sandwich instead of mayo or mustard.

Classic Hummus.

If you’ve never made hummus, you don’t know what you’re missing.  Store bought hummus pales in comparison.  This took me about 3 minutes to make.  It tastes unbelievably good and can be used as a dip, sandwich spread… whatever!  So healthy and even the kids love it!  I made it for a party that we’re having tonight to serve with some fresh veggies.  Chips, pretzels, crackers… they all work as a delivery vehicle šŸ™‚

Ingredients:

2 15 ounce cans of low sodium chickpeas (One drained and rinsed, one with liquid)
1/4 cup of toasted sesame seeds
1 tablespoon of olive oil
1/4 cup of lemon juice
1/4 cup of water
4 garlic cloves, smashed (skin removed)
1 heaping teaspoon ground cumin
1/2 teaspoon salt

Directions:

Add everything to your Vitamix or blender.  If you using a Vitamix, set to Puree and let it run.  If using a blender or food processor, blend until smooth and creamy.  Remove and store in a container with a lid.

Chocolate Chip Peanut Butter Football or Lips Dip.

My daughter was hosting a Super Bowl party so we searched the internet for a fun dessert idea that would be football themed.  We stumbled upon www.crazyforcrust.com website and knew this was perfect!  I kept the recipe right on for how they did it.  It would also be super fun encrusted with red sprinkles for lips to celebrate Valentine’s Day!

Ingredients:

1/4 cup of butter (I used butter substitute)
4 ounces of low fat cream cheese, room temperature
1 cup of creamy peanut butter
1/2 teaspoon vanilla extract
1.5 cups of powdered sugar
1/2 cup of chocolate chips

Encrusting: You can use chocolate sprinkles or mini chocolate chips (like I did).
Icing:  To replicate the laces on a football.

Directions:

In a stand mixer, cream the cream cheese and peanut butter with the paddle attachment.  Add the vanilla.  Then in 1/4 cup increments, add the powdered sugar.  Once complete, add the chocolate chips.

Turn the batter out onto your serving platter.  Shape with clean hands into a football or lips etc.  Then dump your encrusting option on top and start gently pushing it in to cover.  I only covered the top.  Serve with pretzels or graham crackers.  Refrigerate until serving.

Pineapple JalapeƱo Salsa.

This recipe is so versatile.  It can be served with tortilla chip at your next soiree or atop fish or chicken for a healthy option.  You can control the spice level with the amount of jalapeƱo you use or if you remove the inner seeds which contain all the heat.

Ingredients:
1 bell pepper (I used red), diced
1/2 pineapple, chopped into bite sized pieces
1 cup of cilantro leaves, washed and roughly chopped
1 jalapeƱo, finely chopped.  If you want  more heat – leave the seed in, if not, remove before chopping
Drizzle of good olive oil

Directions:

Combine all of the ingredients and place into a bowl.  Refrigerate for at least 2 hours to let the flavors enhance and combine to make their magic.

Spinach Cumin Hummus.

I admit, I do love a good hummus and be to honest, I much prefer making it at home to purchasing the store-bought versions.  Homemade hummus is not only so easy, it is incredibly flavorful and you control the ingredients – so it’s healthier.

My oldest daughter and I are attending a party tonight and I wanted to bring an appetizer to share with our host.  This will be perfect to share although I may need to make another batch because I keep eating this one. Perks of styling food today.

Ingredients:

1 can of low sodium chickpeas, drained
2 cups of fresh baby spinach (I used organic)
1/4 cup of tahini
3 garlic cloves
2 tablespoons of lemon juice
1 tablespoon of low sodium soy sauce
1/3 cup of water
1/4 cup of olive oil
1 teaspoon of ground cumin
1 teaspoon of salt
ground pepper
Optional garnish ideas:  Drizzle olive oil, pine nuts or walnuts on top.
Directions:

Add all of the ingredients to your food processor or Vitamix.  Pulse until you have the consistency that you wish to have.  Taste and adjust the seasonings.

Serve with crackers, veggies or pita chips.

Peanut Butter Chocolate Chip Hummus.

Hummus doesn’t always have to be savory.  My kids love it and let’s face it… it’s better than a cookie for a snack.  This creamy hummus will captivate the youngest of taste buds and have them coming back for more.  Easy recipe, unbelievable flavor.  Great for your next party!

Ingredients:

1 can of drained and rinsed garbanzo beans
1/2 cup of all natural peanut butter
1/4 cup of maple syrup, agave or honey
1 teaspoon of vanilla extract
Pinch of sea salt
1/3 cup of dark chocolate chips

Directions:

Into your food processor or Vitamix, blend the first 5 ingredients until smooth.  Then by hand stir in the chocolate chips.  Serve with graham crackers, apple slices or cinnamon and sugar tortilla chips.

Sea Salt Caramel Sauce.

Okay I don’t know about you, but one of my hand’s down weaknesses… sea salt caramel. I could eat my body weight in it if I had to.  In fact when I made this, I knew it was nuclear hot and I still put a spoon in my mouth to try it!  Ha ha!  Lunatic, yes, I know!

Ingredients:

1 cup of sugar
1/2 cup of water
6 tablespoons of butter
1/2 cup of heavy whipping cream
Sea Salt

Directions:

Okay, first step first.  Collect all of your ingredients and place them right next to your stove.

In a heavy stock pot (3 quarts or so), add your water and sugar over a medium-high flame.  More so to the higher side of the flame.  Whisk until the sugar melts and the mixture starts to boil. This takes a few minutes due to the water having to evaporate.  Once it boils, stop whisking and literally stand there and watch it.  The sugar mixture will turn amber – once a medium golden amber color, add the butter (it will bubble up so be mindful) and whisk until it melts.  Once the butter has melted, remove from the flame.  Add the cream and again, be mindful this mixture will foam up again.  Whisk until the caramel looks smooth and creamy – 30 seconds or so.  Let the sauce settle for 2 minutes.  Sprinkle with sea salt and then pour into a glass jar that you can seal with a lid once the mixture has cooled.  Avoid dipping a spoon into this molten lava mixture or you may fry your tongue!  I speak from which I know.  Ha ha.

Sweet Pumpkin Hummus.

Hummus doesn’t always have to be savory.  I whipped this little dish up last fall, of course, pumpkin inspired, and I had to make it again.  I just love it!  My kids love it too with sliced apples.  In fact, I have it all ready for them when they get home from school.  Great snack and so healthy!  You have to give this one a whirl.

Ingredients:

1 -15oz can of chickpeas, drained and washed
1 heaping cup of pumpkin puree
1/4c nut butter (peanut, almond, cashew)
2 tbl coconut oil
2 tbl maple syrup
1 tsp vanilla
1/2 tsp honey
2 tsp ground cinnamon
1 tsp of freshly grated ginger
1/8 tsp nutmeg
1/2 tsp salt

Blend it all in your food processor until hummus consistency. Serve with apples, crackers, graham crackers, gingersnaps etc.
