Are you excited about the games in Brazil?  I’m obsessed.  Growing up swimming & watching my girls swim competitively most of their lives – our obsession begins with the trials.  The passion, hard work, diligence and pursuit of something greater than yourself is so inspiring.  Plus I’ll admit, I get totally weepy with the pageantry and spirit for our country.  I know, I’m a big sap but I know I’m not alone. Our favorites to watch are swimming- without a doubt, gymnastics and all things running – go figure!  I’m hoping to be running by that time.

In the spirit of the host country, Lucy asked me to use the Brazil nut as my inspiration.  I’ll be honest, I never had the nut ever before as I’m pretty basic with my nut selection.  I did my research and was blown away by the health benefits.  High levels of  selenium. Just one or two of these nuts per day is recommended.  Other minerals are copper, magnesium, manganese, potassium, calcium, iron, phosphorus, and zinc. Copper helps prevent anemia and bone weakness (osteoporosis).  This nut is also packed with thiamin and vitamin E.  Hello nutritionally powerful nut.

Nut butters are a wonderful source of protein and necessary fats in your diet.  My favorite way to incorporate nut butter is in my smoothies, overnight oats, on rice cakes and as a dip for fruit.  Of course, baking and cooking are also fun ways to incorporate this delectable food.  Click here for the full recipe.

Peanut Butter Oatmeal Cookies. V. GF.

I’m so sorry for being MIA lately.  As you know 3.5 weeks ago I had my meniscus repaired and the recovery has limited me from standing around in my kitchen to work.  Yesterday, I shed my crutches and walked.  It felt great.  I’m not supposed to be off the crutches until Wednesday but I’m good.  It feels so great to be independent again!  So to celebrate… I wanted to make some cookies for my oldest to take to work (she’s a lifeguard) to share & that she can eat (she’s dairy and gf).  I wanted to also bulk these up a bit and make them really hearty and not just a sugary cookie.  The oats provide bulk for her long days along the pool deck along with fueling her during swim practice.  Ahhhh the long days of summer are here.  I also made some of the cookies as a thumbprint filling with mini vegan chocolate chips.  Just some ideas of how you can customize.

Happy May! Wow I officially feel like summer is here… well at least on the calendar despite our cool temps here in PA.

I know many cities had some snow this past weekend.  We had a lot of rain and chilly temps.  Our grass is a glorious green and all of our flowers are blooming.  I just have been hesitant to do my planters due to the temperature drops.  Hoping by this weekend we get into a nicer weather pattern soon.

So cookies.  Who doesn’t love them?  My kids always feel like they’re a special treat, and they are however these cookies are sugar free and healthy (gasp). They are perfect breakfast cookies or post workout. Grab and go.  So moist and delicious and no need for sugar when using super ripe bananas.  You can also add some walnuts for extra protein or some dark chocolate for a sweeter kick.  I hope you whip these up and please let me know what you think πŸ™‚  I’ve been eating these all week pre-workout running out the door, which I love.  Fast food that’s healthy… simple solutions for a busy world.

Every single Friday I breathe a sigh of relief lately.  I survived!  Training.  College tours. Dogs.  Teenage daughters.  Politics. Life in general.  I’ll admit lately it’s been life is just hard.  I managed two nights that were in excess of 10 hours of sleep.  My body is showing the fatigue lately and I’m embracing it.

I was up for a nice little easy treat that was healthy for for my girls.  My husband, as I’ve shared, is allergic to chocolate – still cannot imagine that curse.  But these little cookie bars I sliced into bite-sized pieces.  They are packed with chickpeas and almond butter so YES on the protein!!  These are a totally tricky food that you can smile about as your kids gobble them down.  Perfect for after school snacking on in their lunches for school.  Plus they have a great soft inner texture like a gooey cookie.   My daughter even warmed them and put pieces in her nice cream – points for creativity!

Happy Leap Day – let’s celebrate an extra day with a cookie!  I’m so happy to finally be working back in my kitchen – it’s seriously been over 3 weeks that I’ve been renovating/updating/face-lifting my master bathroom. The last piece of the puzzle gets delivered today – my shower door and fingers are crossed that it fits!  But I digress, I’m locking myself in my kitchen today and making several recipes while I await the delivery call.

I always make muffins as a go-to snack for my family but I’ve been craving salt lately.  Why?  Well I’m a bit of a salty runner and that seriously drives my craving.  I know you typically see salted caramel but I wanted to do a salted pb cookie.  Peanuts… a touch of salt… sounds good to me!  Again, I used a very small amount not to offend my kids by the addition.

These cookies come together really quickly and I will warn you that the dough is quite heavenly if you accidentally sample it πŸ˜‰  Totally safe to eat as there are no eggs in it or risk of food contamination. Okay onto the recipe and my next recipe is awaiting my attention.

Partnering with runlikekale.com (one of my favorite people ever) to highlight 15 vegan pantry items that I can’t live without.  I get this question all the time and we thought it was fitting to kick off 2016 with a kitchen pantry makeover for a healthier you.  I hope you enjoy a few items here but to read the entire list click here.

So without further adieu, let’s gets this rolling.

1. Bob’s Redmill gluten free rolled oats.  I use these for classic oatmeal, overnight oats to grinding down to baking flour.

3.  Black rice.  A good rule of thumb is that if a food has intense color (think red bell pepper, red cabbage, or yams) will have more vitamins and minerals.  Those pigments pack a healthy punch!

4.  Quinoa.  Packed with protein, this pasta or rice substitute can be used for breakfast right on to lunch or dinner.  8 grams of protein per cup of cooked quinoa.  It’s also great in soup!

I’ll spare you all the miles I’ve run over the holidays – running equals sanity in my mind so suffice it to say I’ve had the highest running mileage weeks/month ever —— But here is my year-end recap.  Considering last year I finished at 1201 – I was quite happy with my progress.

Also I’m so excited to share that I will be a Pro Compression Ambassador for year 2!  Wasn’t expecting that and so SO happy!!!  Best wishes for 2016!  Promise to be back in full-swing next week once everyone heads back into work/school and I can get into the kitchen.  Love and happiness.

Raw Gingerbread Bites. Vegan. GF.

I wanted to share this recipe that I love to make for Christmas dessert.  I’ll be honest – I prefer to serve a variety of small treats after Christmas brunch/dinner instead of a lot of heavier pies and cakes.  At this point in the month, I feel like small bites are much more appreciated.  Gingerbread is a must, of course, and perfect for my husband who is allergic to chocolate.  Gingerbread is quintessentially Christmas.   Naturally sweetened, vegan and gluten free.  Plus, protein-packed.

These are really easy to make and just need about 20 minutes to set up in the fridge or freezer.  I also store in the fridge to keep them firm.  My other tip is to use really fresh Medjool dates.

Happy almost Friday!!!  While roasting up some butternut squash for soup tonight I thought I would make these oatmeal almond bars to stave off the chocolatey cravings that have been happening in my kitchen this week.  My oldest has started swimming and my youngest is ending her hockey season.  But food consumption is at a peak for sure. Do you notice this in your house?  I feel like I’ve been on a cycle of muffin/cookie making big time the past two weeks.  Maybe colder temps are driving up the appetites.

This bar recipe yields 8 rectangular pieces or 16 bite-sized cubes.  I drizzled some with melted vegan chocolate and some without as my husband is allergic.  Think of these as a bar/muffin combination.  Soft texture with filling ingredients that makes a great snack.  Carbs and protein to keep you fueled.

Vega Protein Chocolate Chip Cookies. Vegan GF

I realize I’m a blogger… but I’m at a lack of words for these cookies.  Rest assured… I’ll find something to say.   Swimming has started and I always feel badly that my daughter (who is gf/df) doesn’t have enough snacks for after school/before swim or after as a treat.  I’ve been working on gluten free chocolate chip cookies and they’re hard.  Gluten free baking is hard but when you find that sweet spot… BIG score!

I’m an overachiever if you didn’t realize that already.  I wanted to add protein to this sweet treat that would make them even better post-workout.  When I met with my Vega favorites at Expo East – they gave me a new Vega Essentials protein powder  that dissolves perfectly.  I knew it would be incredible for baking… and I was right.  The protein added a lovely punch of vanilla and was perfect blended into the dough.  I even tasted the raw dough and it was so good.  You need to make these… go!  Seriously πŸ™‚

Purely Elizabeth is my favorite granola ever.  Seriously, I eat it daily.  My favorite is to top my green smoothie with it.  It’s so good.  I also love to carb load with it prior to long runs paired up with some fresh fruit and nut milk.  But be warned, it’s addictive.  Seriously.  So when Purely Elizabeth sent me products to work with- I knew I wanted to create a fun breakfast cookie with the granola that would be awesome for back-to-school.  School starts tomorrow for my youngest so I’m ready.  Just in the nick of time.
