Vegan and GF chocolate chip cookies.

Happy Martin Luther King Day and Monday… yes, we meet again.  Everyone but my husband is off today so it was a bit of a lazier morning for everyone, well except that I got up with my husband at 5:30.  I was planning on taking a rest day after my run yesterday – more on that later.  Plus I had my orthopedist appointment today to check out the progress of my finger.

I’ve been working, tirelessly, on the perfect vegan and chocolate chip cookie.  You know that kind that isn’t gluten free and vegan that you once loved?  Yeah, that kind.  And let’s face it… Monday’s can always use a good chocolate chip cookie break built-in.  Ha ha. So finally, yesterday, I gave it another attempt and success was achieved.  I was quite pleased.  I normally don’t eat cookies but I had one… contemplated 4 more but walked away.  Yet as I type this… they are calling my name again.  Actually my mouth is watering just thinking about it.

Okay so in the spirit of giving…. here you go!  I hope you love these as much as we do!

Happy Hump Day people!  How’s the week going for you?  Pretty eventful here.  Booked a big surprise vacation.  Mid term exams happening for my oldest. Swim meet last night.  Anxiety and stress eating are in full swing for her.  The weather is slightly, slightly… warming up.  It gives me hope for spring, which cannot come soon enough.

I created this recipe for my oldest daughter so that she can snack and get good nutrition for optimum function for both her tests and for swimming.  Healthy fats and proteins are necessary for proper brain function.   I’m always so distraught when people avoid healthy oils and fats…. they are needed by the body.  Healthy fats serve three main functions: provide energy.  Some types of vitamins rely on fat for absorption and storage. Vitamins A, D, E and K, called fat-soluble vitamins, cannot function without adequate daily fat intake. These vitamins are essential parts of your daily diet. Fat cells, stored in adipose tissue, insulate your body and help sustain a normal core body temperature.  So in moderation, healthy fats are imperative.

Vegan Gingerbread Protein Smoothie.

Vegan Gingerbread Protein Smoothie.

Vegan Gingerbread Protein Smoothie.

I’ve been so inspired by the flavors of the season this year.  I came up with this recipe on a long run I did last weekend.  I gave it a few attempts and settled in on this recipe to share – heavenly.  It is so reminiscent of a gingerbread cookie that it will have children and adults clambering.  Not all smoothies require kale or spinach, although it kills me not to add it.  I tested out VegaOne’s new protein powder that will be released in January and it was heavenly in this beverage.  This is perfect to curb a sweet attack.  Post workout refueling.  Dessert.  Breakfast… whatever you have in mind.  Plus it’s vegan and adds a nice dose of iron through the black strap molasses, which is a great benefit for a vegan diet.  If you aren’t vegan – use whatever dairy you wish.  Almond or cashew milk work great for vegans.  I hope you give this recipe a try… I also topped it with some crushed gingersnaps which made it even more fun for kids (or adults that are kids at heart).

Peppermint Black Bean Protein Brownies. Vegan and Gluten Free.

I feel like my kitchen switches from pumpkin over to peppermint in a matter of days.  The tree is up.  Cards are mailed.  Presents purchased and now it’s time to start baking pepperminty good treats. Actually, healthy vegan and gluten free treats that are protein-packed for recovering muscles.  Swimming is underway and my voracious daughter craves protein-packed snacks before and after practices plus after running and cycling we all need protein.  These are great for on-the-go eating.  Plus, they are healthy and no one will know the better.

Now I know there are like a million and one black bean brownie recipes out there but these are just a decadent little bites packed with mint flavor.  Go big or go home and I went big with the flavor.  Plus I just received some new VegaOne protein powder that I wanted to give a whirl in a not-so-traditional smoothie recipe and it worked perfectly!!!  Ohhhh I may need to step away from the brownies or go for another run.  Ha!

Rustic Oatmeal Cookies. Vegan and Gluten Free.

Rustic Oatmeal Cookies. Vegan and Gluten Free.

Rustic Oatmeal Cookies. Vegan and Gluten Free.

I recently purchased Cara Reed’s Decadent Gluten Free Vegan Baking Cookbook.  I’ve tried several recipes and gave her Old Fashioned Oatmeal Cranberry Cookies a try but with a few modifications.  Also, her recipe didn’t yield a cookie “dough” for me more of a granola type texture so I adapted the added fat to make it work better.  This is one gluten free recipe that the dough tastes as good as the finished product.  The dough is safe to eat because there are no raw eggs in this batter.  These would be perfect for the upcoming holiday season. By adding some dried, tart cherries or dried cranberries along with some pistachios would be a fun red/green cookie.

I know, I know… it’s not Thanksgiving yet and I’m posting a picture of Santa.  I hate that but my reasoning is simple – I’m thinking these cookies would be perfect for the holidays. They are cinnamony (yes, I made up that word) and perfect. Crunchy on the outside and chewy in the center.  Gluten and nut free and vegan.  Yummm.

A little background on how these cookies came to be.  I had an eye appointment on Tuesday and stopped at my favorite, larger grocery store, up by my doc’s office that I rarely get to go to.  I stumbled upon this magnificent beauty and started thinking about what wonderful creation could emerge from the use of this find.  These cookies are the perfect culmination of ingredients.  I don’t normally eat cookies but did tap into the stash quite a few times this week.  Ooooopps!

Fingerprint cookies. Vegan and gluten free | Knead to Cook.

A few weeks ago I was sent a box of healthy goodies from Norm’s Farm and I knew exactly what treat I wanted to make with the jam.  Fingerprint cookies are a favorite in my family.  I’m all over berries and their healing powers.  Food is powerful – trust me!  So when the good folks at North Farms reached out to gauge my interest in elderberry products… I was all over it!!

Elderberries contain natural flavonoids.  Help reduce swelling, fight against inflammation and help boost your immune system.  If you suffer from an anti-inflammatory disorder like me – this is fantastic and something you need to pay attention to.  Elderberries help ease flu-like symptoms, headaches, sore throats, fatigue and body aches.  Some studies have also found that it help with bacterial sinus infections and bronchitis as well.

Norm’s Farms offers a wide variety of products (even Wellness syrups) that I’ve enjoyed in my smoothies as well.

Happy first day of fall!  So happy!  I made these bars last week for my kid’s weekly snack.  I always make something healthier to have on hand for after-school/practice, grab and go treat.  These are always a favorite.  I’ve made them vegan and gluten free so my oldest can enjoy them too.  Packed with great nutrients and vitamins, this treat is secretly healthier than a regular cookie bar and the coconut palm sugar gives it a deeper, rich flavor that they just love.  Great breakfast treat for the bus too!  The original recipe was given to me by an old friend Callae but I’ve morphed it to accommodate my daughter’s dietary restrictions.

Triple Almond Cookies. Vegan. Gluten Free | Knead to Cook

Today I’m Baking for a Cure.  This month is Child Cancer Awareness Month.  I happily joined OXO and their annual Cookies for Kids Cancer program.  Having spent many days at Children’s Hospital of Philadelphia – I could only imagine how emotional and tearful it is for families living that horrible reality.

This program through OXO requires no donations on your part.  Every product marked with this green label that is purchased – a donation will be made on your behalf.  For every item marked that is sold, OXO will donate 25 cents as apart of their of $100,000 pledge to Cookies for Kids’ Cancer.  This runs through September. The goal is to help raise funds for cancer research for pediatrics.#OXOGOODCOOKIES

I love their measuring cups, spoons and spatulas that help me scoop all of my flax eggs out of my bowls.

Here are a few items with the green logo to look for.

These cookies, if you’re an almond fan, will totally knock your socks off.  They are a cross between a traditional cookie and a biscotti and they are the BEST in my humble opinion.

Pumpkin almond butter cookie bars.

September is here!  My favorite month.  Of course our weather has been perfection and now that September is here – the heatwave has arrived!  So funny.  Everyone is back to school and work today so I’m back to a routine.  Went to the gym early and got a 5 mile progressive run in and then lifted.  Went to the farmer’s market to load up and came home to cook and bake for the week.

Now that September is here that means hopefully cooler days,  chilly nights, sweaters and jeans and the quintessential flavor ~ pumpkin everything!  So freaking excited!  Oh and our wedding anniversary and trip is this month.
