Hello there my friends!  The weekend is in sight & I’m so ready for it to arrive.  It happens to be our last weekend, sadly, with our oldest before she heads off to college.  She moves in early because she’s part of a early job program and then 5 days later all of the students arrive for their week long orientation.  As excited as I am… the sadness is creeping in a bit.

So what better way to nurse some sadness than with cookies 😉  Ha.  I’ve been making this recipe for a good long time, originally found here, but with a modification.  They are vegan, gluten free and paleo.  Simply one of the best cookies you will ever eat, simple ingredients and they seem to be virtually impossible to screw up.  Winner!

These cookies freeze nicely and I’m stashing this recipe aside for a future care package or two this fall.  Are you a fan of Italian almond cookies?  If so, brace yourself for a healthier version.

  Raw chocolate chip cookie bites. Vegan. Gluten free.

My youngest daughter had her wisdom teeth removed and have been eating all the cold food she can handle.  I knew these would be a fun treat for her versus all the smoothies, ice cream and kombucha.  Turned out that everyone loved this sweet little treat on a very warm day.  I’m also thinking how good this will be stirred into homemade vegan ice cream!!  These were sweet, salty and yeah—the chocolate, a winner every single time.  These are the quintessential summer treat.

I kept these little bites looking like I was going to bake them.  You can totally roll them out into ball shapes if you prefer or flatten as a raw cookie.  Sprinkles would also be super cute subtracting out the chocolate (gasp!) for more a sugar cookie twist.

Sprinkle Protein Cookies. Vegan. GF.

Sprinkle protein cookies.

I was looking for a sweet little cookie present for a friend’s daughter who broke very recently.  I was flipping through Arman Lieu’s cookbook and I found this recipe.  It was perfect.  It made about 10 mini cookies that I decorated with fun heart sprinkles and they’re perfect.  You an easily make this recipe into 2 larger cookies or several minis.  Fun but so healthy and packed with protein!  34 grams of protein in this serving (serves 1), 20 grams of fat and 11 grams of fiber.  I also wanted to test out the Nuzest protein I received.  The vanilla worked perfectly!

Chocolate chip cookie bars.  Vegan. Gluten free.

I made these bars for my family & for a friend today to spread a bit of joy through food.  I often do this as a kind and unexpected act.  It’s funny how something so small can impact someone so greatly.  These are a bit on the decadent side but I cut these into small cubes and a little goes a long way.  Plus, removing all treats from your diet isn’t practical.  A treat, especially those protein-packed like these, are a wonderful little departure when necessary from clean eating.

I made this entire recipe in my stand mixer with minimal cleanup.  These bars freeze and package to ship nicely.  I’ve shipped these to friends/clients many times and would make a great care package treat for a loved on.  I’m already thinking of care package ideas for when my daughter is off to college this fall.

This week’s best of series focuses on all things vegan snacking.

So when I say vegan snacking, I wanted to share the best of great snack ideas not genetically modified *clears throat* crap that coincidentally is vegan like Oreos.  I wanted real, vegan and gluten free snacking.  I wanted to cover chips to ice cream and everything in between so everyone from sweet to salty palates are covered.

As clean as your eating is, it’s important to build in treats or desserts into your diet. Balance is key.  I shared favorites that are all gluten free and vegan.  Easily found at Whole Foods or your favorite markets (or online).  This is just a list of my top favorites and honestly the list could go on & on if you let me.

Almond cutout cookies that are vegan, gluten free and oh so delicious.  Looking for some simple Valentine’s Day treat to share with your Galentine? Valentine?  Or some special people in your life?  These are perfect!  You can get fancy and cut the dough out into BIG or little hearts, I didn’t use a cookie cutter just my knife, or roll into traditional rounds.  Top with melted chocolate or icing and sprinkles or leave plain. These cookies are my new favorite!

This recipe is inspired by Marco Borges.  Refined sugar-free.  Really simple to make and totally kid-friendly. Would be fun with some red or pink (even a few drops of beet juice for natural coloring) to make pink!  These cookies will replace the old butter cookie recipe ANNNNND won’t blow your gym efforts.  1 cookie is around 60-70 calories and has 2 grams of protein!

Chocolate chunk cookies hot from the oven. Vegan & gluten free.

This recipe was adapted from Oh She Glow‘s one bowl chocolate chunk cookies.  I revamped this recipe to prep all in a food processor and with less ingredients/sugars.  I’ve been making these cookies for what seems to be FORever!  My girls drool over these when they’re in the oven & safely assume that they don’t last very long on the counter.  I also adapted these sans chocolate chunk so that my husband, who is allergic to chocolate, can enjoy as well.  Both versions work perfectly.

This week I’ll be sharing a recipe a day for your super bowl party this weekend.  All will be vegan and gluten free but oh-so-delectable that none of your guests will know.  I’m all about healthy options that don’t look like celery sticks and throw everyone into a tizzy.  Super Bowl parties are supposed to be filled with stick to your ribs kinda food… my food line-up this week promises to do just that!

Cutout sugar cookies that are vegan & gluten free… ummm yes, please!  I found this recipe after a quick google search over at Unconventional Baker.  I have no time this week to play around with sugar cookie experimentation and I needed a full-proof recipe that would save me time & yield the perfect cookie.  I did make some minor adjustments to the original recipe -please see below.

Okay so everyone is in a mad dash this week.  Finish shopping.  Wrapping.  Shipping.  Whatever.  I’m done with all of that but need to get cooking/baking done.  You see every year I make (crappy sugar) cut out cookies for our annual ugly Santa cookie contest.  Everyone decorates them… we choose the winner, normally my husband, and the winning cookies are left out for Santa on Christmas Eve.  The rest get pitched.  This year, avoiding waste and opting to use the finished cookies for dessert on Christmas – I knew I needed a good cookie that was both vegan and gluten free.  This recipe was super easy & required no chilling.  Baked up perfectly and they’re in my freezer till Saturday when they will be unveiled & decorated for our contest.  Okay… let’s get on to the recipe without further delay…

Ahhh ginger molasses cookies may be my favorite.  Yes, I’m rushing the holidays.  Sorry about that but when you live a life as a blogger, I’ve been working on food jobs for Christmas for the past 3 months.  I honestly feel late in posting this recipe.  This cookie is tender yet crunchy.  It’s not overly sweet but packed with ginger & molasses which screams holiday season.  These freeze perfectly & make a wonderful cookie to share with friends & family.  Totally vegan and gluten free so no worries about food allergies.  Plus, I’ll be honest – these make your house smell like coming home for the holidays.

Oh how I love Angela Liddon. She’s a pioneer of vegan eating/blogging and I’ve followed her forever.  Her first cookbook was my road map when I started my vegan journey.  Her second cookbook has dropped & I cannot express how much I’ve been enjoying it.  I highly recommend it.  This was my first recipe I’ve had an opportunity to make & everyone who has tested them gives them 5 stars!  Winner. I did tweak a bit to lower the sugar but otherwise, just perfection.  A great staple to have for weekly snacking/lunches or dessert.
