Iced Coffee Protein Smoothie. Vegan. Gluten free.

Iced Coffee Protein Smoothie. Vegan. Gluten free.

So was this Monday the day your kids returned to school?  Emotionally charged & draining all at the same time? Not ready for the weekend to conclude? Hard workout?  Whatever it is… this smoothie has your back.  I was up before my 4:30 alarm went off.  Reminiscing about my oldest daughter… you see she starts her senior year today.  I think the only time I was this emotional at the start of school has been when she started kindergarten, which I swear was just yesterday.  But I digress… this beverage is going out to all you rockstar parents, grandparents or caregivers that love your coffee (I wish this was me).  BUT this coffee packs a punch of healthy protein & who doesn’t need that?! I made this for my dad, who is a big gym buff & coffee drinker.  Perfect cold beverage to restore his fatigued muscles & cool him down on this very hot, summery day.  I hope you love this as much as he does!

I pretty much have one to two protein smoothies per day.  With the intensity of my training, running in excess of 80 miles most weeks plus strength workouts — this is my easy go-to, quick prep meal.  Plus packing in 4 or more cups of greens, is a great boost for my system post hard training.  This smoothie used a new protein powder I was testing, Amazing Grass Protein Superfood Chocolate Peanut Butter with some of my added spices for an extra boost of healing properties. #FeelAmazingEveryday

Amazing Grass Protein SuperFood contains a unique blend of USDA Organic pea, hemp, chia and quinoa, delivering 20g of complete plant-based protein per serving plus 7 alkalizing organic greens and two-full servings of wholesome fruits and vegetables. Each flavor is also grain-free, paleo friendly, and can be enjoyed alone with water, added to a smoothie or almond, cashew or coconut milk. The line’s unique pea protein is the only available source that is 100 percent grown, harvested and processed in the USA, providing one of the smoothest, best tasting plant-based proteins on the market.

To this super protein I add turmeric, which is a natural anti-inflammatory (hello, please help my leg muscles recover) and has been shown to help with Rheumatoid Arthritis (which I also suffer from) with joint pain and swelling.  Also, adding chia packs an Omega, calcium, protein and fiber punch to your diet.  And some ground cinnamon to help regulate sugar in the body. This smoothie is quick to make and has so many health benefits for your body.

Vega Sport Vanilla Granola Hemp Smoothie.

Vega Sport Vanilla Granola Hemp Smoothie.

I’m so sorry that I didn’t get to share this last week when it was released.  Life has thrown me a curveball that derailed me.  So my sincerest apologies but here it goes PLUS a new smoothie recipe I’ve been obsessing over lately.

My absolute favorite vegan pre-workout, workout and post workout recovery fuel is Vega.  I’m not getting paid for this – it is just my honest review and testimonial.  I’m not fond of chemicals and weird ingredients to fuel my body.  Plus I have a sensitive stomach, as I’ve mentioned before.  My stomach revolts especially during training.  Vega works like a charm.  In fact, I just trained and ran a marathon using all of their products and I loved them.  They just came out with a totally free resource for new to experienced runners.  The Vega Sport site will be jam-packed with free resources including 8-weeks of training guides, meal plans, recipes, playlists, and nutritional education for preparing for your first or 30th 10K race, Half or Full-Marathon.  From playlists, training programs, to fueling – it has EVERYTHING!  Seriously – if you’re looking to training, work on speed, finding your comfortable pace to tackling race day… the information is all here.  If I didn’t love Vega – I love them more now!  All this information in one place… one resource created by experts.  Love it!

So let me get on to my recipe and then share a little bit more about how to sign up for this free running resource.

Watermelon Cucumber Juice.

Watermelon Juice.

Watermelon Juice.

It inevitably happens… a bad watermelon will make it to your kitchen.  I know I’m personally disheartened when it happens.  Typically, when I’m giving my watermelon a quick fruit wash in my sink before I cut it – I mentally say a little prayer hoping its good.  I hate wasting money on food that isn’t good – mealy or just over-ripened.

However, necessity creates invention… is that how it goes?  Well needless to say, last summer I had a winning streak of exceptional watermelons until that one really gross, cracked on the inside, sad watermelon was staring up at me… I just spent $6 or $7 on this and lugged it from the farmer’s market to my truck and then to my kitchen.  #fail But I was bounded and determined.  I chopped it up and added it to my vitamix and wasteful was turned into successful.  My kids love this juice!  And if desired, you can always add a shot of vodka to a glass for an adult beverage.  OR freeze them in popsicle molds (thanks Cecilia).

Watermelon and cucumbers are from the same plant family. Cucumbers contain unique polyphenols and other compounds that may help reduce your risk of chronic diseases. Cucumbers may help to “cool” the inflammatory response in your body which makes this the perfect post workout beverage.  Contain multiple B vitamins, including vitamin B1, vitamin B5, and vitamin B7 (biotin). Supportive of digestive health as well.  Watermelon is a refreshing fruit is soaked with nutrients. Each bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids.  Combining the two – is a match made in juicy heaven.

Cinnamon Toast Smoothie. Vegan. Gluten Free.

Cinnamon Toast Smoothie. Vegan. Gluten Free.

I love smoothies and they are by far my favorite go-to post workout fuel and breakfast. I workout 6 days a week and always look forward to loading up on a protein packed smoothie to help my muscles rebuild and recover from the tearing down that happens during my run/weightlifting/cycling.  Smoothies are easy and so customizable.  I thought it would be fun to do a throwback to a childhood favorite.  This recipe is easy and even your kids will be scrambling for it.  I promise.  This recipe is also perfect during that mid-afternoon slump when you creep into that “hangry” mode hours after lunch but not quite dinnertime yet.  Sound familiar?  This will calm the urges and give you the nutrition you need while staving off the munchies.

I used Silk soy milk in this recipe.  Plant-based. Lactose-free, vegan, cholesterol-free and contains no high-fructose corn syrup. NO artificial colors, flavors or preservatives. Silk Soy Milk is verified by the Non-GMO Project and is free of gluten, casein, peanuts, egg and MSG. 8 grams of plant based protein per serving.  That’s more protein than any other dairy-free milk.

This conversation is sponsored by Silk. The opinions and text are all mine.

Oatmeal Date Protein Smoothie.

Oatmeal Date Protein Smoothie.

Just home from a short and easy 4 miler run at the gym.  This run helped to calm some nerves that have been stirring this week.  Taper craziness is a real thing!

I wanted to share this recipe early with you all before I head out for a day of meetings.  Last night by dinnertime,  I wasn’t really hungry.  I had been grazing pretty much most of my day.  I wanted carbs without a lot of fiber.  Building up glycogen stores. Repairing muscles.  I wanted a small smoothie that provided a protein punch and this hit the mark.  Reminded me of a cinnamon oatmeal cookie.  Totally kid-approved as well. Would make a great kid’s on-the-go breakfast, snack or even dessert.

Shamrock Shake. Vegan.

Shamrock Shake. Vegan by Knead to Cook.

“It’s that time of year again Mom!” my daughter exclaimed yesterday afternoon.  Snow time?  Winter time? Exhaustion time?  What time may I ask?  Shamrock Shake time.  Ah ha!  Well, yes you are right with St. Patty’s day next month already. Well my response to my dairy and gluten free daughter:  “Get to making your own version.”  That’s what she did and it turned out really yummy!

Kudos Sydney on your creation.  Tastes way better.  Let’s face it.. it isn’t nuclear green thanks to food coloring but to healthy spinach you can’t taste.  Plus vegan.  And not totally packed with gross ingredients, sorry McDonald’s but it’s true.

Vegan Gingerbread Protein Smoothie.

Vegan Gingerbread Protein Smoothie.

I’ve been so inspired by the flavors of the season this year.  I came up with this recipe on a long run I did last weekend.  I gave it a few attempts and settled in on this recipe to share – heavenly.  It is so reminiscent of a gingerbread cookie that it will have children and adults clambering.  Not all smoothies require kale or spinach, although it kills me not to add it.  I tested out VegaOne’s new protein powder that will be released in January and it was heavenly in this beverage.  This is perfect to curb a sweet attack.  Post workout refueling.  Dessert.  Breakfast… whatever you have in mind.  Plus it’s vegan and adds a nice dose of iron through the black strap molasses, which is a great benefit for a vegan diet.  If you aren’t vegan – use whatever dairy you wish.  Almond or cashew milk work great for vegans.  I hope you give this recipe a try… I also topped it with some crushed gingersnaps which made it even more fun for kids (or adults that are kids at heart).

Dinosaur Kale Smoothie. My daily vegan breakfast.

Dinosaur kale smoothie.

Dinosaur kale smoothie | Knead to Cook.

This is my smoothie I have post run or workout 6 days a week. One morning, typically Saturday my husband and I go out for a date breakfast so that’s the odd day I don’t partake.  This smoothie has morphed over the weeks/months and I love it.  It’s packed with protein, vitamins, minerals, calcium and I totally get lots of greens first thing in the morning.  I’m totally a creature of habit and never sour of this tall green beauty. I love dinosaur kale aka Italian kale for its deep flavor.  You can use regular curly kale and more or less of it depending on your taste.  Seriously love this one!

Chocolate Mint Matcha Smoothie. Vegan.

August 21, 2014 by Knead to Cook Filed Under: Beverages, Brunch, Desserts, Gluten Free, Smoothies, Vegan, Vegetarian, Vitamix, Wheat Free 6 Comments

Chocolate Mint Matcha Smoothie.

Chocolate Mint Matcha Smoothie. by Knead to Cook.

Chocolate Mint Matcha Smoothie.   Totally vegan.  This smoothie was inspired by a Thrive recipe.  I’ll admit, Matcha is growing on me as I wasn’t a big fan when I first tasted it.  It really is such a powerhouse that I kept incorporating it into my smoothies and now I tolerate it.  It’s different from green tea because the leaves are crushed into powder form and you consume them (hello kryptonite) v. tea leaves which are just steeped.

Amongst its many benefits, matcha…
Is packed with antioxidants including the powerful EGCg.
Boosts metabolism and burns calories.
Detoxifies effectively and naturally.
Calms and relaxes.
Enhances mood and aids in concentration.
Provides vitamin C, selenium, chromium, zinc and magnesium.
Fights against viruses and bacteria.
Is rich in fiber.
Lowers cholesterol and blood sugar.
Does not raise insulin levels.

Okay with that being said, adding other flavors to it makes it, in my opinion, way more tasty.  I love this smoothie and I have it in my post workout rotation of smoothie breakfast choices.  Plus it’s chocolatey which makes the start of any day awesome!  My kids also love it so I’ll go out on a limb and say that it’s kid-approved.  Now where to find Green Tea Matcha Powder?  Some tea shops will have it.  I found it at the grocery store in the specialty tea aisle, online but be aware, it is pricey.  Thankfully you don’t use that much in recipes because it is so powerful.  Just wanted to share.
