Wednesday turned out to be a bust.  I was unsure if I was going to run and we had thunderstorms from 1-7 am and with my sweet dog a bit uneasy during this 6 hour period laying on top of me… I decided to bag the day for working out and take a rest day.  Plus Thursday and Friday were going to have cooler temperatures  –HELLO lovely weather let’s do some running!  So I worked in the kitchen and literally threw these bars together and prayed that they turned out.  They did – big time!  I ate 2.5 of them.  I never do that but they are so dang good!  Then my husband came home and proceeded to text me (I was driving kids around) letting me know that he ate 2 bars too and couldn’t stop.   The topping is pretty versatile – I’ll make a list of some toppings that would work nicely.  These bars are kid/teen and adult approved.  Gluten and dairy free.  Refined sugar free.  Oh so addictive.  Next time I whip these up I’m going for vegan chocolate, cacao nibs and nuts!

I bought some lovely candy cane beets at the farmer’s market over the 4th of July weekend.  I thought I would roast them.  Then as the rainy weekend progressed, I had the opportunity to pick up a friend’s farm co-op for her while she was on vacation. I thought it would be nice to make her some goodies with her veggies – as she was coming home from her vacation the next day.  Her crops had some really small red beets.  My mind started racing and hummus came to mind.  The candy cane and classic red beets made such a fun colored hummus.  I divided up it up and packaged some up for her and kept some for my family.  We use it on sandwiches, on salads and of course to dip chips or veggies in.  It was so good and well-received by my vacationing friends.

I’ve been so excited to share this recipe with you all since I posted a teaser on Instagram last week.  I created this recipe for some customers and they turned out perfectly! I also shared with some friends who aren’t vegan/clean eating and they admitted to me that they loved them!  This makes me very happy. People normally turn their noses up when I mention raw, vegan – blah blah blah but the taste… I promise – it’s fabulous.  These are super easy.  Have a little caffeine kick.  They are just perfection.  You can maybe even skip your morning java.  Well… I said maybe.

I think of gazpacho as just an enormous bowl of my favorite salsa sans the chips.  Am I alone?  I love fresh salsa.  Despite not having fresh tomatoes from my garden YET, I did have some lovely cherry tomatoes I used to make this recipe.  I added fresh ingredients and herbs. I’ll admit that I can down one very large bowl of this easily.  Packed with tons of vitamins and nutrients… plus absolutely no guilt – this makes the perfect healthy, light lunch or dinner.  I do make this a bit chunkier but you certainly can puree it longer for a more blended texture.  Think of the easiest Meatless Monday dish ever!  All of my recipes are merely a guideline… do what you love and adapt as necessary.

I picked up two jars of hearts of palm this past weekend at Costco, forgetting my love for it and knew I wanted to make a fresh summer salad with it.  Hearts of palm is a great source of protein – YES, protein!  4 grams per serving.  Fiber – 2 grams per serving along with calcium, potassium, fiber, vitamin C and iron.  Extremely low in calories.  So you thought it was hard to find protein in plants?  Not at all.  If you’ve never had hearts of palm it comes in long tubular sticks (think of a thick carrot but softer).  Reminds me of artichokes in flavor minus the brine.  Comes from a certain type of palm tree.  Economical and so easy to use.  You can eat it raw or sauté it.  This recipe I used it raw.

Memorial weekend starts tomorrow!  What?!  Okay I didn’t see it coming.  Seriously I think I live in a bubble.  It’s a problem.  I better on get on inviting some friends over and grilling up some food, fire pit prep for s’mores – fun summer activities may commence.  With that… I always love to make dips and spreads that can be made ahead of time and be ready to go.  This recipe is perfect for sandwich spread, dip for veggies/crackers or pitas or I add hummus to may salads in lieu of dressing.

If you haven’t been acquainted with hemp seeds – you need to get them.  They are a natural blend of easily digested proteins, essential fats (Omegas 3 & 6), Gamma Linolenic Acid (GLA), antioxidants, amino acids, fiber, iron, zinc, carotene, phospholipids, phytosterols, vitamin B1, vitamin B2, vitamin B6, vitamin D, vitamin E, chlorophyll, calcium, magnesium, sulfur, copper, potassium, phosphorus, and enzymes.

Harissa is a Tunisian hot chili pepper paste the main ingredients of which are roasted red peppers, serrano peppers and other hot chili peppers and spices and herbs such as garlic paste, coriander seed, or caraway as well as some vegetable or olive oil for preservation.  I had a jar that I got at Target – mild in spice level and I thought it would be fun to add it to the hummus for a different flavor than the traditional.

Chickpeas are an an excellent vegan and gluten-free source of protein and fiber, chickpeas also contain high levels of iron, vitamin B-6 and magnesium.

I want to show the benefits to the foods you eat.  I think the more educated you are regarding food choices, the better choices you will make in the long run.  Knowledge is power.

I’ve been working on several different bar recipes for some menu tastings.  I wanted to incorporate some buckwheat groats (gluten free) to add more texture to the crust and that’s just what they did. Groats are fruit seeds that are related to rhubarb and sorrel making it a suitable substitute for grains for people who have a gluten sensitivity.  Packed with manganese, fiber, copper, phosphorous.  Plus they provide a great crunch factor to a rather soft crust.  The cashew cream is a creamy, cheesecake-like texture without any dairy.  I took a lot pictures to help aid you through this recipe.  The recipe is very easy but waiting for it to set up in the freezer is the most painful part if you’re impatient like me.

Peanut butter and chocolate… a heavenly match indeed.  No justification required for this recipe.  It was just needed because my oldest is back to swim season, practice and about to start working again.  My youngest is back to tennis shortly.  Portable, poppable (is that even a real word?) food is key.  These little balls are packed with protein with maca that will provide energy to keep her going.  I also sneak a few pre and post run for an energy punch.  These raw bites are super easy to make and are kid-friendly.   This raw dough is also perfect as a raw pie or bar crust as well.

Happy Spring?!  Well it finally feels that way after the longest, most brutal winter ever.  The sun is finally out. Melting is occurring after last week’s 12 inch snowstorm.  I have to admit, it feels really good to see the sun and have a clean car to drive again.  It’s the little things!

Today I found myself with NOTHING on the calendar and decided to use my time wisely and get in the kitchen.  I’ve been dying to make these burgers since I saw Matt Frazier’s No Meat Athlete make them and then YumUniverse take a stab at them as well in Heather’s cookbook.  I put my own spin on them and they turned out great!  The recipe yielded about 9 decent-sized burger patties.  I will be freezing the extras for future – fast meal ideas.

Yesterday was my husband’s birthday.  This was post 2 days after our anniversary and homecoming. It was a busy weekend.  Because his birthday falls on a Monday, and we went out this weekend for our anniversary, he requested vegan burgers for his special dinner.  Done!  This burger is sturdy and more like it’s meat counterpart.  You can even grill this burger without it falling apart – like many or most vegan burgers.  This one is also packed with fiber and protein.
