Despite having photography issues, I will forge on.  This was such a well-received meal last night – my kids were still talking about it this morning.  No, no leftovers so someone may be disappointed  tonight.  Meatballs & pasta are always a hit with kids or adults.  Great because you can make these ahead of time and just boil your pasta and toss with the pesto before serving.  Super easy.

Healthy Carrot Date Coconut Muffins.

I love healthy muffins! These are packed with great ingredients without all the guilt of fat-ladened traditional muffins.  The Medjool dates add a bit of sweetness (think of raisins in muffins), the carrots add some great texture and the coconut oil and flakes is a double whammy of flavor!  Plus using coconut oil is so much healthier for your heart than tradition butter.  I promise you will be reaching for these every time you sit with a cup of coffee or tea.  Also great for a breakfast substitute.

Oatmeal PB and Chocolate Chip Scones.

After cuddling up  with my daughter to start reading a book authored by a dear friend, I decided to start my creative juices flowing in the kitchen.  It has been a crazy week!  So scones came to mind on this rainy day.  Healthy?  Well, I would definitely say these are MUCH healthier than the traditional scones that you buy at a local bake shop. I still used butter because I feel that it is an integral component of the recipe.  Other than that… I did keep it healthy using powdered organic peanut butter, dark chocolate is good for you and by using whole wheat flour.  As this recipe is cooling on my rack, it smells heavenly!  It even caused my youngest to pause and ask what I was baking.  Definitely a lovely treat with tea or for a weekend breakfast or mid-morning snack.

Strawberry Peanut Butter Popsicles.

Okay, I had to do it.  I took the leftover smoothies I had from yesterday and froze them with tons of fresh strawberry slices inside for the extra bonus.  The kids are gobbling them up and they are packed with vitamins and protein!  Love that!  These are super easy to do and you can find pop molds just about anywhere really inexpensively!  Great for parties too!  Last day of school and I really think I would be happy eating watermelon for dinner all summer long.  But I guess I better head off and figure that out because my family wouldn’t share my watermelon dinner passion.  The weather is lovely -so grilling it is!

Strawberry & Peanut Butter Protein Smoothie.

It’s been a bountiful strawberry season for our garden.  Huge bowls of strawberries are being filtered into my kitchen daily.  So after my run this morning, I thought I would whip up a breakfast smoothie for my girls and I thought a peanut butter &  strawberry (a take-off of pb and j) would be a fun.  My girls loved it and drank them down in record time.  Packed with fruit, which provides necessary vitamins and energy, protein for muscles – its a great way to start the day.  A lower calorie option would be to replace the peanut butter with dried peanut butter (4 tablespoons) to reduce the fat/calories.

Feiny’s Everything Rubbed Chicken Garden Salad.

My friend Adam makes the most incredible rubs for vegetables and beef, chicken, seafood, pork or whatever you can whip up!  I’m addicted!  Totally clean, super flavorful – perfection in spice form!  Low sodium  Gluten free.  No preservatives.  All natural and NO MSG.  Click here to see Adam’s world of awesome rubs.  Also makes a great Father’s Day gift!

So this salad this very much up to you and what you love or have on hand.  Here is my version.  You can make this vegetarian by just adding more veggies and omitting the chicken or use tofu or fish.
