Black bean hummus stuffed cucumber rolls. Vegan.

December is finally upon us so key up the get-togethers, parties, food, food and more food that will be consumed.  With the most indulgent foods being consumed in between Thanksgiving through New Year’s – I always love to throw in some really healthy, yet flavorful dishes to offset the gluttony and honestly, I prefer healthy options over rich, heavier foods.

Cucumbers are rich in potassium, vitamin C, B1, biotin and magnesium. Plus, during the holidays when we tend to neglect hydration, they are filled with water.  In this recipe I share my latest obsession – black bean hummus but you can easily use store-bought if you prefer.  This appetizer takes minutes to make so they are perfect for impromptu gatherings.

Black bean hummus
Prep time:  5 mins
Cook time:  2 mins
Total time:  7 mins
 
Ingredients
  • 1 can of black beans, drained and rinsed well
  • 1 clove of garlic
  • 1 lemon, juiced
  • 2 tablespoons of tahini
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • ½ teaspoon of smoked paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon of salt
Instructions
  1. Into your food processor add your clove of garlic and pulse 4-5 times.
  2. Add the black beans, juiced lemon, tahini, cumin, paprika, pepper and salt.
  3. Turn the machine on and while running, drizzle the olive oil through the spout.
  4. Stop and scrape down the sides as necessary.
  5. Blend one more time for about 30 seconds.
  6. Taste and adjust the seasonings.

Blend until smooth and creamy.

Once your hummus is prepared, wash your cucumbers and dry.

You can use a vegetable peeler or a mandoline to thinly slice your cucumber ribbons.  I preferred the mandoline (please note:  use the guide to protect your hand from the sharp blade.  I used my hand initially for the first few ribbons when the cucumber was still thick).

Trim the ends.

Even pressure on the cucumber will yield an even slice but please use the guard.

Once you have sliced 2 cucumbers or so, lay them out evenly and spread a thin layer of the hummus on one side.  Then begin rolling as pictured.


Make sure you spread the hummus to the very end, even if it comes out a bit, to ensure they stay together and maintain the rolled shape.

You can leave plain or top with fresh dill sprigs for an idea or I used some pomegranate seeds for a festive red and green color palette.  You can prepare these about an hour ahead of time if you’re hosting or attending a party.

    These look amazing and even easy for a horrible cook like myself, but I don’t have a food processor or a mandolin. Would a Ninja work in place of the food processor? Would love to try to make it somehow.

      You can totally (and carefully) slice a cucumber into ribbons. Tips: use a sharp knife. AND take your time!

    These look so delicious! I have 2 questions, first of all could you use something other than cucumbers? My husband is just not a fan.(not sure he would get any however, I may eat them all!). Second, where do you get tahini paste? Living in a small town that maybe something hard to find.

      Kylee, Good morning sweet girl. Carrots, zucchini would also be great alternatives. Tahini paste can be found at any grocery store believe it or not. If not, sub out a bit of nut butter (tahini is ground up sesame seeds and has the same mouth feel as nut butter). Hope this helps. Merry Christmas!

    Love black bean hummus and cucumbers. Might have to try the cucumbers in slices/sticks first. My daughter is very hesitant when things look too different. It stops her from trying new things! Gradual changes!!!
