Healthy Elvis Vegan and Gluten Free Pancakes.

Tuesday.  Delay for both girls due to some rain that froze overnight.  So I got to the gym early this morning and then rushed home to make the girls a nice big breakfast.  A perk of a 2 hour delay.  I normally don’t make pancakes all that much since my daughter went gluten free but today I thought it fitting.  This would be a great Valentine’s Day breakfast idea.  Even make these ahead of time – and reheat.  Just add some berries as a side dish and a fun mimosa or fresh squeezed juice for a memorable. love-themed breakfast or brunch.

This makes a big batch of pancakes.  I store extra pancakes in tupperware and warm them in the morning- which is great for quick on-the-go breakfast for teens as they get up late and rush out the door.

“It’s that time of year again Mom!” my daughter exclaimed yesterday afternoon.  Snow time?  Winter time? Exhaustion time?  What time may I ask?  Shamrock Shake time.  Ah ha!  Well, yes you are right with St. Patty’s day next month already. Well my response to my dairy and gluten free daughter:  “Get to making your own version.”  That’s what she did and it turned out really yummy!

Kudos Sydney on your creation.  Tastes way better.  Let’s face it.. it isn’t nuclear green thanks to food coloring but to healthy spinach you can’t taste.  Plus vegan.  And not totally packed with gross ingredients, sorry McDonald’s but it’s true.

Valentine Protein Hearts. Vegan. Gluten Free.

The weekend is in sight!  I’m excited.  We have some fun things planned.  This week has been exhausting, I’ll admit.  My training is wiping me out.  Deep sleep, for some reason, has been escaping me which is why I think my recovery has been delayed.  More on that later.

Last night I started to whip up some energy balls and then decided to depart from the norm and make them more of a Valentine’s Day sweet treat that is totally healthy.  My husband can’t have chocolate so I made some with a vegan chocolate drizzle for my girls and some with an almond butter drizzle for him.  They turned out so cute.  Plus they pack a healthy punch of vitamins and protein!  If you’re looking to do something different this year and avoid the box of chocolates… you might want to consider these.  Heart healthy and all.

Hump Day is here!  It started out rough, I won’t lie.  But knowing these were in my kitchen and that made the day a bit better. Last night was super exciting.  My oldest daughter scored enough points to get her varsity letter at her swim meet.  We were very proud parents!  Second year in a row and a very tough season.  Hard work pays off.

Yesterday, I was thinking about making a fun Valentine’s Day cookie for my girls.  It had to be gluten and dairy free for my oldest.  It had to be tasty.  And let’s face it – it had to be sweet!  Achieved!!  My youngest daughter said they are like pillows of deliciousness.  Biggest. Sesame Sriracha Tempeh

Sesame Sriracha Tempeh.

I made this tempeh in mind for a Buddha bowl (I’ll share a pic below) for dinner on Monday night.  Tempeh is as versatile as chicken or pork if you’re a carnivore.  It’s got a mild flavor and takes on whatever you throw at it.  I marinaded this for about 6 hours and it had absorbed it perfectly.  I love hot and spicy food.  If you aren’t a big fan, use less Sriracha sauce in the marinade or add a bit of sweetness to help balance it out.  I’ll share that option below as well.  Tempeh can be purchased at most major grocery stores in the health food aisle.  It’s a great option for protein in your diet.

Happy Monday!  And February already? This month is a special one. My oldest turns sweet 16!  I’m so excited for her.  Driving.  Colleges knocking at the door.  It’s an exciting time in our house.

Today is a good day because the snowstorm number 864 (exaggerated) managed to miss us and we only got some slushy slop.  No shoveling required.  No school delays.  Life returns to normal.  Hooray!  So I realize most people are  feeling the post-Super Bowl food coma/guilt by now. With that in mind, I wanted to share a delicious treat that isn’t packed with sugar or bad fats.  I’ve been noticing lately the barrage of recipe sans oil.  Now not all oils are created equal.  In this recipe I opted for coconut oil. Did you know that coconut oil is considered a super food?  It is. It’s heart healthy.  Studies show that coconut oil can help our body resist viruses and bacteria.The oils found in the coconut have a positive antioxidant action that take place within the body.  Oxidation is considered a major contributor to cardiovascular problems and skin aging. And studies have also shown that it helps to reduce cholesterol.  The body needs healthy fats to operate.  Everything in moderation.

Happy Super Bowl Sunday!  Are you hosting a party?  Attending a party?  Or is it an low key party with family at your house?   We’re the latter.  I think my daughter’s boyfriend is coming over but other than that… I probably won’t make the whole game.  More on that later.

Today I made a big batch of vegan chili to simmer all day.  My youngest, Kira, wanted to make my father and husband a snack as a thank you for all of the hard work in her room this weekend.  I’ll spare you the details on that.  She came up with a buffalo wing hummus and it turned it out great!  I normally don’t post on Sunday but I had to get this one up in honor of the the national holiday of Super Bowl Sunday.

Super easy and fast to make and you control the heat.  Perfect Super Bowl, healthy dish that packs that reminiscent flavor of wings.  Happy Sunday! [Read more…]
