Thanksgiving is this week!  I still can’t believe it.  The east coast had record heat yesterday – we were in NYC for the day for some meetings and some meet-ups with good friends.  And tomorrow we are expecting 5-8 inches of snow.  Ha!  Then back up to the 60’s – talk about crazy weather.  But snow the day before Thanksgiving means that my company arrives tonight instead of tomorrow and we rush like crazy people to clean up the house, prep food, grocery shop etc. etc. etc.  I’m so excited to see everyone and hang out and just relax, laugh and eat!

I made my traditional cranberry orange relish today but made it a bit healthier without refined sugar.  It’s cooling now but I already snuck a taste and it’s so good.  In the oven I’m roasting brussels sprouts.  I also made a cranberry jalapeƱo salsa to snack on plus got the kitchen cleaned.  Doing well or at least I keep telling myself that.

I posted this on IG yesterday and I had a ton of requests for the recipe so I thought I would write up for you all.  I wasn’t sure what I wanted for lunch and I knew it had to be something warm.  I couldn’t shake the chill after my run, post shower and bundling myself up – and a cup of tea.  This hit the spot.  You can customize it for your preference.  Would serve as a quick breakfast, lunch, snack or dinner when you don’t have to make dinner for the entire family – don’t you cherish those nights?  I do!

Vegan caramel icing or dip.  First day of school, this week for my oldest, always bring a special after-school snack to celebrate surviving the day.  Why not?!  My oldest doesn’t eat gluten or dairy so this was perfect and I had a box of King Arthur flour chocolate cake mix that was gluten free.  I prepared the recipe using vegan products vs. eggs and then wanted to make a fun icing recipe.  I’ve made this before and thought it would be perfect atop of this lovely chocolate vegan cake and you know what… it is!

This caramel can be made more on the watery side for pouring – see my recipe notes below.

I’m so excited to be back to blogging!  The last two weeks have been a crazy blur to say the least.  As many of you know, I had my third and final finger surgery.  3 pins and a bone fusion.  I keep the pins several months (they make me bionic – ha ha) and I now have a removable cast that I wear 23 hours a day.  I’ve returned back to my fitness routine, albeit in a milder form to get myself back in gear.  Yesterday was my first sojourn back onto my bike and admittedly, I’m addicted to it.  It felt so freeing to be back out, wind in my hair and just free.  We rode 28.2 miles.  Smiles for miles – literally.

This weekend Bill and I also returned to the farmer’s market for our grocery shopping.  I excitedly discovered one of my favorites – figs and joyfully bought a basket of them.  I think you either love or hate them.  I fall into the love category for sure.  This recipe is a wonderfully sweet treat that is very versatile.  You can use these as a side dish, as a dessert or to top your favorite vanilla ice cream.  I love serving these at parties as well and they’re always a favorite.  You can’t go wrong with this recipe – totally full-proof!  I pinky promise.

Zucchini Blueberry Oat Muffins.  Vegan and gluten free!

I whipped these yummy muffins up on Sunday when I was overloaded with both blueberries and zucchini.  I thought it would make a fun combination because zucchini doesn’t have a strong flavor and wouldn’t compete with the blueberries.  Zucchini also adds so much moisture that it would be a great pairing… and it was!  The texture of gluten free muffins and cookies isn’t like traditional gluten based flours so be forewarned but these had even my most picky family members clamoring for seconds or thirds.  Super moist, these little sweeties are perfect for breakfast, your tea or coffee break or as a snack.

For those of you who follow me on IG or Twitter – my finger surgery went relatively well with only one of the 3 pins breaking during surgery.  Surgery concluded with 3 intact pins and a bone fusion that took about 1.5 hours.  I’ve been banned from working out (minus walking) until my appointment on Thursday.  Fingers crossed that I get the green light to start running again.  Since Friday’s super duper antibiotic shot that lasted about 3 minutes, I am feeling human again!  Thanks for all of the wonderful emails, texts, flowers, and prayers! oxo

Raw Key Lime Pie. Gluten Free. Vegan.  A summery favorite that I have been dying to make but couldn’t find a suitable crust that would give this pie justice.  Since my oldest went gluten and dairy free, I’ve been on a mission to make food for her that she wouldn’t think was lackluster compared to her regular old diet.  But thankfully we’ve had incredible results with her acne, having a beautifully clear complexion now and making all our food efforts worth it.

This recipe can be made in a 8×8 pan or a springform pan for a pie like I did.  Making raw desserts is way more forgiving than regular baking so it’s perfect for the timid baker.  I whip things up, taste them and adjust as I go… I encourage you to do the same!  Again, it’s hard to have a fail on this one.  Plus the avocado, almonds, coconut provide healthy fats and nutrients versus the classic sugary counterpart.

I baked these super tasty GLUTEN FREE Coconut banana muffins yesterday.  Perfection for breakfast, snacking or on-the-go eating thinking beach food, road trip snacks… or just because!

I hope everyone had a lovely 4th of July weekend.  Ours has been extended a bit due to the next household item breaking – our hot water heater!  Boy we’ve been on quite a streak.  Keeping a rolling total… my SUV, my fridge, my bedroom fan and now my hot water heater.  All I can say is caaaaa-ching!  On a positive note, I finally had my bike fitting (3 hours long) and it was phenomenal.  I’m always into data and information on my body, form and function.  The long and short of it was that I needed a new seat thanks to my boney tush, ordered new pedals to clip-in, got new riding shoes, shorter handlebars (the ones on my bike were too wide) and my right side is longer than my left.  The fitter adjusted everything and made the bike much more comfortable for me.  So Saturday I tested clipping in… unclipping.  I did this about 300 times in my garage with my poor husband acting as the bike trainer.

Sunday we went for a ride… 21 miles to be exact.  I fell once.  Not bad!  The ride overall felt better and I increased my mph by 1 minute.  Nice!  I also finished last week out the week running 30.18 miles in 4:03:46.  My goal, to stay healthy and to run over 100 miles this month as I did last month but to increase my biking miles/speed.  I’m off to a fairly good start.  I did run 8 miles today to kick off the week.  Now that you’re updated… on to this lovely little recipe I made yesterday.  [Read more…]

The one thing I simply cannot control myself around is watermelon.  My friends laugh hysterically at me because I often eat an entire watermelon in under 1 day.  I keep picking at it and just can’t stop.  My drug of choice.  Could be worse!  Due to it’s extremely high water content, it’s a low cal food packed with nutrients.  It is also a great post workout beverage to help prevent sore muscles after they’ve been torn up.  During working out, muscle cells rely heavily on glycogen, the storage form of carbohydrates in your muscles and liver. Consuming watermelon shortly after your workout can help replenish glycogen storage, refueling your muscles for your next workout. Watermelon helps prevent the formation of free radicals, known to cause cancer. And the lovely watermelon also contains vitamin A which helps skin and hair.  You just can’t go wrong!  Pair this up with the power- packed coconut water, which helps replenish electrolytes and packs in more potassium than bananas —- why would you drink anything other than this after your next workout?!  Refreshing on a hot afternoon by the pool too or for your next party!  Although perfect, you can always transform this into an adult beverage by adding vodka as option.

As the hot weather lingers, my appetite drops but my thirst goes through the roof.  This is the perfect beverage to refuel and refresh.

Monday, oh Monday how I can love and hate you so!  The day started out with a good 7.5 mile run. I’m now only 10 or so miles away from my 100 mile month for June.  I had a record 40,700 steps moved (running and walking yesterday) with over 2700 calories burned.  All good.  Got kids, picked them up, dropped them off.  Fed everyone.  Progress.  Then I had a bit of truck drama in my brand new truck with only 4k miles on it.  I’ll spare the details for now but as I sit frustrated and confused.  More on that later….

Onto the recipe post.  I feel like a crazy banana lady.  I buy them in mass quantities and once ripe, I freeze them all. I love adding them to smoothies or to make fake ice cream. Fake ice cream you ask?  Well it’s like a healthy, no-junk soft serve that will convince even your pickiest ice cream fans that they are eating something totally indulgent.  Totally vegan.  Gluten free.  Plus you can add whatever to it to make it even better!  This was yesterday’s dessert and it was so good (I’m glad I snuck a bit to enjoy).  This is for the chocolate coconut fans out there.  Additional mix-in ideas are listed below.

Chocolate Green Goddess Smoothie. {vegan} {gluten free}

This is the smoothie I make for myself every day.  I’m a chocolate lover and this is my go-to reward protein smoothie after a killer run or workout.  I workout 6 days a week and I prefer to consume a protein smoothie right after working out to speed up recovery.  Not overloading your stomach with food helps speed up recovery so the body can focus on muscle recovery versus digesting food in the stomach.   I’ve tweaked this recipe so many times and I’m finally feel that is ready to share.  I now, also make this for my oldest before swim practice every morning.  I think the balance of the cacao powder drowns out the spinach factor and she never even pays attention to it.  I love that I’m getting at least two servings of veggies in her before 8 am and she works her muscles hard in the pool.  It’s not overly sweet but just the perfect balance.

I realize there are about a million green smoothie recipes out there.  This is just one of my favorite takes on it and it’s vegan and totally gluten free.  Oh yeah, and protein packed!  It may not be the most glamorous but it sure ranks up there in flavor.
