Brazil Nut Maple Butter.
Brazil Nut Maple Butter.

Are you excited about the games in Brazil?  I’m obsessed.  Growing up swimming & watching my girls swim competitively most of their lives – our obsession begins with the trials.  The passion, hard work, diligence and pursuit of something greater than yourself is so inspiring.  Plus I’ll admit, I get totally weepy with the pageantry and spirit for our country.  I know, I’m a big sap but I know I’m not alone. Our favorites to watch are swimming- without a doubt, gymnastics and all things running – go figure!  I’m hoping to be running by that time.

In the spirit of the host country, Lucy asked me to use the Brazil nut as my inspiration.  I’ll be honest, I never had the nut ever before as I’m pretty basic with my nut selection.  I did my research and was blown away by the health benefits.  High levels of  selenium. Just one or two of these nuts per day is recommended.  Other minerals are copper, magnesium, manganese, potassium, calcium, iron, phosphorus, and zinc. Copper helps prevent anemia and bone weakness (osteoporosis).  This nut is also packed with thiamin and vitamin E.  Hello nutritionally powerful nut.

Nut butters are a wonderful source of protein and necessary fats in your diet.  My favorite way to incorporate nut butter is in my smoothies, overnight oats, on rice cakes and as a dip for fruit.  Of course, baking and cooking are also fun ways to incorporate this delectable food.  Click here for the full recipe.

As a blogger, I have opportunities to join forces with companies in both the food and supplement industry.  I’m very selective about the products I share on my blog and use in my life.  I was thrilled last week to attend the NOW Foods Ambassador event in Chicago.  There is so much I want to share with you all and an awesome giveaway too!

Let’s start with a little history of NOW Foods.  In 1968, NOW Foods was founded under the belief that good health was not a luxury available only to the wealthy. For the past forty-five years, we have made it our life’s work to offer health food and nutritional supplements of the highest quality, at prices that are fair and affordable to all those who seek them.

Today, NOW Foods is one of the top-selling brands in health foods stores, an award-winning manufacturer, a respected advocate of the natural product industry, and a leader in the fields of nutritional science and methods development. And while we have grown considerably over the past four decades, one thing has never changed – our commitment to providing products and services that empower people to lead healthier lives.

Every single Friday I breathe a sigh of relief lately.  I survived!  Training.  College tours. Dogs.  Teenage daughters.  Politics. Life in general.  I’ll admit lately it’s been life is just hard.  I managed two nights that were in excess of 10 hours of sleep.  My body is showing the fatigue lately and I’m embracing it.

I was up for a nice little easy treat that was healthy for for my girls.  My husband, as I’ve shared, is allergic to chocolate – still cannot imagine that curse.  But these little cookie bars I sliced into bite-sized pieces.  They are packed with chickpeas and almond butter so YES on the protein!!  These are a totally tricky food that you can smile about as your kids gobble them down.  Perfect for after school snacking on in their lunches for school.  Plus they have a great soft inner texture like a gooey cookie.   My daughter even warmed them and put pieces in her nice cream – points for creativity!

Oatmeal Almond Butter Bars. Vegan. GF.

Oatmeal Almond Butter Bars. Vegan. GF.

Happy almost Friday!!!  While roasting up some butternut squash for soup tonight I thought I would make these oatmeal almond bars to stave off the chocolatey cravings that have been happening in my kitchen this week.  My oldest has started swimming and my youngest is ending her hockey season.  But food consumption is at a peak for sure. Do you notice this in your house?  I feel like I’ve been on a cycle of muffin/cookie making big time the past two weeks.  Maybe colder temps are driving up the appetites.

This bar recipe yields 8 rectangular pieces or 16 bite-sized cubes.  I drizzled some with melted vegan chocolate and some without as my husband is allergic.  Think of these as a bar/muffin combination.  Soft texture with filling ingredients that makes a great snack.  Carbs and protein to keep you fueled.

Banana blondies. Vegan. Gluten free.

Banana blondies. Vegan. Gluten free.

Think of these as a banana peanut butter bread crossed with a blondie. They are super moist. Protein-packed, gluten and dairy free! They are a bit more delicate but so incredibly delicious. Perfect on-the-go breakfast, snack or dessert. My girls love these after school. Plus the protein keeps you filled till dinner.

You can also make these a bit more decadent by adding chocolate chips to the batter before baking.

Peppermint Black Bean Protein Brownies. Vegan and Gluten Free.

Peppermint Black Bean Protein Brownies. Vegan and Gluten Free.

I feel like my kitchen switches from pumpkin over to peppermint in a matter of days.  The tree is up.  Cards are mailed.  Presents purchased and now it’s time to start baking pepperminty good treats. Actually, healthy vegan and gluten free treats that are protein-packed for recovering muscles.  Swimming is underway and my voracious daughter craves protein-packed snacks before and after practices plus after running and cycling we all need protein.  These are great for on-the-go eating.  Plus, they are healthy and no one will know the better.

Now I know there are like a million and one black bean brownie recipes out there but these are just a decadent little bites packed with mint flavor.  Go big or go home and I went big with the flavor.  Plus I just received some new VegaOne protein powder that I wanted to give a whirl in a not-so-traditional smoothie recipe and it worked perfectly!!!  Ohhhh I may need to step away from the brownies or go for another run.  Ha!

Pumpkin Almond Butter Cookie Bars

Pumpkin Almond Butter Cookie Bars by Knead to Cook.

Pumpkin almond butter cookie bars.

September is here!  My favorite month.  Of course our weather has been perfection and now that September is here – the heatwave has arrived!  So funny.  Everyone is back to school and work today so I’m back to a routine.  Went to the gym early and got a 5 mile progressive run in and then lifted.  Went to the farmer’s market to load up and came home to cook and bake for the week.

Now that September is here that means hopefully cooler days,  chilly nights, sweaters and jeans and the quintessential flavor ~ pumpkin everything!  So freaking excited!  Oh and our wedding anniversary and trip is this month.

I’m convinced that everything in my house is now breaking.  Do you ever go through spells like that?  First started with a patio outside that we had to tear up and pour cement.  Then our fridge died… that was replaced.  Now the ceiling fan in my bedroom just went kaput!  Not really happy as I really love my fan and it seems like I’m boiling at night with just the a/c on.  Maybe menopause is closer than I thought (ha ha).  I was relegated to removing the old fan and running out for a new one.  Before I run off to hang that I wanted to blog because the rest of my day is packed with a swim meet.

I had planned on sharing my recipe for mint sun tea that I made yesterday but had a hankering for some raw brownies and these bumped that post.  These raw brownies are a bit different from ones made in my past.  I wanted to use coconut butter or manna in these for a deeper, richer flavor.  They are so good and good for you!  Raw.  Vegan. Gluten free.  I like to make snacks for my daughter to take to her swim meets that I know are diet friendly for her.  These are perfect.  And if you aren’t a coconut fan, no worries… the flavor almost is undetectable.  Packed with protein from the hemp hearts. Perfect when the chocolate cravings hit!  I store in the freezer (or you can store in the fridge too).

My husband bought me this awesome raw vegan cookbook for Mother’s Day and I have to say I’m drooling every night over the gorgeous photos.  I’m new to a vegan diet.  I’ve now been vegetarian for one year.  I’m good at creating dinner recipes but raw desserts, I’m new at.  I look at each cookbook as an education.  I learn from techniques, ingredients, spice combinations etc.  I love them!  This recipe was a must-make!  My kids adore mint and admittedly, so do I!  These came together really fast and have been freezing the past few hours.  I took them out to slice up and photograph (and sneak a taste) and I’m blown away!  I did customize the recipe to my taste but this will now be a staple in my kitchen.

Mountain of deliciousness.  Clean eating does not have to be boring or without chocolate!

Before we headed out of town last Friday for our race weekend, I wanted to whip up a healthy treat for my girls to have on hand.  These are totally dairy and gluten free.  They are a twist on my classic energy balls/bites that I make. I also rolled these in organic unsweetened cocoa powder which added a complimentary bitter to sweet balance.  Protein packed these are great for a post-workout snack or just a treat when you’re craving something chocolate.  No guilt here!  I store these in the fridge and love them cold.  I make them bite-sized so you can pop them and go!  Portable perfection.
