Banana Coconut Quinoa Bread. Vegan. Gluten Free.

I had a batch of leftover quinoa and found this recipe online that I wanted to try.  Sometimes you need to step outside of your own recipes/head for inspiration.  This bread is the bomb!  Just perfection, seriously.  I made a few adaptations, mainly to make it gluten free, but not many others.  Super moist and protein packed thanks to the quinoa.  Perfect way to use leftover quinoa that you have on hand.  I love this for breakfast alongside your smoothie.  I topped my slice with Justin’s  almond butter and it was just perfection.  Highly recommended.

Happy Spring?!  Well it finally feels that way after the longest, most brutal winter ever.  The sun is finally out. Melting is occurring after last week’s 12 inch snowstorm.  I have to admit, it feels really good to see the sun and have a clean car to drive again.  It’s the little things!

Today I found myself with NOTHING on the calendar and decided to use my time wisely and get in the kitchen.  I’ve been dying to make these burgers since I saw Matt Frazier’s No Meat Athlete make them and then YumUniverse take a stab at them as well in Heather’s cookbook.  I put my own spin on them and they turned out great!  The recipe yielded about 9 decent-sized burger patties.  I will be freezing the extras for future – fast meal ideas.

Cashew Cream Chocolate Pots de Creme || Knead to Cook. 

Sitting here without words… well, not really.  I’m always soaking cashews – seriously, always.  Making cashew cream is super easy.  It yields the most versatile product ever.  You can go sweet or savory with it.  Think of this as a replacement for cream or dairy that you would use in recipes only it’s vegan, not artery-clogging and has a nice source of protein from the cashew and makes everything super creamy.

So with all that being said – I wanted to go sweet with this cashew cream.  I’ve been wanting to make pots de creme or a fancy chocolate pudding.  This recipe took me minutes to make and it turned out to be just the tastiest thing ever.  Hello chocoholics!

Shocker…. We got more snow!  I promise to limit my sarcastic comments.  In between snow blowing and shoveling… I whipped up a batch of these apple carrot muffins.  My father is super type A about keeping up with the snow – I mean the minute the blacktop of our driveway is covered – we are back out there again.  Limited kitchen time.  More outdoor time.  Well, I’m glad I’m getting some form of exercise because running or getting to my gym isn’t happening.  In fact, my gym actually closed early today.

Forties and fifties are coming next week… I’m holding out major hope here. Longest winter ever.

Yep.  You “knead” this.  Chocolate banana and avocado (wait, what?????) ice cream.  Totally vegan.  Gluten free.  And yes it has an avocado in it.  Super healthy.  Totally creamy.  Actually my 16 year old had her wisdom teeth extracted last Friday and she came home from school asking for this over anything else.  YAY!  Way better than processed ice creams.  No funky ingredients you can’t pronounce.  Protein packed.  So good.  Period. End of story!

Cashew Cream Tomato Soup.

Oh boy it’s snowing WAIT sleeting again. I’m typing this recipe up on Sunday.  The snow started around 9am and now it’s sleeting. I’m guessing a school delay tomorrow.  This is good because my poor oldest had her wisdom teeth out and is quite swollen.  I’m sure sleeping in will be beneficial.

It’s March… so much for coming in like a lamb…. hopefully it leaves that way because it certainly came in like a lion. I know so many friends training in this weather are so tired of it.  Let’s face it, who isn’t tired of this already?  But it’s March and I’m hopeful for some warm 40 or dare-i-dream 50 degree days.  It looks like 40 degrees this weekend and pray it holds out to be true!   But for now, we dine on soup… mainly to keep us warm and sustained.  This recipe is a bit of a departure from Angela Liddon’s original tomato soup recipe.

Seed & Nut Cinnamon Tea Granola. Vegan. Gluten free.

I go through major cravings for granola.  Training hard, this is the perfect carb-loading & caffine for me.  It’s a great way to start the day, grab a handful for a snack or let’s face it – if you don’t have to cook for anyone and you get a day off – dinner!  This recipe is super flexible – add what nuts, seeds and tea you love and omit the ones you don’t or you don’t have readily available.  I pair this up with some cashew milk and some blueberries and I’m one happy camper.  Tons of protein, healthy fats and vitamins.  Minimal sugar and oil make this recipe even better.  I package this up and give it as gifts too.  Who doesn’t love a homemade gift?
