Happy Monday… yes, seriously.  We are in full summer mode here and apparently my schedule has just gotten amped up about a million times more.  My oldest has her driver’s permit, works and is a swimmer.  My youngest is at her grandparents till later this week but she starts back at tennis and that practice daily.  Her job.  So blogging will get reduced down a bit – so expect 2 or 3 recipes a week.  I try to manage it all but with other things in the works… summer doesn’t bring relaxing days – well hopefully a few.

So I’ve made this recipe about a dozen times and I never shared it.  It’s a great Meatless Monday dinner idea or paired up with other veggies or protein.  It has a lovely smoky flavor and it’s so flavorful.  Perfect when you don’t want a huge dinner on a hot evening.  I serve room temperature or warmed with a tomato & basil salad on the side.

Balsamic Black Rice Salad. Vegan. Gluten Free.

Do you ever think of a recipe that you’re craving that you just can’t shake from your mind?  This one is mine, as of late.  I don’t know what it is, but I’ve been thinking about a black rice salad then this recipe came to be today – post taco Tuesday.  I love leftovers and hate wasting food.  I thought I would incorporate leftover toppings from last night (black beans, chives, peppers ad jalapeños) and mixed in some cooked veggies and viola a whole new dish is born.

Have you used black rice?  It’s nutritionally dense compared to it’s white or brown counterpart.  Its color comes from anthocyanins, plant pigments that may help lower the risks of diabetes, heart disease, and cancer.  The flavor is on point for brown rice.  It’s simply gorgeous.  This recipe can be served warm or chilled.  I’m thinking this is the perfect recipe to take to your next bbq.  Healthy and so easy.  Make ahead and store in the refrigerator.  Perfect main dish or side dish for your carnivores.

Black rice is sold in most grocery stores and can be found in the organic/gluten free sections.

I was thrilled to have the opportunity to team up with Colavita to create some recipes for grilling season.  Being an Italian girl and vegan – I thought I would take you on a food journey grilling up vegan style versus the classics you’ve come to expect during grilling season.  Plus moving outside to grill for friends and family, enjoying warm and sunny weather – there is nothing better after a long winter.

Hump day already?!  Summer is coming fast and furiously.  Our weather has moved over to warm, sunny days.  We’ve been grilling a lot more lately and with a lot of garden planted – I’ve been using some fresh herbs in some of my favorite recipes like this one.

I’ve been working on several jobs this week that are coming up so it limits my free time for recipe  testing but I wanted to share one of my favorite recipes.  Rosemary roasted carrots and sweet potatoes (insert major heart emojis).  Benefits of carrots are packed with carotenoids; which help lower the risk of heart disease.  Improve vision.  Vitamin A helps flush toxins from the body. Vitamin A also helps prevent damage from the sun.  And they possess anti-cancer properties.

Sweet potatoes are packed with fiber and potassium. They contain Vitamin D which is critical for immune system and overall health.  Sweet potatoes are a great source of mag­nesium, which is the relaxation and anti-stress mineral. Magnesium is necessary for healthy artery, blood, bone, heart, muscle, and nerve function to name just a few benefits.

Rosemary has been revered since ancient times for its medicinal properties. Rosemary was traditionally used to help alleviate muscle pain, improve memory, boost the immune and circulatory system, and promote hair growth. It is also a good source of iron, calcium, and vitamin B6.

This recipe is very simple and pretty much full-proof. I hope you enjoy!

What a weekend!  We celebrated my father’s 77th birthday and enjoyed the springy weather as much as we could.  We mulched, we ran, walked the dogs, washed the cars… the weather was absolutely lovely.

I made this dish last week but didn’t get around to sharing it.  About two years I received Gwyneth Paltrow‘s book It’s All Good book.  She has roasted cauliflower and chickpea recipe in there that loved and therefore always made.  I wasn’t a vegan at the time but loved it.  I morphed it over time – mainly the dressing as I wasn’t a fan of her version.  I love roasting vegetables and having them on hand all week for an easy side dish or dinner.  After my friend Christina posted that she made Gwyneth’s recipe it dawned on me I never shared my version.  So here it is!

I found this recipe ages ago from Minimalist Baker and I finally got around to making it.  It serves as a side dish for my carnivores and a main dish for my husband and me.  The reason I loved this recipe so much, despite being incredibly flavorful, it was super easy to roast everything on one baking sheet.  I seriously mean SUPER EASY!  I also made a few modifications to the spices and the dressing but this recipe is definitely a winner and I will be keeping it in my arsenal of go-to recipes.  I hope you give this one a try!Perfect for weeknight menus and meatless Monday.

I love Indian food.  I love all kinds of food but Indian food… it’s so incredible especially when you’re vegan.  The flavor-packed options are endless.  I always gravitate towards cauliflower dishes.  Their spices are so healthy for the body.  Reducing inflammation.  Provides iron.  Helps transfer oxygen to vital organs.  Benefits metabolism and helps immunity.  Can’t go wrong.  Food is medicine!  Trust me.

This is one of those veggies that you can prep ahead of time and have for the week.  Great paired up with rice, salad greens, quinoa or a side dish for your favorite protein.

A long time ago I used to love Kung Pao chicken.  I thought it would be fun to recreate the recipe with chickpeas and it turned out great.  And to be honest, I started marinading these on Monday and didn’t get around to making them until yesterday at lunch.  One I forgot about them in the snowstorm/delayed school -kids being home throwing my schedule off -period. Then Tuesday was a repeat of Monday with the weather/delay etc.  Then I jinxed myself Tuesday night (after I couldn’t get to my daughter’s swim meet due to a conflicting doc appt.) that everything would resume to a normal state on Wednesday.  Yeah.  NO!  I was awakened yesterday by my youngest who had a raging fever and in conclusion (and withholding all the nastiness) the flu.  Once on Tamiflu, and my oldest off to school with laryngitis, I got to address these babies marinating in the back of my fridge.

Despite everything else in my week not going as planned, it turned out that marinading these for 3 days was the best thing.  The chickpeas absorbed fantastic flavor and I have to admit, once I sat down with a bowl of them… they were the best thing I had in days.  It made two nice servings for a main vegan course or would easily be a side dish for 4-5 people.  This dish turned out so good.

Happy December!!!  As much as I don’t love snow, I do love this month.  It’s my birth month, Christmas, downtime with family, laughing with friends, sharing gifts and most of all, spending time with the most special people in my world.  Today is Cyber Monday and I will, I’m sure, get roped up into that and buy a few more gifts.  My Christmas cards get mailed today as it is officially December and I’ll finish up my gift list as soon as possible.

Today, however, began with a run in shorts but more about that later in the blog post below.  For now, I discovered this recipe from The Blender Girl and knew I had to try it for Thanksgiving but my version.  It was a huge success without anyone realizing it was vegan (gasp!).  My immediate family embraces vegan dishes I make but my in-laws shy away quite a bit.  I made these right after my run on Thanksgiving and no one was really around to see what I put in or didn’t into this dish.  Everyone loved them.  Success!

Vegan and Gluten Free Sweet Potato Casserole | Knead to Cook.

This Thanksgiving my husband is vegetarian.  I’m vegan.  My oldest is dairy and gluten free.  I started to think about our Thanksgiving menu, because we host, and I knew I had to revamp my sweet potato casserole recipe because its the one dish my kids clammer over.  Today I opted to do a test run of subbing out the dairy and flour to make sure they love it and that everyone else will too.  I take some heat about my vegan diet and I don’t want anyone to feel like my dishes are boring and flavorless because they are vegan.  Vegan food is so flavorful!  No one will miss the decadence with this dish… it is so good.  #thankful

I served this for dinner last night and my family loved it.  So thankful for no complaints (especially from my youngest).  The revamp was a success!
