Returning to reality yesterday after a weekend away with family celebrating Easter was hard.  Training.  Laundry.  Dogs.  Grocery shopping.  You know the drill.  My oldest was off Monday and my youngest is off till mid-week.  I knew I needed a good healthy snack to grab when the munchies hit.  They requested banana bread and I whipped up these up to satisfy teenage hunger.

These are refined sugar-free.  Gluten free and completely vegan.  You can use mini chips or chunks for the vegan chocolate aspect.  I made some without for my husband and topped with banana slices.  These are hearty enough for breakfast or pre-run.  You can also half this recipe for 6 regular muffins or prepare as is for 12 large muffins.

Before I even go into the background of this soup… my entire family was channeling Seinfeld when I told them what I was making for dinner.  Do you remember the episode with the Soup Nazi?  Ha.  Fond memories… Thankfully there is soup for you!

This recipe is a variation from the very fabulous Vedge Restaurant in Philadelphia.  If you ever find yourself in Philadelphia be sure to make a reservation at this acclaimed restaurant.  The husband and wife duo are vegan powerhouse chefs.  This soup is hands down one of my family’s favorites (even the meat eaters) and I love it because it takes only about 30 minutes to put together.  From there I let it simmer for hours before serving.  Leftovers are incredibly flavorful as the spices develop more intensity.  Our preference is to serve it over jasmine rice for a heartier meal.  It’s a great soup to prepare on Sunday for dinner, with leftovers being perfect for lunches or dinner on the fly during the week.  This recipe is a variation from their recipe.

Carrot Pear Oat Muffins. V. GF.

Happy Friday Eve!  I’m looking forward to the weekend.  The weather is looking up this weekend and next week – like 70’s!  No projects.  No college tours.  I’m hoping for some downtime.  I’m looking forward to a vegan date for breakfast and the farmer’s market.  I’m very simple and maybe even boring but I love our rituals.

I started working on this recipe a few days ago and finally nailed it.  Great success for a blogger. I’ve made no bones about it… I much rather cook than bake.  Baking requires precise measurements and I don’t think my brain works well in those parameters.  I love flexibility.  These turned out so moist and delicious that I made a dozen and in less than 20 hours one lone muffin remains.  So I guess I will call these a victory!  I hope you enjoy them too!

Happy Leap Day – let’s celebrate an extra day with a cookie!  I’m so happy to finally be working back in my kitchen – it’s seriously been over 3 weeks that I’ve been renovating/updating/face-lifting my master bathroom. The last piece of the puzzle gets delivered today – my shower door and fingers are crossed that it fits!  But I digress, I’m locking myself in my kitchen today and making several recipes while I await the delivery call.

I always make muffins as a go-to snack for my family but I’ve been craving salt lately.  Why?  Well I’m a bit of a salty runner and that seriously drives my craving.  I know you typically see salted caramel but I wanted to do a salted pb cookie.  Peanuts… a touch of salt… sounds good to me!  Again, I used a very small amount not to offend my kids by the addition.

These cookies come together really quickly and I will warn you that the dough is quite heavenly if you accidentally sample it 😉  Totally safe to eat as there are no eggs in it or risk of food contamination. Okay onto the recipe and my next recipe is awaiting my attention.

I’ll begin by apologizing for being blog-absent for the past two weeks.  I mentioned that we were renovating our master bathroom and it has become all-consuming to say the least.  Life with a puppy who just got spayed, teenagers, food jobs, ultra marathon training, life and a bathroom in disarray has left me missing my kitchen.  I did take about 30 minutes earlier this week to whip up some muffins – per everyone’s request and I managed to snap a few pics for a blog post in between cabinet painting. These muffins are nice and moist.  Packed with my favorite protein – almond butter and are in mini muffin form so they can be popped in your mouth as you run to your next task, errand or nearby paint brush 😉  I share a lot of muffin recipes as my family seems to gravitate towards them for snacking or on-the-go breakfast ideas.  I also love them pre-run.

I’ve been so MIA this week and I’ll apologize upfront.  We’ve been renovating our master bathroom (we’ve – my dad and me) 8 hours a day since  Sunday.  I miss my kitchen to be honest and have been just winging it for dinners.  Sad but true.

Apparently February is my month of sprinkles.  I’ve been using them non-stop of jobs like here, some other jobs that haven’t been published yet and now here.  I always seem to use them around birthdays and Valentine’s Day, which is logical.  My oldest is turning 17 in a few days and I created these last week and I will admit that both of my girls devoured them in less than 24 hours.  They’re festive, cute and perfectly bite-sized and great for a celebration.  You can customize them by sprinkles you use per event and are adult and kid-friendly without a doubt.

We survived another week!  Why is it that I always feel this way by Friday?  I know, that’s kind of pathetic but I’m keeping it real.  We, (that’s my husband and oldest) are headed out of town to visit another college on the potential list.  I neglected to realize it was THIS weekend.  So out and back and then home for the super bowl by Sunday.  Do you host a party or attend one?  I normally host our dear friends but didn’t make plans knowing we would be out of town and with my training I highly doubt I will make it past the half-time show.  44 is the new 80 lol.

So without further adieu… here’s my favorites list I’m crushing on currently.

Three Bean Quinoa Chili Verde. Vegan. GF.

Snow on the ground and I’m all over making a big pot of chili.  All the beans, warm spices – there is just something that comforts your soul and warms you to the bone.  Coincidentally, that is very much necessary these days.  Plus this is a bowl loaded with vegan protein from the quinoa and beans.  This recipe is insanely easy to make and you can set it and forget it – allowing it to simmer and work it’s flavor magic.  I served this with homemade cornbread but tortilla chips would also be fun.
