While going through my Instagram friend feed I stumbled upon A Blonde Vegan’s green smoothie lunch and I became intrigued. I really love her recipes and outlook on food/health. If you get a chance, check her out. As for me, I’m new to veganism (5 months in) and much of my feed is from vegans…

I tried her recipe last week and then morphed it a bit to suit my needs for lunch and wanted to post the recipe. It’s quite good and very filling. Packed with vital nutrients and protein… I’m all over it. You can certainly adapt the sweetness level by adding more or less fruit to the smoothie. But overall, this is a winner hands down! I hope you enjoy it and get inspired to make your very own!
Ingredients:
1 handful of baby spinach leaves
1 handful of baby kale leaves
2 medium sized carrots
1 large very ripe banana
1 cup of blueberries
2 tablespoons of hemp protein powder (or 1 scoop of whatever protein powder you prefer)
1/3 cup of unsweetened almond milk (I used vanilla favored)
1 tablespoon of almond butter
Directions:
Place all of your ingredients into your Vitamix or blender and blend on the smoothie setting. Pour into a soup bowl, cup or whatever you prefer but leave room for toppings.
Optional topping ideas:
Melted almond butter
Blueberries
Sliced bananas
Nuts of your choice
Chia seeds
Granola
Toasted oats
Whatever you can come up to!

I still have yet to try carrots in my smoothie…I think I would like it though! Are they raw?
