If you follow my blog, you know I’m a pumpkin addict. I start cooking with it the minute the kids go back to school and fall creeps into my psyche. I love the warmth of the aroma and the taste is out of this world! Funny enough, I don’t like pumpkin pie. I can’t explain it but I whip up so many other great substitutions that I’m cool with it.
Super easy recipe…
Ingredients:
2 cups of raw almonds
3 teaspoons of ground cinnamon
2 1/2 teaspoons of pumpkin pie spice seasoning
4 tablespoons of organic agave or honey
1 teaspoon of vanilla extract
Sea Salt
Directions:
Preheat the oven to 325 degrees. Line a cookie sheet with parchment or foil.
Into a bowl place your almonds. Then add cinnamon, spice, agave or honey and vanilla. Toss to coat each nut. Spread the nuts evenly on the cookie sheet. Sprinkle with sea salt. Bake for 18-20 minutes. Let cool and serve.

I just shared it on my page too! Thank you!!!! oxoox
I love that you’re (apparently) serving these with beer. May I assume a pumpkin ale?
Ha ha. My husband has the beer on tap, unknown flavor. I don’t drink beer π
I made these nuts last night, freaking delicious! The whole apartment smelled so good while they were in the oven! Almonds are great and great for you, this is a good way to get some in ya. Thanks for this and all your recipes. And you’ll have to thank Nadia G for directing me to your site.
Ricky, I’m so happy that you love them! Yes, extra bonus – the house does smell awesome! I so appreciate your kindness, you will never know how much it means to me! oxoxo Robin
These look fabulous! They are in the oven as we speak and I can’t wait to give them a try. Thank you so much for the recipe!

Jane, You are so AWESOME!! Your comment made me smile. I hope you love these as much as we do!!! The chili lime nuts are also crazy good!! oxoxo Robin
These are amazing in every way! Taste, smell and SouthBeach friendly! Thank you for the great recipe π I’m excited to make this for our Chilli cookoff for people to snack on! xx
Shelly, They are sooooo good too! Glad you popped by π Robin
These are delicious! And smell fantastic, my only problem was getting them off the foil when they were cool. I lost half of them cause they were covered in foil fragments… π any tips?
Hmmmm…. I didn’t have that problem. Maybe try spraying your foil with a baking spray (olive oil Pam etc.) to see if that helps. If not, bake on a Silpat instead of foil. Hope this helps! Robin
What a brilliant idea! Can’t wait to try these.
As a trainer I am always trying to give my clients healthy yummy snacks, and this was perfect! Honey is a little high sugar for some, so I repalced it with organic Agave, they are absolutely delcious!! I made a big batch for me and my clients! π
I used agave too, whichever I have on hand. Try my chili lime roasted nuts too… they are to die for! π Thanks for stopping by!
Would this recipe work with walnuts or pecans or maybe a mixture of them all?
I haven’t but I’m quite certain they would be fantastic!
wow! I am going to make these for my husband next weekend, he enjoys a good pumpkin beer and these would be a great addition to football sunday for him!
That would be PERFECT Rebecca!!!! Can’t wait to hear what he thinks of them π Robin oxoxo
Robin, I love recipes like this. Quick, easy, and I know they’re gonna be so good. I’m making this in a little while… ’cause I already have all the ingredients.
I just made these last night and they are delicious and made the house smell heavenly.
Because of the Agave they stuck together pretty good in the bowl. Does anyone have any good tips so they don’t come out in large clumps if I am serving it to company? Although, they are so goo I wouldn’t mind a large clump. π
Great pictures too!
If they stuck together, give them a toss mid-cooking to keep them from sticking. This should help. Robin π
Yum, these sound like a treat!
They are super delicious! Thanks for stopping by!! oxoxo Robin
These are amazing. Thank you for the recipe. The only problem is that I CAN’T STOP eating them!!!!
I totally agree… they are a bit addicting π
Made them last night, so quick and easy and DELISH!!!
And gone equally as fast, right?! Glad you loved them! Robin
Awesome! I am intolerant to cinnamon so I substituted 3/4 teaspoon of allspice, and made my own pumpkin spice without the cinnamon. yummmmmmm
Fantastic! I love it π
Yummy. Didn’t have the pumpkin pie spice so I substituted with a little of ginger powder and nutmeg. Thanks for the recipe! π
Perfect! I love it… make it work for you. Thanks for popping by!! oxoxo Robin
Love this recipe! Made them tonight, thanks for sharing this.
YAY Brooklyn!!! So happy you liked them. Robin
Do you think this recipe would work with walnuts or even pecans??? I have a tun from my friends trees.
Absolutely! π I hope you love the recipe. Robin oxoxo
Went through the first batch already . . . on to batch 2! Thanks!
Ha ha! I love hearing that! You go girl π Robin

Without even looking I knew what recipe you were referring to! I love those too. Thanks Loree for popping over to share your review. oxoxo Robin
Very yummy! I made my first batch with agave. I just made more and decided to try with honey. They are still great but I liked them better with the agave π
I’ve used both and love them equally. I love that you popped by with your review!! oxoxo Robin
I love this recipe! My fiance loves it, too, and its very shippable (which is important because he’s currently deployed to Afghanistan)! Just thought you’d like to know that I blogged about it and linked to your site. π http://jomygosh.blogspot.com/2012/10/nuts-to-you-magillicutty.html
Have a great day!
Your post made my day. Huge thanks to your fiancΓ©! What a great guy. I’m so glad these worked out for you and him. Please extend our deepest thanks to him. oxoxo Robin
Bummer, these didn’t turn out for me. I think I may have burned them but the there’s something a little off about the taste. Will try again soon π
Gina, Most oven temperatures vary so if you run a bit hotter or suspect you do, turn the temperature back down a little bit or keep a watchful eye on them. I’ve made several batches and had no issues. I hope they turn out for you. oxox Robin
Just made these for Thanksgiving snacks!! Thank you for sharing!!!

Thank you my love!!! Just reminded me to make these too π
This looks so delicious…must bake up a batch for Thursday…thanks!!
That looks really yummy, can’t wait to try them, i ate raw and sometimes roasted Almonds everyday. Thank you for sharing Dr. Strand ! Can we have more recipe similar to this one, which is healthy and easy to prepare especially at this time of the year when you have friends and relatives come over, they would love this treat for sure !
These are delicious! Thank you for sharing this recipe – I made these to take to a New Year’s Eve party, and they were gone well before midnight π
2 tips – baking on parchment paper prevents the ‘stuck to the foil’ issue some bakers are having; wait for the almonds to cool before eating – right after coming out of the oven, they are chewy. If you can wait a couple of hours before eating them, the favors will be better and the nuts will crunch. Can’t wait to try the chili-lime recipe!
Thanks for the tips. I usually make them on a Silpat which helps too. Definitely wait till cooled or they’re like lava too π Chili lime are my hands down fave~!
I saw this recipe and had to make these immediately π delicious doesn’t even begin to describe how wonderful these are! It is a creative, easy recipe too!
Thank you my sweet! That is the best news that you loved them. oxoxox
These sound delicious. I was just wondering if you knew how long they were good for? I am the only nut eater in my house, so I don’t like to make too much of something if I won’t be able to eat it quick enough π
Covered in a tupperware type container, I would say 2-3 weeks or more. They never last in my house π
Today is the perfect day to make these. I cant wait!!!
Megan, One of my favorites!!! I hope you enjoy them π oxox
I made these this morning and they were soooo good! They also made my house smell amazing! Thanks!

Have you ever shipped these? My husband is deployrped and I thought it might be a fun treat to send him for Christmas or thanksgiving”
Natalie, I had a ton of military families comment on that last year. Shipped perfectly. Thank you and your husband for his service and may he return home safe and sound soon. Robin
These look amazing! Wondering what a serving size would be and how many calories per serving! Sorry if it’s already been answered. Tried to read comments but wasn’t able too!
I don’t have or use a calorie calculator but you can find one online. If you need help with that just let me know and I’ll be happy to do it for you. oxo

Fall can’t get here soon enough. I’m making these tonight in my 86 degree kitchen for my daughters bridal shower this weekend. She’s having an October wedding so, it’s all things Fall right now. The house smells wonderful right now. Depending on how these are received (I’m CERTAIN favorably) these may be on the wedding buffet table also!
Oh that is just an honor. I hope you love them and I agree with you on fall – trust me!!! oxo
