As I’ve shared in past posts, my family is doing a 40 days to a revolution (mind/body/yoga/mediation/diet) program by Baron Baptiste. It makes you pause and really examine what’s going on inside your life and thoughts, what you’re eating and reactions to being present in your life. I don’t know about you but all areas I need to improve. I rush from one thing to another not really stopping to be present in the moment. I have made some significant changes in my life over the last year and want to continue to evolve because after all, if you aren’t moving – you’re stagnating.
I whipped up these non-chocolate blondies because my husband is allergic to cocoa along with the fact that I wanted to continue to make clean recipes that I can share with my fellow 40 day students as we go through this journey together.
I made these… didn’t tell anyone what the ingredients were. Everyone ate them not missing a beat. In fact, we were in Philly yesterday and came home and I just noticed that they are all gone! Love it! No one is the wiser. Protein packed minus the “junk” found in regular blondies. Now if you’re expecting the full on fat blondies… you won’t be happy with these. But if you’re looking for a clean snack idea for your kids or yourself that won’t blow your gym efforts or make you riddled with guilt over eating something less than healthy… these are for you! When I did reveal my food source for these to my husband he was flabbergasted! Ha… fooled him.
Ingredients:
1 can of low sodium chickpeas, drained and rinsed well
1/2 cup of peanut butter
1/4 cup maple syrup
1 tablespoon of vanilla extract or paste
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Optional: 1/4 cup of dark chocolate chips
Directions:
Preheat your oven to 350 degrees and spray your 8×8 glass baking pan with baking spray and set aside. Into your Vitamix or food processor add, chickpeas, pb, syrup, vanilla, salt, soda and powder. Blend until smooth and creamy. (This was inspired by my pb hummus recipe!) Then gently spoon this mixture out into your prepared pan. If you using chocolate chips, add to the top of the blondies. If not, place in the oven and bake for 24 minutes or until the edges are just golden and a toothpick inserted comes out clean. Let cool completely then remove and slice. Enjoy.

I love the ingredients in these blondies. I’ve been wanting to try baking with chickpeas, but haven’t had the chance. Can’t wait to try these 🙂
Megan, I need to make more of these they were so good and protein packed!
Hello Robin!
I’m also doing the 40 days program at evolution power yoga lancaster. I just got finished making these blondies and they are incredible! I was really craving something sweet! Thanks for creating such a wonderful treat!
Emily, So nice to “meet” you! I’m glad you loved them. I promise to keep posting great new recipes that adhere to the 40 day program so check back soon! oxo
I made these last weekend, and they are so delicious! I love the simplicity of the ingredients & how healthy these are. My boyfriend and I polished off the first batch in no time! Unfortunately I don’t have a high speed blender, but I found that an immersion got the job done (standard blender not so much). Great recipe!
Awesome job! They are a bit addictive but without all of the guilt 🙂 Glad you loved them!
Your posts are not showing up on my fb feed…
random & annoying. These look great!
I removed my Facebook fan page because I couldn’t take FB algorithms anymore. You can sign up on my website for updates right to your emails 🙂 oxo
These didn’t harden – they remained mushy despite prolonged cooking time. Maybe not blended enough?
Hmmmm. Not sure. I’ve made them many times and haven’t had that happen. Possibly process longer and make sure ingredients are fresh/temp. of the oven is hot enough. I just made another batch tonight and they are good.
That’s amazing that you fooled them! Love it!! I’m trying to expand my horizons by making more healthy goodies. I’m not sure how succesful I’ll be because I do love me some sugar and flour. 😉 But I’m willing to try!
Questions…how thick are they? And have you tried adding any spices to them, like cinnamon?
I have and you can totally add what you like. They have a nice consistency but aren’t like the fat laden counterparts 🙂 Healthy option! oxo
Hi woulkd you know the nutritional value of this?
I don’t but if I get a moment tonight or tomorrow I will plug it into a calorie counter app.
I am making these too! Please please come live with me! Teach me how to be a good vegan!
I would LOVE that!!! oxo P.S. You’re the BEST!
