Okay these are insanely good! I made two batches, one with dark chocolate and one with white (hubby is allergic to cocoa) and my kids and I cannot stop eating them!!! I made these about a year ago and just stumbled on the recipe again. I have NO idea why I stopped making them. Who needs dinner, right?
These will make a great snack or a fast breakfast! Pack them in your kids lunch for a yummy surprise!
1 c of old-fashioned oats
1 c of toasted coconut flakes
1/2 c of chocolate chips (I used dark chocolate)
1/2 c of almond butter (you can use whatever nut butter you have in your pantry)
1/2 c of flaxseed meal
1 tbl of chia seeds
1/3 c + 1 /4 tsp of honey (I used raw)
1 tsp of vanilla extract
1 pinch of salt
Mix it all together in a bowl and then refrigerate for 45 minutes. Remove and make into balls. I used a small scooper (1-1.5 inch) to press it in and then eject it. Rolled it with my hands to get a ball shape all around and then place in a airtight container to refrigerate. Will last 5-7 days but most likely they will be long gone before that!

I have recently started to try to eat healthy …….I think these come pretty close. Dark Chocolate is good for you . I have almond milk but forgot to buy almond butter…….I want one now ! Thank you for sharing this recipe.
Good for you Mary!!! These will be a perfect addition to your routine. You can always make the balls smaller too for less calories (I did that so I don’t feel guilty eating 3 or 4) ;). You can certainly use whatever nut butter you have on hand. I always use dark chocolate b/c it is much better for you than milk. You can always substitute it for dried cherries, raisins etc. Mix it up and make it your own. Can’t wait to hear what you think of them!! oxoxo

I need to take snacks for LCHS Tennis team’s match tomorrow. They asked for chips and brownies. I just can’t do it! My son is allergic to nuts, though. Would regular butter work for these? any other ideas for high school boys?

Well I prefer dark chocolate and the health benefits. I make white b/c my husband is allergic to cocoa.

Believe it or not, it’s the same thing that you use on a chia pet! Health food stores, even some bulk sections of grocery stores have them. My local grocery store has them in the organic isle. Tiny black seeds that are packed with vitamins! You can also google them to see if you can locate them on line Let me know if I can help you further. I’m happy to do so.
My local grocery store recently started carrying a dairy free chocolate chip called “Chocolate Dream”. They are delicious and a great alternative for the vegan and gluten free diet.

I just made these this morning. Holly Moly are they good! I did, however have to make a few adjustments. I ran out of all nut butters! I only had about 1/4 cup peanut butter so I HAD to use some cocoa almond spread from TJ’s to make up the difference. It was terrible!! 😉 I had to pry my crying child off of the plate before he ate them all.
I do, however look forward to trying your healthier version!!! I’m always looking for convenient, but yet, minimally processed snacks. Thanks so much for this one!!!
