I know, I know… it’s not Thanksgiving yet and I’m posting a picture of Santa.  I hate that but my reasoning is simple – I’m thinking these cookies would be perfect for the holidays. They are cinnamony (yes, I made up that word) and perfect. Crunchy on the outside and chewy in the center.  Gluten and nut free and vegan.  Yummm.

A little background on how these cookies came to be.  I had an eye appointment on Tuesday and stopped at my favorite, larger grocery store, up by my doc’s office that I rarely get to go to.  I stumbled upon this magnificent beauty and started thinking about what wonderful creation could emerge from the use of this find.  These cookies are the perfect culmination of ingredients.  I don’t normally eat cookies but did tap into the stash quite a few times this week.  Ooooopps!

Ingredients:

2 cups of gluten free flour, regular ap flour (if you aren’t gluten free) or this flour blend that I use
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of Earth Balance Sweet Cinnamon vegan butter
3/4 cup of coconut palm sugar
1 tablespoons of ground cinnamon
2 teaspoons of vanilla extract
1 flax seed egg – (1 tablespoon flax seed meal mixed with 3 tablespoons of water mixed together that needs to stand at room temp. for 4 minutes)

Directions:

Preheat your oven to 375 degrees. Place your Silpat or parchment paper on your cookie sheet and set aside.  In a small bowl blend your flax egg and set aside. Then in a large mixing bowl, blend the flour, soda and salt. Whisk to combine.  In your stand mixer with paddle attached, blend the vegan butter and sugar until combined and fluffy.  Then add your cinnamon, vanilla and flax egg.  Blend to combine.  Then add your flour mixture. Blend until just combined.

Using a melon baller, scoop out the dough and place on your prepared cookie sheet.  Leave 1.5 inches or so in between.  Bake for 10 minutes then remove and let cool on the wire rack.  As you can see, I couldn’t wait to take a bite!

On the fitness front…

Last night I was supposed to lead the Lancaster Lululemon Store group run however it was cancelled due to inclement weather.  That meant yesterday turned into my running rest day instead of today.  So I got up and ran before my parent teacher conference at 9.  It was very chilly and I forgot my gloves- making it less enjoyable.  Plus my legs always feel like cement after a rest day.  I don’t get the refreshed feeling EVER after a rest day.  Who knows.  Does this happen to anyone else?

So my total for the week is 27.5 miles.  I was off my plan but next week I will adhere a bit more to the program.

  1. Just catching up on post :) I’m the same way I always feel heavy after a rest day but if I haven’t rested my legs feel heavy as well. There’s no winning. I have to make these cookies for my small group
