Italian Cook, Robin, Shares Her Favorite Part about Family Meals

Tell us more about yourself, your site, and your family.

I’m a mom to two daughters – one teenager and one preteen. I’ve been married to my best friend for 16 years and he also serves as my motivator/trainer and fitness guru in my life. My website was created as a simple way to share some of my recipes with friends who kept asking me how to make this or that recipe and somehow it exploded! I’ve been blessed to a featured blogger on Honest Cooking online magazine and have had many recipes featured on food porn sites. My family is my grounding factor, from which everything stems. Healthy foods that start out to nourish my family get shared with the world via my website. Mostly everything I cook is healthy, with some fun treats thrown in for good measure.

You are a chef for two daughters and a husband! What are their favorite meals that you cook?

My kids are total carnivores. They love anything braised or cooked in the crock pot. Mexican and Italian would have to be the winners and with me being Italian… it’s a given. Pasta rules in our house!

Since you are Italian, what do you enjoy the most about Italian cooking?

The flexibility. You can be super sneaky adding vegetables or flax seed to your sauce without anyone being the wiser. Extra nutrition, extra flavor and no one is the wiser. :)

How did you learn about cooking? What has inspired you to cook for your family and create new recipes?

I learned about the passion and love of creating meals through my grandmother and aunt who were both Italian. They grew their own vegetables and labored in the kitchen over each dish. But during that process, the love, the stories, the memories were all solidified in my heart and mind. I hope to pass that along to my girls. Food satisfies more than just hunger… it’s a time to share, console, celebrate, and be together. I gain inspiration from pretty much everywhere –restaurants, old recipes, my favorites I want to make healthier. Everything inspires me.

What do you look forward to most when cooking family dinners?

The reactions! We’ve had good, bad, and ugly. But mostly watching my family sit back, smile, and enjoy the meal I’ve put so much love into makes the reward all the better. We eat every dinner together, and that break in the busy schedule is just a precious time for me.

Sweet, Spicy and Smoky Dry Rub

As summer approaches, so does barbeque season. So whip up this sweet, spicy and smoky dry rub in honour of the occasion to add flavour to your beef, chicken and pork. It is tangy, sweet with smoky heat!

Ingredients:

3/4 cup of light brown sugar
2 tablespoons of LoSalt 
1 tablespoon of chipotle chili powder
1 tablespoon of smoked paprika
1 tablespoon of garlic powder
2 teaspoons of ground cumin
1/2 teaspoon of cayenne pepper
1/2 teaspoon thyme
1/2 teaspoon of ground cinnamon

 

  1. Place everything into a mini food processor, or you can mix by hand or by adding everything to a tupperware container with a lid. Process until well-combined.
  2. Store in a container with a lid for up to 6-9 months.
  3. This can be used on chicken, pork or beef. Rub a generous amount on the meat and refrigerate for best results up to 24 hours or a minimum of 1 hour.
  4. Place the meat on a hot grill and cook until desired temperature is achieved. Enjoy!
