RECIPE STEPS
1. Dough Preparation
• 150 g of weak flour
• 150 g of blossom honey
• 5 g of ground cinnamon
• 1.5 g of ammonium bicarbonate (dissolved in 6 g of water)
• 1.5 g of potassium bicarbonate (dissolved in 6 g of water)
• 60 g of chopped almonds
• 20 g of candied orange cubes
• 12.5 g of granulated sugar
Heat the honey to approximately 40 °C. Mix the flour and the warm honey to achieve a dough-like consistency. (Prepare a day in advance and let rest for 24 hours).
Lightly toast the chopped almonds in an oven at 160 °C for 15 min. Blend the candied orange cubes. Using a mixer (with a dough hook), combine the honey dough, cinnamon, dissolved bicarbonates until evenly mixed. Add the blended candied fruits, chopped almonds, and granulated sugar.
Roll out the dough to a thickness of 5 mm and to the size of your baking sheet (60/40 cm). Place on a baking sheet lined with parchment paper and dock the dough.
