1. Ingredients
– Orange marmalade

2. Orange Marmalade
• 250 g of untreated oranges
• 200 g of sugar
• 25 g of glucose
Boil the oranges in a pot filled with water until they can be easily pierced. Drain and blend as finely as possible. Add sugar and glucose and cook in a saucepan until it reaches the ‘thread stage’. Set aside.
3. Gingerbread Cake
• 95 g of whole milk
• 6.75 g of star anise
• 215 g of marmalade
• 107 g of chestnut honey
• 86 g of butter
• 107 g of brown sugar
• 86 g of glucose
• 161 g of wholemeal flour
• 26 g of all-purpose flour
• 10.81 g of baking powder
• 6.75 g of cinnamon
• 3.15 g of mixed spice
• 107.69 g of eggs
