Ingredient List for 15 Cookies

  • 100 g of soft butter
  • 1 egg
  • 4 cl of lemon juice
  • 1 lemon zest
  • 125 g of sugar
  • 300 g of flour
  • 2 tsp of baking powder
  • 2 pinches of salt or fine salt
  • 60 g of icing sugar
  • 60 g of granulated sugar

Steps for the Recipe

  1. Start by placing the soft butter in a bowl. Then add the granulated sugar.
  2. Wash the lemon and add the zest to your mixture.
  3. Mix well before adding the egg. Mix again.
  4. Squeeze the lemon and add 4 cl of juice to your mixture.
  5. Add the flour, baking powder, and salt.
  6. Stir with a spoon, then knead by hand to form a smooth dough ball. Chill in the refrigerator for about 30 minutes.
  7. After this time, form the dough into balls the size of a large walnut.
  8. Roll each ball first in granulated sugar, then in a bowl of icing sugar.
  9. Place them on a baking sheet and slightly flatten them with your palm.
  10. Chill them again for about 10 minutes.
  11. Preheat your oven to 170 °C.
Bake for fifteen to seventeen minutes. The cookies should be blonde but not golden. Allow them to cool completely on a rack before dusting with icing sugar.
  12. Now, it’s time to enjoy your delicious treats!

During baking, the combination of granulated sugar and icing sugar creates the crinkled effect. If lemon isn’t your flavor of choice, you can achieve the same effect with other flavors.
