RECIPE STEPS

1. Sweet Dough

INGREDIENTS

  • 120 g of extra fine butter
  • 76 g of icing sugar
  • 24 g of almond powder
  • 45 g of egg
  • 0.5 g of sea salt
  • 200g of traditional pastry flour

STEPS

Soften the butter slightly in the microwave, place it in the mixer bowl, and mix at slow speed. Gradually add the eggs to the butter, followed by the icing sugar, almond powder, and salt. Once the mixture is smooth, incorporate the flour. Stop the mixer as soon as the dough forms. Wrap in cling film and refrigerate for about 2 hours. Roll out the dough with a rolling pin and fit it into a tart ring. Bake the tart base by placing aluminum foil over the dough, ensuring it adheres to the dough. Bake for about 20 minutes at 155°C.

INGREDIENTS

  • 75 g of yellow lemon juice
  • 75 g of sugar
  • 125 g of unsalted butter
  • 150 g of eggs
  • 75 g of sugar
  • 2 g of gelatin
  • 2 zest of yellow lemon
