Tucked away in the quiet Cannaregio district within the NH Collection Venezia Grand Hotel Palazzo dei Dogi, once the noble Palazzo Rizzo Patarol, this intimate and exclusive restaurant seats only 18. It offers contemporary Italian cuisine with international accents, emphasizing seasonal and authentic ingredients. A strong focus is placed on locally sourced products, enhancing the biodiversity of the lagoon. “Venice presents excellent culinary development opportunities. Our cuisine is fine dining and modern, evoking traditional flavors. We choose lagoon ingredients to ensure quality and freshness,” states chef Paulo Airaudo.
The culinary offerings include two tasting menus: one with eleven courses and another with seven. The seven-course menu begins with a consommé of purple artichoke from the Island of Sant’Erasmo, followed by the Chef’s Welcome which includes beetroot casunziei, sardines in saor, risi e bisi, and squid cannolo. The meal continues with seed crackers, fennel grissini, rosemary focaccia, naturally leavened bread with sun-dried tomatoes, olives, Maldon salt, and butter from Normandy, accompanied by cold-pressed Moraiolo olive oil. The highlights are raw hamachi yellowtail with spiced fennel juice; spaghetti with mantis shrimp, salted lemon, and sea grapes; and hamachi with bagna cà uda and green asparagus. To conclude, a delightful sweet potato caramel panna cotta with crumble and aged 25-year Modena Bonini balsamic vinegar offers a balanced journey that elevates the raw materials and surprises with elegant flavor pairings.
