Chocolate Avocado Smoothie. (Tastes like pudding!)

IMG_4821 2

I know you’re thinking I must be crazy, right?!  I was hesitant when I ran across this recipe in one of my mags that I had.  I thought why not try it, my youngest daughter is so underweight that the calories (all good) would be a great start to the day.  Protein, good fats… it’s all good.  Both of my girls loved it!  I snuck a taste and it tasted like pudding – even had that consistency to be honest.  I put them on table, started making my breakfast and the next thing I heard was slurping sounds coming from their straws. Enough said!

Ingredients:

Makes 2 – 2 cup servings

1 ripe avocado, halved and pitted
2 cups of vanilla almond milk
3 tablespoons of unsweetened cocoa powder
3 tablespoons of maple syrup or honey
2 tablespoons of dark chocolate chips
1 tablespoon of vanilla extract
14 ice cubes

Directions:

Into your blender or Vitamix, add all of the ingredients.  Blend until creamy.  This will have a thick, pudding like appearance.  Pour slowly into  your glasses.  Top with a few chocolate chips.  Enjoy!

Eeek!  Chocolate for breakfast and it is oh so good!

Green Ginger Smoothie.

This is truly one of the best smoothies I’ve ever had – and I’ve had a lot of smoothies!  Sunday night my husband wanted to finally try out our new Vitamix machine and we had a late lunch so, the smoothie sounded light and delicious.  It was and I recreated it today for my girls and again, the lovefest continued!

Ingredients:

1 cup of orange juice
1 green apple, skin on yet cored
1 large handful of organic baby spinach (about 1 heaping cup of the leaves)
1/2 of a pineapple, peeled but not cored if using a Vitamix (if using a blender then core it)
1-2 inch piece of fresh ginger, peeled
1 scoop of protein powder (vanilla)
1/4 cup of vanilla Chobani yogurt
8 ice cubes

Directions:

Place all of the ingredients into your Vitamix or blender and blend on the smoothie setting.  Pour into glasses and enjoy!  The ginger puts this one over the top!  Fresh and ginger is so good for your stomach.  Vitamin and protein packed.  And, I swear, your kids won’t even suspect that there’s spinach in there!

Pumpkin Chobani Chocolate Chip Smoothie.

I found pumpkin ice cream at the grocery store and jumped for joy!  I knew my girls would LOVE it.  Turkey Hill is making a limited edition pumpkin pie flavor, which is what I used for these smoothies but other major ice cream companies are making seasonal pumpkin flavor ice cream as well.  I paired it up with some Chobani chocolate chunk yogurt for extra protein before swim practice tonight and these were devoured!  Okay, I guess that’s a winner!

Ingredients:

1 cup of ice cubes
2 cups of pumpkin ice cream
1.5 cups of vanilla almond milk
1/2 cup of Chobani (use vanilla, plain or chocolate chunk) yogurt
1 scoop of Whey vanilla protein powder
1/2 teaspoon of pumpkin pie spice

Directions:

Into your Vitamix or blender, add all of the ingredients and blend until smooth.  Add additional almond milk if you the smoothie is too thick.   Serve in fun glasses and stand back… kids love this one!
