With the arrival of warmer days, there is a growing inclination towards lighter and more refreshing recipes, such as cucumber quiche!
While we typically bake the filling of our pastry to get a gratinated top, the sunny weather invites a craving for something cool and fresh! We recommend a pie recipe with a completely cold, light, and easy-to-make filling that is also very healthy.
In fact, dietitian Claire Trommenschlager shared the secrets of this dish with us. In our collaborative video with Dr. Good, she notes, “this pie contains fibers from the homemade dough, proteins from the fresh cheese and tuna, and a refreshing touch from the cucumber.” It’s the perfect meal for indulging without any guilt. What are the ingredients for this recipe?
To prepare this pie, you will need:
- ½ cucumber
- 100 g of tuna
- 200 g of spreadable cheese
- Fresh chives
- Garlic
- Shallot
- Olive oil + salt
- Sesame seeds
For the dough, you will need:
- 200 g of semi-wholemeal flour
- 40 ml of olive oil
- 80 ml of water
- Salt
Steps for preparation
For the dough, begin by mixing the flour, olive oil, water, and salt until you form a smooth dough ball. Chill it in the refrigerator before rolling it out. To easily create the pie base, press the dough into your inverted mold and bake for 10 minutes at 200°C.
For the filling, slice the cucumber into thin strips using a mandoline.
Next, finely chop the shallot. In a bowl, combine the spreadable cheese and tuna, add a bit of olive oil, sesame seeds, chives, garlic, and season to taste.
Once your pie crust is baked, spread the cheese and tuna mixture onto it and layer it with cucumber slices. Sprinkle shallot and chives on top for garnish. Now, it’s ready to enjoy. Bon appétit!
