What you need: ingredients for cake, frosting and ganache
Chocolate cake
- 1 oz semi-sweet chocolate, chopped
- 1/2 cup hot brewed coffee
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup sugar
- 1/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1/2 tsp vanilla extract
Fluffy 7-minute frosting
- 1 egg white
- 1/4 cup sugar
- 1/8 cup light corn syrup
- 1 tbsp water
- 1 tsp vanilla extract
- Pinch of salt
Chocolate ganache
- 1/2 cup heavy cream
- 1 tsp unsalted butter
- 6 oz semisweet chocolate, chopped
Step-by-step: bake, fill, glaze and decorate
Make the cake
- Preheat oven to 350°F. Prepare a 9-inch round or 8×8 pan with spray and parchment.
- Place chopped chocolate in a bowl and pour hot coffee over it. Stir until smooth; set aside.
- Whisk together dry ingredients: flour, cocoa, sugar, baking powder, baking soda and salt.
- Beat the egg until pale. Add oil, buttermilk, vanilla and the chocolate-coffee mix. Combine.
- Fold the dry mix into the wet ingredients until just blended. Pour into pan and bake 30–35 minutes.
- Cool 5–10 minutes in the pan, then transfer to a rack to cool completely.
- Press out heart shapes using a cookie cutter. Place hearts upside-down on parchment.
- Hollow a small cone from the center of each heart using a corer or small knife.
Prepare the 7-minute frosting
- Combine egg white, sugar, corn syrup, water, vanilla and salt in a metal bowl over simmering water.
- Beat on high with a hand mixer until thick and glossy, about 6–7 minutes. Remove and cool slightly.
Make the ganache
- Heat cream and butter until it just boils. Pour over chopped chocolate in a heatproof bowl.
- Let sit 5 minutes, then stir until smooth and shiny.
Assemble the hearts
- Pipe a small amount of the 7-minute frosting into each hollowed heart. You will have extra frosting.
- Spread a thin layer of ganache on top of the cakes. Chill 20 minutes so the ganache firms.
- Turn hearts over and pour or spoon ganache to coat the other side. Reheat ganache briefly if too thick.
- Chill again until the coating sets completely.
- Fill a small piping bag with about 1 tablespoon of frosting, snip a tiny tip, and pipe “LOVE” or any small decoration on each heart.
Kitchen-tested tips to avoid glazing and piping pitfalls
- Thin the ganache: If the glaze refuses to pour, warm it gently. That brought my coating back to a smooth sheen.
- Use hot coffee: Melting chocolate into brewed coffee adds flavor and creates a silky chocolate base.
- Don’t overmix batter: Stir until combined for a tender crumb that cuts cleanly with a cutter.
- Piping control: Trim the piping bag tip very small for neat lettering. Practice on parchment first.
- Tool choice: A cupcake corer or small spoon gives consistent cavities for the filling.
Serving suggestions, storage and simple variations
- These bite-size hearts pair beautifully with coffee or a glass of cold milk.
- Store chilled in an airtight container up to 4 days. Ganache firms in the fridge.
- To freeze, wrap individually and keep for up to one month. Thaw in the fridge before serving.
- Flavor swap ideas: add raspberry jam under the frosting or use red velvet cake for a brighter look.
- Decorations: sprinkle crushed nuts, edible glitter, or colored sugar before the ganache sets.
