The best cookie dough bites ever!

Looking for a delicious, chocolatey dessert that’s healthy? Yep I got you covered! Last weekend we had a marathon cleaning job for a rental house we owned that we were getting ready to get on the market (we sold it before it hit the market BTW). We’ve owned it 10 years and it was time to start selling off to plan for our next chapter in life. I wanted easy and portable snacks that we could pop and go! Do you ever get a way from a snack you always made and forget about it for a time and then make it again? Yeah, that’s these little gems! Raw chocolate chip cookie dough bites packed with fiber and protein to actually keep you filled. I’m addicted!

So last week my Breville food processor (again) broke. The internal clip that locks the bowl keeps breaking. My husband told me to go ahead and buy the Vitamix food processor attachment (I had been waiting) and it arrived today. I’ve never been so impressed. Powerful. Compact and not another appliance to store.

Ingredients:
1.5 cups of gluten free rolled oats
1/2 cup almond meal
2 tablespoons of a neutral oil (coconut, avocado or olive)
2 tablespoons of nut butter of choice
1/4 cup maple syrup
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/4 teaspoon coarse salt
1/4 cup of mini chocolate chips

Method:
Into your food processor, add your oats and blend until you have a fine flower. Then proceed to add your remaining ingredients through chocolate chips. Pulse until a dough forms and its well blended. Using a small scoop, scoop out the door into balls and place onto a small tray or dinner plate. Repeat. Place in the freezer for about 20 minutes for them to individually firm up. Then remove and place in a baggie or bowl and store in the freezer. Freezing separately at first will allow them not to clump and stick together for the storage process.

The recipe made approximately 17 bites.
